Used leftover organic long grain brown rice made with
stinging nettle pesto:
1 cup of steamed stinging nettle from our garden
1/2 cup of organic pine nuts
1/3 cup of organic extra virgin olive oil
1 1/2 tablespoon of minced organic garlic
added:
1 organic leek
1 organic apple
1 organic blood orange
1 /3 cup of crumbled old cedar cheese
Incorporated everything together and baked at 375F for approximately 30 minutes in an oiled dish. Sprinkled the top with sesame seeds and baked for another 10 minutes.

With a break from the hot weather I set about making some Almond Rusks, a Swedish recipe from my home church's cookbook. They are similar to biscotti and also require a double baking. But they are very yummy!

These are my favorite to make and so much easier than last week's bagels. Sea Salt and Parm Cheese Topping
We had already eaten a ton, but here was the aftermath. Put some oil down, put the seeds on the sheets, then put some salt on top. Bake at 350° for about 20 minutes, and stir them around every so often. Delicious!
1 graham cracker crust
16 oz greek yogurt
1 bar cream cheese
1 c sugar
3/4 tsp salt
1 tsp vanilla extract
1 tsp lemon zest (1/2 lemon, zested)
3 eggs, separated
bring all ingredients to room temp, beat egg whites, combine remaining ingredients in food processor and pulse for 45-60 seconds, incorporate whites by hand. bake in a shallow water bath at 350 for 45 minutes. DO NOT OPEN THE OVEN DOOR, turn off the oven and leave the cheesecake in there for another 20 minutes. cool for at least another hour before covering and refrigerating before serving. refrigerate for at least 6-8 hours.
I baked two plaited Challah loaves (ingedients include honey, egg and butter) and two small seeded loaves. I was worried that the seeds on the latter were beginning to burn so I covered the loaves with a sheet of waxed baking parchment.
When I opened the oven door to check how things were going the paper slid off the loaves to the back of the oven and caught fire in the gas flame. Er... everything's under control, Gromit...
