Sábado é dia do Rock \m/

last night's dinner, tonight's dinner, tomorrow's lunch and beyond. i just finished the hotter of the two chilis tonight, about ten minutes after shooting this.
3 eggs
5 tbsp butter
1 1/2 cups milk
1 1/2 cups cornmeal
1 cup flour
1 tbsp baking powder
2 tsp salt
1 1/2 tbsp brown sugar
set the milk and eggs out half an hour before you'll be starting to get them to room temperature. preheat the oven to 425°F and put the butter in a large cast iron pan, then put the pan in the oven when hot. mix the dry ingredients, set aside, and beat the eggs lightly. when the butter is just melted, pour it into in a large mixing bowl. put the pan back in the oven, mix the eggs and milk with the butter and beat gently. add the dry ingredients now and mix until incorporated without overbeating. pour batter into the pan, bake at 425°F for 20 minutes (or slightly less, depending on the shallowness of the pan). can be served immediately.
this is the base recipe and it accepts variation well. i made it to serve with chili so the simple version was ideal, but spicing it or adding corn kernels or herbs all work, as does increasing or decreasing the amount of sugar (i prefer brown, but i'm sure that can be substituted out). typically i use fine cornmeal, but different grinds are fine. the flour can be all-purpose white, whole wheat, or a mix of the two, and probably others. unsalted butter is the standard, but salted butter won't cause a calamity here, and you can always reduce the added salt to compensate. it's almost no-fail, and the critical element is the pan - use cast-iron or substitute another very heavy pan if you must, but don't use some cheap-ass piece of aluminum junk.
i made two different pots of chili to eat with the cornbread. one was black bean and eggplant (shown above) and much hotter than the other. the second had kidney beans, tvp, corn and lots of tomatoes and i used the same amount of peppers (cherry bombs), but the greater volume of other ingredients tamed the heat. no recipes as we all make the chili we like - it's generally a go-to when i need to use up odds and ends in the fridge or, like yesterday, have an overabundance of onions and celery and tomatoes.
the dishes are saguenay, which i have described before when yammering about food.
I was at the park today hanging out with my friends, their children and their dogs. This lovely creature was a rescue and her rescuer told me that Chili was not usually very friendly and would bark when someone approached her. But she and I got along famously and she even licked my nose.
It's cool and windy and rainy here today, so John made a big pot of chili! It's almost supper time, and I can hardly wait!

Chili is feeling much better after yesterday's procedure and is starting to get used to her new home. She is very energetic and playful, but also very eager to please. She knows "sit" and "no" and "be a good girl" and gives you her paw when she wants you to take her outside. She got five walks today, so I ended up with over 15K steps.
We feel pretty certain that she's a chow-chow husky mix. Her shape and gait are very much like a husky, and she seems to need to run. A lot.
