ingredients for homemade Crockpot TM Mexican-style chili bean soup:
• 1 - 2 onion(s), diced
• 1 - 2 can(s) diced tomatoes, chopped finer
• 3 cans red beans
• 1 Tbl. granulated garlic
• 1 Tbl. chili powder
• 1 Tbl. cocoa powder
• 1 Tbl. table salt
• 1 tsp. virgin olive oil
• 1 dash black pepper
• 1 whole bay leaf
QSAD water
[be sure to stir well before serving after cooking during daytime ]

Chili Mac Soup
After seeing a few variations of this soup I mixed them together and came up with the one that works for us :)
Another delicious comfort meal.
1 pound Ground Beef
1 Yellow Onion -chopped
1 Green Bell Pepper -chopped
Olive oil, for sautéing
1 tablespoon Chile Powder(I use 3-4 x that)
1 teaspoon Oregano(I use 3-4 x that)
1 teaspoon Smoked Paprika(I use 3-4 x that)
½ teaspoon Thyme(I use 3-4 x that)
1 teaspoon Cumin(I use 3-4 x that)
½ teaspoon Sea or Kosher Salt, plus more to taste
Cayenne pepper, optional, amount up to you
1/8 teaspoon Fresh Black Pepper, plus more to taste
2 - 14 ounce cans Cannellini Beans with juices
2 - 14 ounce cans Diced Tomatoes
2 – 14 ounce cans Chicken Broth (low salt) ( I used 48 ounce carton)
1 cup Corn( optional)
16 ounces Medium-size Pasta Shells ( or pasta of choice)
Add less Pasta for more of a broth type soup..
Shredded Cheddar, for serving
Sour Cream, for serving
1. In a large skillet brown and crumble the ground beef over medium heat . Drain.
Sauté the onion and green pepper in enough oil to lightly cover bottom of the pan.
2. When the onion and peppers are tender add all of the herbs and spices including the salt and pepper with a little more oil if needed. Cook for 2 to 3 more minutes.
3. Drain the grease from the ground beef and add to the onion mixture along with the beans, tomatoes, broth and corn..( if adding) Bring to a simmer add pasta and simmer for 25 minutes or till the pasta is done. stirring occasionally. Taste and adjust seasoning.
4. Serve with shredded cheese and sour cream.
Maybe it's just me but a chili flavored ketchup? Can that still be considered ketchup? Shouldn't this be called chili sauce instead?
Poached Egg Chili Rice.
Rice with spicy beef, cheese, lettuce, tomato, and fried egg (which should be a poached egg).
I made some beef chili for dinner tonight - with green onions, chili peppers, habaneros, garlic, tomatoes pinto beans, and mushrooms.

52 weeks of pix. In The kitchen. Once again, the end of the week snuck up on me. However I did get this photo of vegetarian chili I made earlier this week in the kitchen.
Marshall and I split these at The Hat in Rancho Cocamonga, CA. They were tasty, they fries were a little crispy and the portion was way to big for only two people.

Now that it's getting cooler I'm in the mood to make those heartwarming dishes that are so comforting when the temperature is dropping... This is one of our favourites;)
Sowed seven different kinds of Chili today. Doesn't look like much now, but we'll see. The kinds are: Thai Chili, Habanero, Bangalore Torpedo, Inca berry, Biquimho, Rocoto Manzano and Aji White Wax.
9/4/08 Lunch:
Just my own special blend of chili. Spicy & addictive—lunch yesterday, breakfast today (on an onion bagel), lunch today, and who knows, maybe again tomorrow...
I had heaps of leftover chili chocolate ganache from my cupcakes, so I made these brownies and used the chili chocolate ganache instead of that recipe's semi-sweet chocolate ganache. It was very nice, but almost too hot for me!
I Grilled up a few Hebrew National Hotdogs and made this homemade chili sauce. Heres the recipe I used
1 medium onion-chopped
1 pound ground beef
16 ounces tomato paste
1 tablespoon vinegar
1/4 cup sweet relish
1 dash caynne pepper
1/2 teaspoon salt
1 tablespoon chili powder
1/2 teaspoon pepper
2 tablespoons yellow mustard
Brown together the onion and ground beef. Bring Beef mixture, paste, vinegar, sweet relish and salt to a boil. Simmer for 30 minutes. Add Yellow Mustard, chili powder, pepper and caynne pepper. Add a little water if its too thick
