How to Make It
Step 1
Place the cream of coconut, pineapple juice, light rum, and ice in a blender. Pulse until smooth and combined, then pour into a glass.
Step 2
Top with 1/2 ounce dark rum and garnish with a piece of fresh pineapple.
Step 3
Add spice of your choice.

I've been toying with the idea of making some cold brewed Iced Coffee for ages, but haven't tried it until this weekend. This batch took about 5 minutes to prepare, 9 hours to brew and about half an hour to filter when it was done.
I was really inspired to give this a shot when I was thinking back to our trip to the US and how many places make their own variety of Iced Coffee there.
