Sprouting activates the enzymes in the grain, bringing it to life and making the nutrients available for us to absorb. I begin with locally sourced, BC grown organic/non modified grain (regionally grown grains like Einkorn, Emmer, Spelt, Rye, Khorasan, etc). I soak them, and sprout them, activating the enzymes and making the nutrients bioavailable, a process that takes several days to just under a week depending on the grain. The sprouted grains are then gently dried at a low temperature to avoid damaging the enzymes. Once dry, the sprouted grain is milled into (100% extraction) fresh flour, so you are getting all three components of the complete grain, nothing is removed/added. Every loaf is made by hand, using sprouted flour that has been milled the same day, and then each loaf is long fermented (48h and up to a week for my celiac/gluten sensitive members), making it a loaf that is incredibly easy on the digestive system, has a low gluten content (lower than commercially available “gluten free certified” products- specific studies indicate), is low on the Glycemic Index, and most importantly, the nourishing vitamins/minerals are bioavailable for absorption. This morning while carefully sifting through the sprouted Khorasan kernels during their final rinse, I came across several intact spikes of wheat. This made me inordinately happy, as it usually does when I’m able to get as close as possible to the raw source of whatever I’m working with- and I’ll tell you why. In the mid 1800s, some fool accidentally separated the three components of the wheat kernel, and discovered that by milling only the endosperm, and removing everything else, he could produce white flour. This fancy pants pure white flour became highly desirable amongst the wealthy (whole grain flour was for the peasants) and soon millers stopped producing whole grain and focused on meeting the demand for the more lucrative white flour. It wasn’t long until people began suffering from digestive/health problems, and knowing that the nutritional components of wheat contained in the rest of the kernel were missing and the wheat was much more difficult to digest, millers were asked to resume whole grain milling. Another solution was quickly found- “enriching” the white flour with 1 mineral- iron- and 3 vitamins. The problem? The wheat germ (the little part that contains life- the part we sprout) contains over 30 nutrients- vitamins, minerals, proteins, antioxidants, fibre, etc. It also contains healthy fats and for this reason, it is still removed from flour today, as with oxidation it quickly turns rancid soon after milling (it begins deteriorating within 30 minutes of milling- and by day 3 has lost almost 70% of its nutrients.. the flour on store shelves today is essentially dead, making it “shelf stable” (as shelf stable and nutritious as dust if you ask me😖).
