The turbot is a common fish in Icelandic waters. They are described as left-eyed fish. There are two distinct groups of flatfish depending on whether they lie down on their right side or their left side. They all start life swimming as most other fish-that is to say, belly down, back up. Then a strange metamorphosis occurs and they settle on the bottom one one side. What's even stranger is that one eyeball migrates around or through the skull so they are both on top!
