This is a variation on my world-famous Eggplant Soup recipe - Our fridge was getting packed with leftover and soon-to-die vegetables, so I roasted a peeled eggplant and three large white mushrooms with some onions, garlic, zucchini and turnip, then added them to a roiling boil of vegetable broth and let them simmer for about half an hour, before mashing it up with my shiny new KitchAid handheld mixer.
The stuff on top is toasted strips of Jewish Rye, thinly sliced parmagiano reggiano, and a squash blossom breaded with crushed tortilla chips and sage.
If you get a spoonful of breaded squash blossom, cheese and soup all in one bite ... good lord, that'll fix to kill yez, it was so good.
How Billings has changed! This is the main catering building at UEA. Ground floor is Zest, a cafeteria. First floor is Blend, a coffee and sandwich bar. Second floor is Vista, a no-stoodents restaurant where bearded profs can chat endlessly about budgets and expansion plans. You can only see the back of Vista here, it's actually not that bad.

The white tube is a small pump you could find in a science lab but this one is new and was washed with hot water before I put some milk in there for her.

Rome, Italy--Today a giant baby burst from the Roman Forum. Authorities are unsure how he got so big, or why he was underground at the historical site. After destroying several columns and Smart Cars, the baby proceeded to eat the entire city supply of oatmeal. The US Department of State issued a travel warning for US citizens to avoid unnecessary travel to Rome, unless they were carrying large amounts of the cereal. Roman officials appealed to the baby to cease destruction of monuments and puny vehicles. No word yet on exactly who will change his size 763 diapers.
Sort of a free-form family recipe here. Joe Apadaca was one of my grandfather's fellow Denver-area firemen, and when it was his turn to cook, he'd make his trademark chili recipe.
As years passed, "Joe Apadaca's" just came to mean "any chili with crushed tortilla chips on a bed of shredded lettuce," although I have to suspect there was a real recipe involved at some point in the past. I've tried to bring it back to its strict, firehouse roots while keeping the tradition of "so many goddamnt toppingks" alive.
This is a two bean chili - red kidney and black beans - with ground chuck, paprika, chili powder, cayenne, garlic, dehydrated onion, thyme and probably more salt than is strictly healthy. Shredded lettuce lines the bottom of the bowl, crushed tortilla chips necessarily top the finished product. Additional toppings made available include green onions, tomatoes, sour cream and feta cheese, of which all are used.
I also made cheddar buiscuits, which are served along the side of the bowl to soak up delicious chili.

today rhonda and i went to Arts, Beats and Eats in Pontiac, MI and tooks a million pics.
the "eats" was by FAR the most difficult thing for me to deal w/ today. i know i was not a fun companion today, as i was droooooling over all this yummy looking food (ok, not literally). i couldn't eat ANY of it, and rhonda was too nice and didn't eat any in front of me. it was so hard not to be tempted into just ONE burger or plate of chips. it all smelled soooooooooo good. but i just came home to my fabulous cardboard box dinner. eh.

Serious Eats Weekend cook and tell:
I don't really do recipes, but this is an eyeballed recollection of what occured:
2 cups of aforementioned Bob's Red Mill Soup Mix (contains lentils, barley, etc)
3 cups of beef stock
3 cups of water
1-2 lb chunk of pork shoulder, cubed
2 heads of collard greens, remove stems and chiffonade
2 yellow onions, diced
3 celery stalks, diced
1 head of garlic, minced
2-3 shallots, minced
1/2 head of flat leaf parsley, roughly chopped
2 cups of stewed tomatoes
Seasonings - S/P, bay leaves, herbes de provence
1 bottle of red wine, perhaps a nice 2006 Nebbiolo D'alba
Directions: Crack open red wine, have a glass. Sweat down aromatics (onions, celery, garlic, shallots, etc) in some olive oil. Toss in liquids, canned tomatoes, dry soup mix, pork shoulder (short ribs or other stew meats would also work lovely here), and herbs, bring to a boil.
Have another glass of wine, and reduce soup to a simmer - set timer for 1 hour. 30 mins in, toss in your collard greens, continue to simmer. Finish your bottle of wine, and drop in your parsley with 5 mins left to cook. S/P to taste. Go open another bottle of wine and enjoy.
Minus the wine, I think the entire pot of soup cost around $15 to make (this is Whole Foods prices mind you), and i've got enough to eat off of the entire week. Nomz
