The Macro Mondays theme for tomorrow, 11/7, is biscuits, or - on this side of the pond - cookies. These are one of the six varieties I bought to photograph. Luckily there is someone who will help eat them, to save me from myself… giggling.

I typed the word "biscuit" into a google search box. The result was 602,000,000 hits in .82 seconds. Most of the images on the first page looked like this version of biscuit. The image covers an area of less than 60mm square.

A bakery was originally located in this building. This biscuit bakery, "De crowned Almansgading", was built in 1839 by Teunis Hissink.
At the end of the Middle Ages, cake is traded from Deventer to many cities. Deventer is especially popular in Hanseatic cities such as Bergen in Norway and the ports on the Baltic Sea. Due to the long shelf life, export to these faraway places is possible. On the way, the skippers also eat cookies, because they last longer than bread.
Deventer cake is so popular outside Deventer that the Groningen cake guild makes an exception to the prohibition to import cookies from other cities in the guild letter of 1640. Grocers from Groningen are then prohibited from selling "strange" cookies, unless they come from Deventer.
The output of the Deventer cake is quantitatively impressive, because in 1694 714,500 gingerbreads were exported to Groningen, Amsterdam, Haarlem and Leiden. In addition, spice and sugar cookies are also popular among the "overseas possessions". The biscuit bakery is not a new industry in Deventer, although many new bakers are coming into town, but it is certainly one of the few local industries with a catchment area that extends far beyond Deventer and its immediate surroundings. The biscuit bakery remains an industry in the 18th century with a production of 200 to 400,000 biscuits per year.
The fame of the Deventer cake is also spread by the royal family. When King Willem I passes Deventer on his travels to Germany, the then mayor never omits ZM.a "three-guilder cake" while changing horses, which was then eaten on the way.

De koekjesbakkerij is geen nieuwe industrie in Deventer, hoewel er wel veel nieuwe bakkers de stad binnenkomen, maar het is zeker een van de weinige lokale industrieën met een verzorgingsgebied dat zich tot ver buiten Deventer en directe omgeving uitstrekt. De koekjesbakkerij blijft een industrie in de 18e eeuw met een productie van 200 tot 400.000 koekjes per jaar.
Ook de roem van de Deventertaart wordt verspreid door de koninklijke familie. Als koning Willem I Deventer passeert op zijn reizen naar Duitsland, laat de toenmalige burgemeester ZM.a nooit een "drieguldencake" achter bij het wisselen van paarden, die onderweg opgegeten werd
This ever so thin delightful biscuit is a Stroopwafels...chocolate waffle filled caramel, cinnamon and bourbon vanilla. A delightful biscuit with tea or coffee, large enough to sit atop any cup and let the steam warm it for a tantalizing bite.
three biscuits should not hurt my appetite, but that is a big biscuit. I got to get a bigger cup to dunk these in!!!!
