Petis normally use ground beef and egg so I made a few replacements.
1. Mashed potatoes for the outside.
2. Vegan Boca veggie crumbles, onions, and spices for filling.
3. Vegan bread crumbs.
4. Egg replacer that didn't hold the crumbs too well during shallow frying.
Didn't have breadcrumbs (or bread to make some) so use Pretzel Crackers. Crushed them up in my Pyrex jar (came to 1.5 cups).
Seasoned up with 1/4 tablespoons of salt, pepper, cayenne and garlic powder.
Some lemon pepper would a added an extra nice kick, but work with what you have. Was making fried chicken tenders.
Lean lamb baked with herbed breadcrumbs served with a Mediterranean ratatouille and Kalamanta olive jus.
Braised lentils layered between sheets of eggplant, topped with homemade white sauce and fresh breadcrumbs.
