“Nice Easter Bertie?”

“Yes, very yummy thanks Posh Bear, how about you?”

“It was all right but I really don’t approve of all this chocolate eating.”

“Have you still got your chocolate eggs uneaten then Posh Bear?” Said Sky climbing out of an Easter Egg box, his face covered in chocolate.

“No Sky, I ate it but under protest you understand.”

“Shame, you should have let me know and I’d have helped you out after all I lost most of mine.”

“No you didn’t Sky.” Said Bertie

“I did, it was there one minute and gone the next. Buttons said it may have melted.”

“No Sky you ate it, I saw you.” Said Bertie.

“Well I suppose there is always that possibility too.” Admitted Sky.

“Did you notice Bertie, that the man got an Easter Egg given to him?”

“Yes Posh, he has been careful with it and has only eaten about half so far.”

“No, it’s all gone, whoops…” Said Sky licking his lips.

These simple cupcakes were for a lot of reasons...

My sweet elderly neighbor just returned from visiting family for a month .

I missed her :)

The neighbor between us is moving and this was the last day in their house.

I made these Easter Cupcakes for both of them as a welcome home and a farewell.

I also made a batch for hubby to take to his crew at work ....

This cake is for the Easter Raffle at my son's school. I really wanted to make a standing up Easter Egg but it provided a couple of challenges.

The Easter Bush centre building (Roslin Innovation Centre) by Atkins architects at a cost of £30m. It is a multi-use facility at the Easter Bush campus. The ground floor is to provide campus facilities (gym, shop, an outreach centre and support services). The first and second floors will include incubator labs and write up space, offering commercial opportunities to start-up companies.

 

The Easter Bush Campus incorporates both The Royal (Dick) School of Veterinary Studies and The Roslin Institute. It is the largest concentration of animal science related expertise anywhere in Europe.

It is for this reason that Christians have great reason to rejoice in the new life brought to us by the Risen Savior. Salvation has come at last! For this reason, the Church resumes the use of the word "alleluia" which is said with even greater frequency and fervor for the rest of the fifty days of the Easter season, also known as 'Paschaltide.'

 

The Resurrection of Jesus Christ is no mere historical event relegated to history but a living reality which Christians experience again and again each year. It is an ever ancient and ever new mystery that is re-presented each year. May all discover and receive the new life to be found in the Risen Savior.

The Church begins the celebration of the Resurrection of the Lord with the solemn Easter Vigil, usually celebrated late at night on Holy Saturday. The Vigil consists of the Liturgy of Light, the reading of the Prophecies, the Baptismal Liturgy and the celebration of Holy Mass.

 

As the people gather outside of the church, a fire is lit. The celebrant then blesses the fire and lights the Paschal Candle- the symbol of Christ, the Light of the world, and inscribes upon it the actual date, saying: 'Christ, yesterday and today, the beginning and the ending. To Christ belongs all time and all the ages; to Christ belongs glory and dominion now and forever. Amen'. Then the Candle is carried into the church, filling it with light, and the people proceed inside holding tapers lit from the holy fire. Then the deacon chants the 'Exsultet'- an ancient hymn of praise honoring the marvelous happenings of the Easter Night. Seven scriptural Prophecies are then read- biblical passages which had prophecied the comming of the Lord. The Alleluia is sung for the first time since the beginning of Lent. After the Gospel and sermon, the Baptismal Liturgy begins, in which the people present in church are reminded of the time when they themselves received this holy Sacrament, and renew their baptismal promises. After the blessing of new baptismal water, Baptism is administered to the Catechumens and Candidates are received into the Church. Then follows the celebration of Holy Mass.

 

At St. John Cantius, this year's Easter Vigil was celebrated by the Rev. Bishop Joseph Perry. The Bishop administered the sacraments of Baptism, First Communion and Confirmation to this year's Catechumens.

Castaldi Family Easter Bread (now with a less confusing recipe!).

This is an easter bread my family has made for many years, it is sweet and cakey and had the iconic dyed eggs nestled in it that make it look so festive on the table.

 

Time: 4-5 hours

 

Ingredients:

- 2 packages of rapid rise yeast

- 5.5-5.75 cups of flour

- 1/2 cup shortening

- 1/2 cup butter

- 1 cup sugar

- 3 cooked and dyed eggs

- salt

- one lemon, zest grated + juice

- 3 eggs (raw)

- candy sprinkles

 

* Soak yeast in 1/2 cup warm water. Whisk together 1 cup of flour and 1/2 cup warm water, and add this to the yeast. Cover and let sit in a warm oven for 60 minutes or until nice and bubbly.

* Cream until soft: shortening, butter, lemon zest, 2 tbsp lemon juice. Then add sugar and 1 tsp salt. Add 2 eggs + 1 egg white (save the yolk for later). Mix well, it will be slimy and not very smooth. Add the yeast/flour mixture and then gradually add the remaining 4.5-4.75 cups of flour. Mix with spoon or by hand until smooth.

* Let rise in a greased bowl in the oven until double in size. Then punch down to let out the air, divide dough into two balls, and let rest for 10 minutes.

* Form the two dough balls into two long rolls, then twist them. Put the dough twists into a spring form pan in a spiral or ring shape. Nest the 3 hard boiled eggs into the gaps of the dough, so it will rise around them. Let the dough rise in the pan for another 1-2 hours.

* Bake for 10 minutes at 325F. Then brush the top with a mix of 1 egg yolk + 1 tbsp milk. Sprinkle on the candy sprinkles and then continue to bake for another 40-45 minutes.

* Remove from pan when warm but not hot. It will be gently brown and golden on top. Amazing fresh, great the next day, divine when toasted.

At St. John Cantius, the sense of paschal joy was only increased by the presence of the catechumens and candidates who were fully received into the Catholic Church. They and all those who were received into the Church at the Easter Vigil thus received the fruits of the Redemption by receiving the Sacraments of initiation instituted by our Risen Lord.

 

May we renew our commitment to live the Gospel in our lives and proclaim to the world the glorious news of the Resurrection, for Christ our Passover has been sacrificed!

Fondant topped easter cookies

There's a Peanuts cartoon strip where (in as far as I remember, it was an awfully long time ago) Charlie Brown chucks a pebble into the sea and Linus says something to the effect of "nice one, it took that pebble 6 million years to get this far up the beach and now you've just thrown it back again". I always think about that when lobbing rocks about.
