2 cups spinach parboiled and drained very well
4 tbsp minced onion and 1 clove garlic minced
Salt and pepper
Egg replacer for 1 egg mixed with 1/4 cup vegetable broth
1 tbsp flour, sifted
1 cup bread crumbs
2 tsp vegetable margarine
Mix bread crumbs, salt and pepper and flour.
Dry pan saute garlic and onion with spinach.
Divide into 12 equal tablespoon sized balls.
Dip each ball into the egg replacer and flatten out at the same time then roll in the bread crumbs.
Place on aluminum foil covered cookie
sheet and dot with margarine. Bake at 375 degrees for 12 minutes or until browned.
Great with a lime viniagrette or vegenaise dressing.

In the forest, on a lunch break we saw these pretty birds, never captured them before :)
They were looking for and finding breadcrumbs.
The next stage is to start combining your sausage mix ingredients together, so add in about half of your previously ground spices and breadcrumbs, and mix thoroughly with your hands. Add some chilled water and continue to mix until you have a stiff dropping consistency. As a rough rule of thumb, you’ll need about 10% breadcrumbs by weight in your mix to ensure it binds together properly. Take about a teaspoonful and fry it off in a hot pan to check the flavour and seasoning, and adjust to taste accordingly.

Just delicious!!! I served with sauerkraut that I cooked with chicken broth, a little applesauce and brown sugar and some caraway seeds. Rounded it off with leftover paska (ukrainian easter bread). It was a great meal!
Here is the recipe for the german meatloaf. I didn't make the gravy.
German Meatloaf (Falscher Hase) "False Hare" Recipe

1/2 lb lean ground beef
1/2 lb ground lean pork
1 medium onion, chopped
3 tablespoons breadcrumbs
3 tablespoons cold water
2 large eggs
1/2 teaspoon salt
1 teaspoon paprika
1 teaspoon prepared mustard
2 tablespoons chopped parsley
3 peeled hardboiled egg
4 slices bacon (cube 2 strips; cut 2 strips in half)
4 tablespoons vegetable oil
1 cup beef broth
SAUCE
1/4 cup hot water
1 teaspoon cornstarch
1/4 cup water
1/2 cup sour cream
Mix together ground meats, onion, bread crumbs, 3 Tablespoons cold water, and eggs.
Flavor with salt, praprika, mustard, and parsley.
Blend ingredients thoroughly.
Flatten out meat mixture in the shape of a square; about 8 X 8 inches.
Arrange whole hard-boiled eggs in a row along the middle of the meat.
Fold sides of meat pattie over the eggs.
Shape meat carefully into a loaf, resembling a flat bread loaf.
Cook cubed bacon in a Dutch oven about 2 minutes.
Carefully add the vegetable oil, and heat.
Place meatloaf in the Dutch oven and cook until browned on all sides.
Cut remaining bacon strips in half and arrange over the top of the meatloaf.
Place in uncovered Dutch oven in a preheated 350°F oven for about 30-45 minutes.
While meat is baking, gradually pour hot beef broth over the top of the meatloaf; brush occasionally with pan drippings.
When done remove meat to a preheated platter and keep it warm.
Add 1/4 cup of hot water to pan and scrape all particles from the bottom.
Bring to a gentle boil.
Mix cornstarch with 1/4 cup water and add to pan.
Cook until bubbly and thick.
Remove from heat and stir in sour cream.
Reheat to warm (do not boil).
Season with salt and pepper if desired.
Serve the sauce (on the side), separately.

Tasty chicken with crisp panko crumbs, and a great fresh tasting radish and fennel slaw, but I prefered to eat them separately to better taste the chicken!

4 slices bacon, cut into 1/2-inch pieces
1/2 cup chopped green bell pepper
1/2 cup chopped onion
1/2 cup sweetened dried cranberries
2 1/4 cups water
4 cups seasoned cornbread stuffing crumbs (from 16-oz bag)
1/2 teaspoon seasoned salt
1/4 teaspoon dried marjoram leaves
DIRECTIONS:
1. Heat oven to 350°F. Spray 8-inch square (2-quart) glass baking dish with cooking spray. In 12-inch nonstick skillet, cook bacon over medium heat about 6 minutes, stirring occasionally, until browned but not crisp. Stir in bell pepper and onion. Cook 3 to 4 minutes, stirring occasionally, until tender. Stir in cranberries. Add water; heat to boiling. Remove skillet from heat.
2. Stir in stuffing mix, seasoned salt and marjoram until well mixed. Spoon into baking dish.
3. Cover with foil; bake about 30 minutes or until thoroughly heated.
Ingredients for Chicken Katsu
1 egg
4 chicken thighs
Plain flour to coat
60g dried Japanese breadcrumbs
Oil for deep frying
Method
This recipe specifies chicken thighs, which should be deboned and flattened. You can also use chicken breast but you’ll need to hammer it with a meat hammer to flatten it.
Season chicken with salt and pepper and coat with plain flour, egg and the bread crumbs, in that order.
Heat your oil in a deep fat fryer or saucepan until it’s at 180°C. Now deep fry the chicken pieces until golden brown. This should take around ten minutes. If you’re worried about the chicken not being cooked, fish it out and cut it in half to check. You’ll need to slice your chicken into strips anyway to serve.
Either drizzle tonkatsu sauce over the top, or serve with the sauce in a small pot or soy sauce bottle.

It should be quite obvious by now that I love wings! There's an infinite number of ways to season and cook them. My preference, however, is a dry rub cooked in the air fryer.
This batch was seasoned with smoked paprika and garlic, and then tossed in panko breadcrumbs. They were cooked for 18 minutes at 400F, turning them once. They turned out crispy and delicious!

Wiener schnitzel (from the German Wiener Schnitzel, meaning Viennese cutlet) is a traditional Vienna dish, consisting of a thin slice of veal coated in breadcrumbs and fried.
Another house sparrow fills his order for breakfast bread. I think he already had his fill, as you can see the breadcrumbs on his beak.
I had to cut the ham in two pieces. After boiling for one hour a kilo, I grilled it for about 10 minutes at 225 degrees with sauce from eggs, mustards and breadcrumbs.

Speciality of the Canary Islands and particularly Tenerife (from where just returned) this is the blue chaffinch tempted down from the trees for a few breadcrumbs. Other pics to follow as I can find time to process them.
Tight, moist, yet full of air. Could be a bit lighter = let it rise longer. Tastes great.
Could use some anise with the caraway seeds.
I love to make meatloaf and this is my Mother's recipe with a twist, ground turkey! Dijon mustard and worcestershire sauce add that little something extra.
1 pound turkey
3/4 cup italian bread crumbs
1/2 medium onion
1 clove garlic
2 medium eggs
1 tsp. salt
1/2 tsp. pepper
1 tsp. dijon mustard
1 tsp. worcesttershire sauce
1/4 tsp. tobasco sauce
1/3 cup catsup
1 tbsp. brown sugar
2 tbsp. olive oil
Sautee Onion finely chopped with garlic and oil on medium for about six minutes. Add everthing but the catsup and sugar to a bowl and mix well. Form into a loaf and bake at 350 for a half an hour. Combine catsup and sugar, glaze and bake for another half hour. Enjoy!

What a day I've had!! Got up this morning made breakfast for my daughter, Lewis and myself then I worked, worked and worked! My wife, who is nursing away) asked me to make fish cakes for tonight's dinner so off I went again, work, work and work and this is the end result - honestly, these will be great and I worked hard to make them!!
Now, I have to work hard to think about my 365 all before I go and play golf late afternoon! My goodness I can't wait till I can put my feet up!!

A foodtruck with a Dutch licence plate at the side of Kinderland selling the best of the Dutch snack cuisine; a kroket (a small breadcrumbed fried food roll containing, usually as main ingredients, ground meat (veal, beef, chicken, or turkey).
Kinderland is an indoor playground for children which opened in the year 1996. There are 10 children's attractions, such as a small ferris wheel, a slide and several merry-go-rounds. Shows are also performed. The complex has an area of 7000 m² and has 3 floors. There are many images of various circus figures in the building. The large clown statue on the roof of the building is striking.
The third floor where, among other things, the maze and the Music Carousel is located, is closed to the public.
The concept of Kinderland was entirely conceived by Bobbejaan Schoepen himself.

Bobbejaanland
Bobbejaanland is a theme park in Lichtaart, Belgium. The park was founded by Bobbejaan Schoepen, a Flemish singer, guitarist, and entertainer who enjoyed international popularity in the fifties and early sixties. In 1959 he bought a 30 hectare marsh, had it drained and built a 1000 capacity venue that opened in December 1961 as Bobbejaanland. This developed into an amusement park and remained in his possession until he sold it in 2004.
For its first decade after opening the park centered on water attractions and performance spaces. Numerous variety artists from the Belgium, the Netherlands and Germany appeared there. Following the advice of Phantasialand owner Gottlieb Löffelhard, Bobbejaanland evolved from 1975 onwards into a theme park, with rides becoming more important than music shows. It grew to fifty attractions with four hundred employees and received visitors from the Benelux countries, France, and Germany. As an independent family concern, it also supported educational and cultural projects. By the end of the seventies, Bob's wife Josée (a former opera singer and model) opened a museum with works of art from the Hopi and Navajo cultures, forming an extensive private collection of Native American art.
Bobbejaanland contains about 50 attractions, such as the Waterslide (1980), the Giant wheel (1976), Indiana River (indoor waterslide, 1991), the Revolution (a dark Rollercoaster, 1989), the Speedy Bob (roller coaster, 1998), the Air Race (suspended roller coaster, 1987, now named Dreamcatcher), the longest junior roller coaster in the world, 'Okidoki' (i.e. 'that's all right', 2003/04), and the world's second Gerstlauer Euro-Fighter roller coaster, "Typhoon" (2003/04), with a drop angle of over 97°(a roller coaster with a fourfold loop and a free fall) and a Splash Battle, "Banana Battle", (2007) made by Preston & Barbieri. The giant Sledgehammer (a Giant Frisbee) reaches a speed of 110 km/h). In 1995 'Kinderland' (English: Kids' Country) was opened as an area for young children.
Because Bobbejaan Schoepen was primarily a folk and country singer, the park is still partly themed as a western village (for example the El Rio White Water Rapids and the El Paso Dark ride). In the Star Theater, Las Vegas style shows are performed. Bobbejaan bought Zorro's horse from stuntman Casey Tibbs, but the animal was accidentally electrocuted by an exposed cable. He also acquired an ornate white Pontiac Nudie mobile decorated with American coins.
In the winter of 2003 the park invested 12 million dollars in two new rides named the Typhoon and the Sledge Hammer. In a 2004 survey of 13 European amusement parks by Belgian consumer organisation Test-Aankoop Bobbejaanland was rated second after Phantasialand. In the early 2000s the founder was diagnosed with cancer and he sold Bobbejaanland to the Spanish-American Parques Reunidos group in April 2004.
