Dumpling purse in qayg style. Purse pattern is keyka.typepad.com/my_weblog/2011/08/lets-make-dumplings-f....
This was fun, if ridiculously time consuming. Can't believe I spent so many hours on such a tiny object!
A young man prepares gyoza (Japanese dumplings) at the Chiang Mai Gate night market, Chiang Mai, Thailand.
This recipe from 101cookbooks makes enough filling for two 12-oz packages of wonton wrappers.
They're totally delicious, but I made the mistake of eating a big plate of them for dinner after making them all afternoon. So I'm overpea'ed and don't want to eat any for awhile. :-(
Heidi is right, they do freeze beautifully.
These little dumplings (here shown before cooking), about the size of your thumbnail, were filled with pork. They are dumped into the boiling soup stock and cooked for just a minute or two before being ladled out to guests.
Dumplings in a basket, served the traditional way. Shots taken at Zi Yean restaurant for a magazine feature. Light up with just one SB800 and Gary Fong flash diffuser bounce off the ceiling.

Pie's right behind the both of them. Hahah they were all sleeping in a container of food and treats because Mee was just added to the pair. Nice yummy food is distracting. ;)
Sushi looks like she loved Dumpling so much more than Mee or Pie. :\ The four oldies did grow up togehter...
Ah, Mee Pie and Sushi are sleeping together in their sand bath now though.
The steamed lamb dumplings were quite good. I tasted a touch of cumin with ground lamb, ginger, and scallions.

AT LONG LAST, I HAD MY GYOZA. OH, HAPPY DAMN DAY INDEED.
Stuffed with farmer's cheese, which was ricotta-like in texture. They were a bit sweet. I wasn't crazy about these. At Cinderella.
pork, shrimp, egg and chive.
they were very good, but looking over at the other tables, i think we made a mistake by not ordering any of the pan-fried dumplings. next time we'll get an order of each. the pan-frieds were all golden and in fact, as i was typing this christian just said he wanted to drive out there and get some....too bad Luscious Dumplings is probably closed.
