For the new project. Quick edit from a shoot I did on Wednesday. In retrospect this kinda makes me feel like a crazy person.
This is the abandon Union Sugar Factory in Betteravia, California. That made sugar from Beets. In 1988 there was an explosion that burned 8 workers. In 1993 it was closed and along with it the town of Betteravia was abandoned.
I was so excited to finally start seeing something other than greens at the farmers market!! (I love greens but variety is nice too) had to paint this quickly so I could cook some of them!

A can of small whole beets gets smaller and less whole. And the garage is filled with a spray of beety goodness, with a few larger chunks thrown in for good measure.

Recipe to follow:
2 golden beets, sliced
2 tsp chives
Salt, pepper
1/4 cup toasted pecans
1 head romaine
1/2 wheel Miyoko's Herbes de Provence, sliced into wedges
1 tbsp mustard
3 tbsp rice vinegar
2 tbsp olive oil
Juice from 1 lemon
Salt, pepper
Sprinkle the chives and a little olive oil over the beets, add salt, pepper. Roast at 375 degrees 20 minutes - cool. Whisk the dressing -- mustard, oil, vinegar, lemon and salt, pepper.
Combine the romaine, pecans, beets and nut cheese - toss in the dressing...feeds 2-4.
Had to do some food shooting (okay, was excited to do) for Cure today. I was really excited about the presentation on the beets - that little bit of radish stuck vertical on the end just sold it for me.
We walked over to the farmer's market on Saturday morning, and found this tricolor set of beets. We picked an orange bunch, and roasted them - yummm!!!

Trailing a trainload of sugar beets, Great Western 2-10-0 90 rolls along at the end of November in 1958. Built by Baldwin in 1924, the Decapod still had several working years left with the GWR, operating into the early 1960s. By 1967, 90 was in storage and was then sold to the Strasburg Rail Road. 90 has since operated on and off on the famous Pennsylvania line, and recently reentered service following its most recent overhaul.

These decadent treats get a hand up from #aquafaba , heirloom beet puree and buttermilk. A touch of white chocolate chips on top are just for looks!
SBB Cargo Tm 232 139 had been coupled to the raft of Eaos wagons at Cossonay, where sugar beet loading was nearing completion for the day. Once loaded, the wagons were taken across to the holding sidings to await collection later that afternoon.

Spoladea recurvalis. About 20 mm wingspan. Tiny brown moth of interest to me mainly because of how hard it is to take a decent picture of it. I think I'll still keep trying.
...near Cambridge. This Holmer Exxact Terra Dos T4-30 was lifting at a fantastic rate keeping a CLAAS 870 Axion tractor and 20 ton trailer very busy carting the beet to the edge of the field.
I went shopping to gather some larger targets.
Beets seemed like fun.
This picture has a lot longer delay than the previous. It looks dramatic.

Gina got a new tattoo...she loves beets! She just had it done earlier in the day. It looks beautiful and has really great colors.
This is my favourite type of beet...it's an Organic Golden Beet! I like these much better than the red ones and these don't stain everything! I like munching on it raw or roasted.
The seasonal loading of sugar beet at Cossonay produced the allocation of SBB Cargo Tm 232 139 to position empty wagons and remove loaded ones from the loading area. A raft of four loaded wagons appeared to be the standard rake handled by the shunter and one such move was recorded whereby the wagons were moved to join other loaded wagons to form the evening's block train departure for Aarberg.
