Why spend $13.75 on gelato when you can get fig newtons for a dollah? Amber & Lindsay are happy w/ all the money they saved!!!

When I just need a little snack Fig Newtons seem to do the trick. I actually don't drink milk (insert gag here) but I decided to add it just for the picture's sake. :)

These were a little tricky...I made a small batch one day that worked...but barely. The next day I made a larger batch and rolled the dough thicker. They worked perfectly.

Interestingly, these tasted much better on the second and third day. On the first day, the cookie had a bit of crunch. By the second and third days, the crunch was gone and they tasted alarmingly like the store bought Fig Newtons...only better.

I will make these again.

On Saturday, May 23, I rode 100 Miles. Where to? Nowhere. The purpose of the event is to ride your century either on rollers, or on a short, short course e.g. up and down your driveway.

The event was organized by Fatty at fatcyclist.com and over 400 people did it this memorial day weekend.
