Well obviously the quote doesn't go well with the pic. I mean the pic here doesn't represent the quote well. Oh..well.. LOL. I haven't been thinking straight lately. But I just love that quote and don't feel like spending more time browsing the Internet. Would love to go home and get hugs and kisses from my little girl. You can tell the difference between a hot and a not so hot Jalapeno by the aging that occurs.
Bottom is a young jalapeno, it's skin is smooth it's very dark green which gets darker the older it is and its shiny.
Above is the extreme, a very mature Jalapeno, the age lines, the red tint that appears after the darkest green has gone, these are all indicators that this will be one of the hottest Jalapenos you may eat.
