I made a batch of Sugar Cookies with Royal Icing for a potluck I'm going to tomorrow. I did a variety of ice cream cones with a cherry on top and smiling bunnies. These are so fun to make and decorate!

Lunch with some ex-colleagues at Cookie.
The wine list was huge, a book almost an inch thick! The beer list was quite impressive too, at about half the thickness. No wonder no one disagreed when I suggested Cookie for lunch :)
I loved the atmosphere at Cookie. Sure it's filled with suits at lunch, but there's still a nice buzz, perhaps because of the friendly waitresses who tend to be the willowy, pretty types.
My last experience here was Thai-inspired food quite a few years ago, and I'm glad the menu hasn't changed direction.
I decided to go with a pork belly red curry dish. Sounds good, right?
The red curry sauce was very zingy with fresh Kaffir lime leaves, Thai sweet basil, shreds of galangal and fresh peppercorns, and a few slices of red and green chili for good measure. I'd have prefered more of the yummy sauce to go with my rice, and it would have helped to moisten the pork belly. Some chunks were nice and moist, in no small part due to the layers of fat rendered light and fluffy by the deep frying. The skin was amazingly crisp too! The leaner chunks of pork were, however, quite dry.
I guess it is a modern interpretation of Thai food. In fact, it seems to bear the same origins as a Caramelised Pork Hock with chilli vinegar and palm sugar caramel at Longrain Melbourne, except that this has a more obvious link with the red curry sauce.

So I decided to make a life-size iPad cookie for my dad for his 61rst birthday. He is a HUGE Apple fan and carries his iPad everywhere. Instead of a sugar cookie I made a hybrid cookie/brownie "thing". It wasn't perfect with holding it's shape - but not bad!! And tasted super yummy! The black icing was chocolate RI, so keep the chocolate going and try to use a little less black dye. I also wanted to make App bites. It would have been a lot easier had I made these on 2" squares - but I decided to try and do life-size on these too. SO tiny!! I used a lot of new techniques - for me - to make these... RI transfers for the apps, and I made my own stencil cutter for the apple cookie. I'm giving it to him tomorrow!!! I hope he likes it!! :)

I know I said before that chocolate chip cookies were my favorite, but um, molasses cookies are my favorite too. I've always loved Archway molasses cookies. You know, the ones that come in the red package? But I never attempted to make them myself, perhaps for fear that they wouldn't live up to my expectations.
For some reason when the Christmas cookie baking season rolled around and I stumbled across this molasses cookie recipe, I figured what the hell? Even disappointing cookies still taste good. Plus I was making them to share at Christmas dinner, so if I didn't love them I could always pawn them off on unwitting relatives in the spirit of the holidays.
As soon as I pulled them out of the oven, I started wishing I had made a double batch. They smell FANTASTIC. Once I took my first bite, I found myself wondering if anyone would notice if I only showed up with 1 or 2 cookies to share. Or maybe none. Not only were these cookies not disappointing, they were even better than my previous favorites from Archway. I'll never go back to store bought molasses cookies again!
Molasses-Spice Cookies
From the Cooks Illustrated Best Recipe Cookbook
It's important to underbake these cookies so that they stay soft and chewy for days after you bake them. They really won't look done after 11-13 minutes, but they will firm up as the cool. If you bake them too long, they will be dry and crisp.
2 1/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
1 1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
3/4 teaspoon ground cloves
1/4 teaspoon ground allspice
12 tablespoons (1 1/2 stick) unsalted butter, softened
1/2 cup dark brown sugar, packed
1/2 cup granulated sugar, plus 1/3 cup for rolling cookies
1 large egg
1 teaspoon vanilla extract
1/3 cup unsulphured molasses
1. Adjust racks to upper- and lower-middle position and heat oven to 375 degrees. Whisk flour, baking soda, salt, and spices together in medium bowl; set aside.
2. Either by hand or with electric mixer, cream butter, brown sugar, and 1/2 cup granulated sugar until light and fluffy, about 3 minutes on medium speed. Scrape sides of bowl with rubber spatula.
3. Add egg, vanilla extract, and molasses. Beat until combined, about 30 seconds. Scrape sides of bowl.
4. Add dry ingredients and beat at low speed until just combined, about 30 seconds.
5. Place remaining 1/3 cup granulated sugar in shallow bowl. (Note: I used some raw sugar in addition to the granulated suger, which gave the cookies a nice sparkle.) Working with 2 tablespoons of dough each time, roll dough into 1 3/4-inch balls. Rolls balls in sugar and place them on ungreased baking sheets, spacing them 1 1/2 to 2 inches apart.
6. Bake, reversing position of cookie sheets (from top to bottom and fron to back) halfway through baking, until outer edges begin to set and centers are soft and puffy, 11 to 13 minutes. Cool cookies on sheets for 2 to 3 minutes before transferring to cooling racks with wide spatula.
