I must be getting old.

 

A few weeks ago, I went to a Thai restaurant (Bangkok Grill at about 8th South and State in Orem) with some co-workers and I couldn't believe how good the pineapple curry was.

 

The next day, the wife and I dragged the kids to Carls Jr. for dinner. I used to live on that stuff when I was single... but now I find it just nasty. It's like eating cardboard dripping with ketchup and mayonnaise. McDonalds is similar... I just can't eat that stuff anymore.

 

I still visit Taco Bell altogether too often, however, so I'm not quite a geezer yet.

 

Anyhow, I'm writing all this because I'm still surprised that I'd cook, eat, and enjoy something that looks like this. It's exactly the sort of thing I'd politely eat two bites of as a teenager and then sneak off to Burger King. Oddly enough, the revelation that I really, really like red bell peppers came while I was eating lunch at Tucano's, one of those Brazilian grill places where they come around with skewers of bleeding cow flesh. I didn't find the various cuts of beef memorable, but the grilled peppers were great!

This was a runners recipe for Thai Chicken Curry. It was very tasty, but more of an Indian dish as the sauce wasn't flooding the plate like a typical Thai dish.

We discovered the "Little India" Restaurant on the Gold Coast Highway at Labrador in November 2009. Whilst we have previously enjoyed Indian food... however, this place is an absolute gem... We had never realized how fabulous Indian Cuisine could be until we came to this restaurant...

 

The food here is absolutely superb, the service is great and they will even cater to individual tastes and preferences, the restaurant is small and elegant, the portions are more generous than in other Indian restaurants and dining here is exceptionally good value.

 

Every time that we have dined at the Little India Restaurant, we have had a very pleasant experience and very fond memories... so much so, that we have made this our favourite restaurant.

Boy am I ever stoked over this new FujiFilm X-T1 camera and their new line of lenses. The light weight and smaller size is almost as amazing as the Image Quality right out of the camera. Although not the greatest subjects in the world - these images are SOOC.

 

ANYWAY:

 

Kannika got on one of her late night cooking kicks and decided to make Chicken curry and Brownies for me.. Curry is done and the Brownies are in the oven.. Will be ready for a great midnight snack. My poor waistline...

  

Morning prep time: 6 minutes, using double-decker microwaving and leftovers. This is packed as a DIY thermal donburi bento box, with my preschooler pouring all of the warm curry over the rice in the mostly-empty rice container. Full details and reviews of microwave covers is here.

Chicken curry (Chicken cooked in a blend of tomatoes and spices),

Karahi Lamb (cubes of lamb stir fried with bell pepper, onion tomato and spices),

Aloo Mattar ( potatoes and green peas in a spicy gravy)

Baingan Bhartha (eggplant baked in Tandoor and sauteed with herbs and spices),

In a bowl Saag Paneer (Spinach with homemade farmer's cheese)

On an Italian bread roll.

 

Instead of water I used some leftover prosecco to soak the figs. And then this liquid tasted so nice I used it in the next curry, a lamb curry.
