cookie monster is almost as big as birthday boy. cookie monster's hair is buttercream iceing i used the tip uesed for grass or string.
A sugar cookie base with chunks of caramel and roasted cacao nibs. It worked alright -- the cookies are certainly edible -- but the caramel melted and spread, so the cookies have kind of holes in them with shallow pools of caramel, where I'd hoped they'd have the structural integrity to hold the chips intact inside.
Also, the sugar cookie base isn't as good a vehicle for the caramel as I'd hoped. I avoided a normal chocolate chip cookie dough base because the brown sugar already gives it enough caramel I figured it would just be bland, but even this, with all white sugar and AP flour, doesn't highlight the caramel well.
Jessica suggested lemon zest or juice in the cookie dough. I think that would help, but fundamentally I think it'll take more than minor tweaking to get from this attempt to my perfect caramel cookie.

My Grandson Josh loves those little Uglies Cookies, so I thought I would have a go at making my own recipe. They really tasted like the real thing.
**Measurements I use:
1 cup = 250 ml
1 teaspoon - 5 ml
INGREDIENTS
½ cup margarine
½ cup sugar
½ cup brown sugar
1 Âľ cups Self Raising Flour
½ teaspoon vanilla essence
ÂĽ teaspoon salt
1 egg
125g Mini M&Ms
METHOD
=Preheat oven to 180 degrees Celsius / 356 Fahrenheit
=Cream margarine, sugars & vanilla until light & fluffy
=Add egg & mix well
=With a wooden spoon, stir in salt & flour until well combined
=Add Mini M & Ms & mix through
=Roll into very small teaspoon sized balls & place on baking tray lined with Glad Bake
=Bake approx 8-10 minutes
=Let cool on tray fro 5 minutes, then place on cooling tray
