At the Apex Park there is always food to be found for Mr Ratty and his family but when this little one tried to join in it was shooo'd away by the larger one...aw!
(in breadcrumbs). British food often gets laughed at and comes a poor second to any other national cuisine. But I don't know why.

Recipe from Cooking Light here. I need to put more chipotle in it next time (I only used 1 tsp of chipotle tabasco in place of 1 chipotle pepper and 1 tsp adobo), and cook it in my usual meat loaf fashion - formed on a jelly roll pan instead of in the loaf pan they suggested. Doing it their way, it didn't really form a crust...just sort of steamed.
Also, the potatoes weren't my favorite. They really need to be peeled I feel, but these were small and I didn't want to take the time.

Swiss Chard Gratin
recipe courtesy Fine Cooking
1/2 cup toasted or stale coarse breadcrumbs
2 Tbs. unsalted butter; more for coating the gratin pan
1 cup heavy cream
2 cloves garlic, smashed and peeled
Freshly ground black pepper
1/2 tsp. kosher salt
3 strips bacon (about 2-1/2 oz.)
1 lb. (about 1 bunch) Swiss chard, washed and drained, stems removed and cut crosswise into 1/4-inch slices, leaves cut into 1/2-inch wide ribbons (to yield about 2-3/4 cups stems and 7 to 8 cups leaves)
1/3 cup grated Parmigiano-Reggiano
Heat the oven to 400ºF. Butter a shallow 5- or 6-cup ceramic gratin dish. Melt 1 Tbs. of the butter and toss it with the breadcrumbs; set aside.
In a medium saucepan, bring the cream and garlic to a boil (watch that it doesn't boil over), immediately lower the heat, and simmer vigorously for 5 minutes; the cream should be reduced to about 3/4 cup. Take the pan off the heat and remove the garlic cloves with a slotted spoon. Let the cream cool slightly, stirring occasionally to loosen. Season it with a few grinds of fresh pepper and 1/4 tsp. of the salt.
Meanwhile, in a large (12-inch) nonstick skillet, cook the bacon over medium heat until crisp and browned. With tongs, transfer it to paper towels; crumble when cool. Leave the bacon fat in pan (if there's more than 2 Tbs., drain a little off). Add the remaining 1 Tbs. butter to the skillet and let it melt. Add the chard stems and sauté them over medium to medium-high heat until they're somewhat softened and browned on the edges, about 10 minutes. Reduce the heat to medium, add the chard leaves and toss them with the contents of the skillet. Season them with the remaining 1/4 tsp. salt. (You can add the leaves in two batches for easier handling.) Sauté until all the leaves are wilted, about 2 minutes. Use tongs to transfer the contents of the pan to the gratin dish (leave behind any excess liquid in the sauté pan), spreading them evenly.
Sauté sliced chard stems first until tender; then add the leaves and wilt them.
Sprinkle the crumbled bacon and then the cheese over the chard. Pour the seasoned cream over all and top with the buttered breadcrumbs. Bake for 25 minutes; the gratin will be brown and bubbly. Let rest for 10 to 15 minutes before serving.

While lunching this little lizzard suddenly appear to get bread crumbs from the table. It ate quite a lot
I had taken a bite when I realized I'd forgotten the vinegar step. I stopped eating, heated a tsp or so of balsamic in the pan, and added it, with a few stray breadcrumbs, on top of the egg.
Ingredients:
140g breadcrumbs
3 tbsp sesame seeds
4 skinless chicken breasts
1 egg
Salt and Pepper
Preheat the oven to 200 C
Dip the chicken pieces in the lightly beaten egg, then cover with the breadcrumbs mix. Put the on wire racks, spray with cooking oil then bake for 30 minutes until crisp and cooked through.
Serve with sauce:
3 tbsp so sauce
juice of 1 lime
1 tbsp caster sugar
Mix them all together.
Chicken Parmesan
Ingredients
•75g (3oz) breadcrumbs
•40g (1½oz) fresh Parmesan cheese, finely grated
•50g (2oz) plain flour
•3 medium eggs, lightly beaten
•4 skinless chicken breasts
•100ml (3½fl oz) olive oil, to shallow fry
•500g jar good-quality tomato pasta sauce
•50g (2oz) mozzarella cheese, torn into pieces
•300g (11oz) spaghetti
Method
1Preheat oven to 200°C (180°C fan) mark 6. In a shallow bowl, stir together breadcrumbs and half the Parmesan cheese. Put flour and eggs into two separate shallow bowls. Next, bash the chicken breasts between two sheets of greaseproof paper or clingfilm with a rolling pin to flatten them out a little (you want to make them an even thickness).
2Dip a flattened chicken breast in flour (tap off excess), then coat it in beaten egg. Dip in the cheesy breadcrumbs, shaking off any excess. Repeat until all the chicken breasts are coated.
3Heat the olive oil in a large deep frying pan over a high heat until shimmering. Fry the chicken for 8min (you may need to do this in batches), turning once, until golden and crisp (they don’t need to be cooked through). Lift out on to kitchen paper to drain. Continue until all the chicken is browned.
4Pour pasta sauce into a large, oven-proof dish. Lay chicken breasts on top of the sauce, then top the chicken with the mozzarella and remaining Parmesan. Cook in the oven for 15-20min until chicken is cooked through.
5Meanwhile, cook the pasta in boiling salted water according to packet instructions. Serve the chicken with the pasta.

After applying a little (hen's) egg yolk I covered the egg in breadcrumbs. At this point it was apparent that the meaty layer was tending to sag under its own weight and I feared it was going to split and fall off in the oven.
