At the beginning of the summer, we planted three basil plants. It was the first time we had window boxes, and the plants produced far more basil than we expected. Now that fall is upon us, I gave the plants a major trim and made some pesto to freeze for the winter. I like my pesto pretty garlicy, and used for the following ratios for each batch:
2 cups basil
1/4 cup pine nuts
1/3 cup olive oil
2 cloves garlic
1 tablespoon lemon zest
I decided not to add cheese because I was afraid it wouldn't freeze very well, so I plan to add Parmesan when I'm ready to use the pesto this winter.

These tiny beauties were so sweet in my last harvest that they deserved to be sequestered and enjoyed as a special treat. Delicious, they were! A simple boil and a sprinkle of salt. No skinning required. One bite each!

[From Klatch] We were able to travel to Colombia as part of the Las Mingas project, a program initiated by Virmax and Castle & Co. in collaboration with Geoff Watts. It was created in order to provide better quality coffees and award premiums based on the quality of the coffee. Colombian coffee has long been a simple process whereby the buyer simply approves or rejects coffee by the container. These containers would be mixed of a blend by a minimum of 50 anonymous farmers and no matter how good (or in some cases bad) any farmer’s coffee was, they would get the same base price from the co-op and Federation that everyone else received. The Las Minga Project was then created as a extremely labor and process intensive program by which coffee was bought from farmers at a base price and then premiums would be awarded to the farmer based on quality. This program is unparalleled and incomparable to anything else in Colombia. Premiums to farmers are double or triple fair trade prices, and are based on quality as opposed to being a privatized farm subsidy.
Prior to traveling to Colombia, we cupped coffees from 30 different Las Mingas farmers to create our own ‘Frutas de Popayan’ Colombian Blend featuring our own handpicked profile of flavors. In addition, our Top Farms were separated as Micro Lots from farmers like Wilford Delgado, Jose Olmos and Hector Quintero, giving not only a great premiums but also accolades and personal credit for their great work.

Last night I was thinking about making something in my Multi-Cooker and decided to use my chicken wings. I love this cooker, it can brown/saute, roast, steam and slow cook. It's non-stick too which is really useful. It's quite spacious and holds 7 quarts, which is a ton of room. First I sauteed the wings in coconut oil. I use that because its the only oil that doesn't go rancid when heated. Got the wings nice and crispy on the outside. Then I sauteed onions and potatoes and mushrooms. Then I added the chicken back on top of the veggies and threw on some lime slices. I'll now slow cook this meal for a few hours. It's great you can do all this in one pot!
Lunch is now over and eaten, Yummy! We will eat a light meal later since we tend to eat our big meal mid-day on the weekends.
