I get strange illustration assignments at work sometimes. For those of you who live outside of the Cincinnati/Northern KY area, cincinnati chili is served over spaghetti and topped with entirely too much cheese.
I've added chocolate, garlic and chopped chili to the fried onions to make a nice thick paste which acts as a base. Here, I've added mushrooms and green chilis.

This chili recipe, if followed exactly, goes easy on the heat, but is still well suited to a few more alarms by adding hot sauce as desired. If nothing else, Cincinnati chili is all about options.
Ingredients
* 1 tablespoon vegetable oil
* ½ cup chopped onion
* 2 pounds ground beef
* ¼ cup chili powder
* 1 teaspoon ground cinnamon
* 1 teaspoon ground cumin
* ½ teaspoon ground Bell’s seasoning
* ¼ teaspoon ground cloves
* 1 bay leaf
* ½ (of 1-ounce) square unsweetened chocolate
* 2 (10½-ounce) cans beef broth
* 1 (15-ounce) can tomato sauce
* 2 tablespoons cider vinegar
* ¼ teaspoon ground cayenne pepper
* ¼ cup shredded Cheddar cheese
* cooked separately — spaghetti
* toppings as desired — Cheddar cheese, diced onions, beans, hot sauces
Instructions
1. Brown ground beef, onions, and celery and drain off all fat.
NOTE: If your slow cooker can braise meats, this step can be done without having to transfer the meat from a skillet.
2. Combine ingredients and stir well. Cover and cook for 7-9 hours on low, or 3½-4½ hours on high, stirring during last part of cooking if using high setting.
3. Cook spaghetti ½ hour before chili is done. Top with chili and serve.
4. To have chili 3-ways, serve it with spaghetti, chili, and cheese.
5. To have chili 4-ways, serve it with spaghetti, chili, diced onion, and cheese.
6. To have spaghetti 5-ways, serve it with spaghetti, chili, beans, diced onion, and cheese.
7. Douse your chili liberally with hot sauce, if desired.

Baby octopus is a hors d'oeuvre that is different as well as gourmet but just make sure to pair it with the appropriate wine. Our recipe includes flavors of chili and lime that makes a little more difficult to pick that perfect bottle of vino. You should really pay special attention to choosing something to compliment the spiciness of the chili.
Ingredients:
* 750 grams of baby octopus, cleaned
* 2 tablespoons of olive oil
* 2 tablespoons of Thai style sweet chili sauce
* juice and zest from one lime
* 1 teaspoon of minced garlic
* Lime wedges and coriander sprigs (for garnish)
* Lightly steamed vermicelli noodles
Directions
1. Preheat indoor grill until heating light turns off.
2. In a large mixing bowl combine octopus with oil, chili sauce, lime zest, juice and garlic. Toss well to combine and season with pepper.
3. Place octopus on pre-heated grill and lower press. Allow to cook for 3 minutes.
4. Remove from grill and serve on top of vermicelli noodles. Garnish with lime and coriander.

The 2022 Chili Cookoff was held on Tuesday, November 22 at Greenville Fire/Rescue Station 1. Proceeds from the annual fundraiser benefit United Way of Pitt County.
Chili Peppers at Elliots Beach, Besant Nagar, Chennai.
They dip these in batter and deep fry it to make Milagai Bajji (Mirchi Bhaji).

Our recipe for Friday Night Chili is neither a cook-off chili, nor is it a no beans chili. It's got lots of beans, as well as lots of ground beef, tomatoes, onions and chili powder.

Marinate cubed Paneer in:
1/4 cup Garlic Chili sauce
few dashes of Soy Sauce
a dribble of Sesame Oil
Chopped Green Onion
Marinate for at least an hour
Then fry in a medium hot pan with very little oil. Be careful... the chili's will pop as they cook.
