Reminding myself... it has to be a conscious thing, always: to find connection with God, I have to continually make the choice to keep looking. So, breadcrumbs. Leave breadcrumbs along the journey. Surround myself with reminders of what's true and real and what I want..and what I am, what I can do.
This is what I want to remember.
Made by mum, apparently the breadcrumbs were a little messy whilst frying but cooking time was relatively quick. These were the BEST, really delicious and crunchy and tender. Like a giant chicken nugget of awesome. Could eat these every day of my life forever.
We made this for dinner. It was really good.
Try it:
4 slices bread, torn into pieces (or breadcrumbs)
2 T butter, melted
2 1/2 c. shredded cheddar cheese
8 slices bacon
1 onion
4 cloves garlic
1/2 tsp cayenne pepper
5 lbs. sweet potatoes, peeled, halved lengthwise, and sliced thin
3/4 c. heavy cream
3/4 c. buttermilk
2 1/2 tsp salt
5 scallions, sliced thin
1. Adjust oven rack to middle, heat to 425. Mix bread (or breadcrumbs), 1/2 c. cheese, and melted butter in food processor (or by hand, if you don't want to make your food processor all dirty just for that).
2. Cook bacon in Dutch oven until crisp. Transfer bacon to paper towel and pour off all but 1 T fat. Cook onion until soft, about 5 min, add garlic and cayenne and cook about 30 secs. more. Stir in sweet potatoes, cream, buttermilk, and salt. Reduce heat to medium-low and cook, covered, until potatoes are just tender, about 30 mins. Off heat, stir in remaining cheese, bacon (chopped), and 4 scallions (sliced).
3. Transfer mixture to 13x9 inch baking dish and top with bread crumbs. Bake about 15 mins., cool, and top with last scallion.
Heads up, this makes a lot. Also, if you can't tell, ours turned out just like the picture!
