If you haven't had roasted cauliflower, you need to, uh, make it RIGHT NOW. Josh and I devoured all of it right out of the oven and I'm almost mad I've never had it until now. It's also low calorie and low carb!

"Cauliflower, believe it or not, contains quite a bit of sugar and, just like onions, you can caramelize it. Caramelizing cauliflower adds depth of flavor and provides an intense cauliflower flavor. The stems become soft and the florets turn a deep golden color like an autumn tree. These are crunchy cauliflower “croutons” I made by caramelizing cauliflower, salting it heavily, then dehydrating it. At first, it’s an intense crunch of saltiness that gives to a sweet, vegetal cauliflower flavor. Here’s how to make them: "
Cauliflower Crust Pizza!!!
Wow, cauliflower-crust pizza! It's gluten-free, low-carb, and essentially sugar-free!
Ingredients:
~ 2 cups cooked, riced cauliflower (“rice” it by chopping it finely, using a food processor, cheese grater, or smashing it with an avocado tool)
~ 2 eggs
~ 2 cups shredded whole-milk mozzarella (or cheese of your choice)
~ 2 teaspoons Oregano
~ 4 teaspoons Parsley
~ Toppings of your choice (I made one pizza with home-made sauce, pizza blend shredded cheese, and portobello mushrooms. The other was a "white pizza" sauce sprinkled with mozzarella cheese and topped with creamy goat cheese!)
Instructions: Preheat oven to 450.
In a bowl, mix together your cooked, riced cauliflower, eggs, and mozzarella. Spread dough mixture onto a baking sheet or pizza pan. Make it as thick or thin as you’d like. Bake until crispy. Top, bake, and serve!

Kashmiri Gobi
Blend in liquidizer or mortar :
1 big onion, chopped
4 cloves garlic, chopped
5 cm ginger, chopped
1 t kurkuma
1 t cayenne (or less if you don’t like spicy)
Divide 1 big cauliflower into small flowerets. You can stirfry or blanche/cook them first, just what you prefer.
On medium heat, stirfry the onion/garlic/ginger-paste for about 3 minutes until fragrant. Then add:
1 t ground cinnamon
1 t ground cardemom
½ t ground cloves
Stirfry for about 30 seconds, then add:
3 medium tomatoes, canned tomatoes are fine
4 bayleaves or salamleaves
1 t sugar
1 t salt
30 gr raisins
Add cooked/stirfried the cauliflower, heat through and add:
30 gr roasted cashewnuts

Green, purple, and white cauliflower, stir-fried with brunoise of lomo (cured pork loin from Salumi).

melt butter in pot, saute chopped onion, cauliflower, and leek. add curry and other spices. roast at 375 for about 20 minutes with the lid off slightly to release steam. add stock and sour cream, bring to a simmer. use immersion blender to soupify.

Cauliflower Alfredo Sauce, there is no cream in it, which saves a lot of calories and fat. Instead, we used pureed cauliflower!
Salsa Alfredo de Coliflor, esta receta no lleva crema lo cual nos ahorra calorías y grasa. En vez de crema, usamos coliflor hecho puré!

Blend in blender until smooth:
1 big onion, chopped
4 cloves garlic, chopped
5 cm ginger, chopped
3 medium tomatoes, canned tomatoes are fine.
1 t kurkuma
1 t cayenne (or less if you don’t like spicy)
Divide 1 big cauliflower into small flowerets and stirfy in some oil until soft and brown. (Actually, I will skip this next time. I think you can just as well boil/blanche the cauliflower)
Stirfry/heat the tomatopaste for about 3 minutes. Then add:
1 t ground cinnamon
1 t ground cardemom
½ t ground cloves
4 bayleaves or salamleaves
1 t sugar
1 t salt
30 gr raisins
Add back the cauliflower, heat through and add:
30 gr roasted cashewnuts

This was the first time I tried this recipe and I liked it big time!
It’s fragrant, I love the cardemom and cinnamon in it.
Only, the original recipe probably had smaller teaspoons, because the tastes were a little bit too strong. (my teaspoon is 5 ml)
The sweeter “nasi kuning” combined very well.
And the grilled lamb leg steaks (marinated in olive oil, lemon, garlic, thyme and a pinch of cumin & cinnamon) were nice with it too. Not chewy at all this time.
