Good Morning
I harvested about 200 little Cucamelons over the weekend. It's hard to get the size and perspective correct, they are smaller than a grape. They look like 'Dolls House' Melons. They taste like a Cucumber and Melon combined, as you bite the bite size fruit the texture is Cucumber but Melon hits your taste buds. Great for salads....

A look back to last month and the final Springfield Turn under the Kansas City Southern corporate name. It has long been a once a week spin between Murrayville and Springfield. Always been on my short list of Illinois-flavored things to check out, but of course I had to wait til the last possible minute to check it out.
This section of the Alton has always had an unremarked history. Alton to Springfield was one of the earlier railroads in the state, completed in the 1850s. Further to the west the Jack line between Bloomington and Roodhouse was in operation by the 1860s. The present day 40-ish mile Springfield Sub wasn't built by the Alton til 1906. This linked the two railroads between Iles on the east to Murrayville on the west.
Time marches on for this small piece of railroad most Wednesdays as the usual haul is only a handful of cars to and from the CN/IC interchange in Springfield as well as the Chicago and Illinois Midland. Grain thought seems to be a common occurance out here, as the ADM elevator at Curran sees a decent amount of traffic. This final version of the turn had 25 empties east and 25 loads west, rounding out some photo opportunites for a normally bitesized train.
I love to bake and at Christmas I like to drag out some old fashioned recipes and get busy making yummy stuff!
Nanaimo Bars .... a well known treat in Canada...but, not everywhere else. Oh, they are soooo goooood..... very rich, so small squares are perfect.
Caramel Macchiato shortbread .... mmmmm...
and, Butter Tarts... another Canadian recipe.... and, I've discovered a German pastry (only cream cheese and butter and flour) that is lovely. More malleable than regular pasty and easy to use ... perfect for tiny bitesize tarts. Which are a nuisance to get into tart tins....
Help yourself to one ... or even two, and you won't feel guilty because they are just tiny.....

DESCRIPTION
A stunning appetizer will add a "Wow" to your next get-together.
INGREDIENTS
1 box (9 oz) Green Giant® frozen spinach, thawed, squeezed to drain
1/3 cup garlic-and-herbs spreadable cheese
1/4 cup shredded mozzarella cheese (1 oz)
1/4 cup shredded 5-cheese or 6-cheese Italian cheese blend (1 oz)
3 tablespoons freshly grated Pecorino Romano or regular Romano cheese
2 tablespoons finely chopped shallot or onion
1/4 teaspoon garlic powder
1/8 teaspoon salt, if desired
1/8 teaspoon pepper, if desired
1 can (8 oz) Pillsbury® refrigerated crescent dinner rolls or 1 can (8 oz) Pillsbury® Crescent Recipe Creations™ refrigerated flaky dough sheet
24 paper-thin slices (about 4 inch diameter) smoked ham (from two 9-oz packages)*
Freshly grated Parmesan cheese, if desired
DIRECTIONS
1.Heat oven to 375°F. In medium bowl, mix all ingredients except dough, ham and Parmesan cheese until well blended. Set aside.
2.Unroll dough. Separate or cut dough into 4 rectangles (if using crescent dough, press perforations to seal). Cut each rectangle into 6 (2-inch) squares. Press 1 square in bottom and up side of each of 24 ungreased mini muffin cups.
3.Pat each ham slice dry with paper towel. Place 1 ham slice over dough in each cup (edges of ham will be higher than side of cup.) Spoon rounded 1 teaspoon spinach mixture onto ham in center of each cup.
4.Bake 14 to 18 minutes or until crust is golden brown and filling is hot. To prevent excessive browning of ham, cover lightly with foil after first 5 minutes of baking. Cool in pan 1 minute. Gently remove from pan; let stand 3 minutes. Sprinkle lightly with Parmesan cheese before serving. Serve warm.
*For recipe success, whole paper-thin slices (about 4 inch diameter) of smoked ham (not shaved ham) are needed so slices can be easily formed into the dough-lined cups.

Astronomical Clock, Czech Republic
Clocks involving mechanical figures often tell a story. In Prague, the astronomical clock set into the Old Town Hall Tower shows the procession of the Twelve Apostles, as the hour strikes from 9am to 11pm.
A tower was added to the hall in the Old Town Square in the 14th Century. In 1410, the clockmaker Mikuláš of Kadaň devised a mechanism that could be added to it. Prague was a multicultural city and it was intended that this clock could be read by anyone, whichever method they used. A calendar element was added in 1490, which moved forward a day on the strike of midnight.
In 1659, the clock underwent repairs and it is believed that the moving figures were incorporated into the clock at this time. Figures on the clock include a skeleton, a vain man carrying a mirror, philosopher, astronomer and stone angel. A golden rooster was added to the clock in 1882, which makes a crowing sound created by a set of bellows.
The astronomical clock has been through many periods of repair and restoration since the 15th Century. The most serious damage came from an incendiary shell destroying much of the clock's workings at the end of the Second World War. It was back in operation again by 1948 and modifications continued through the second half of the 20th Century, including setting the clock to Central European Time (CET) and replacing and repainting the figurines.
