This man was husking coconuts (the greenish things) by lifting them high in the air, and bringing them down forcefully onto a pointy horn-like object like this. Each time, a slit would be cut into the hard husk, and after three times, the husk could be peeled away and discarded behind him. The whole process looked very very dangerous, as if he was at high risk of skewering himself.
