I'll be making the charoset for my family's Passover Seder tonight. It is a mix of apples, wine, honey, walnuts, and cinnamon.
Every year I take a photo in the spring of snow on a flower or blossom. I was starting to think this would be the year it didn't happen, but last night we had about two inches of snow. My apple tree has lots of buds and I found a few open blossoms for photos.
“And when you crush an apple with your teeth, say to it in your heart:
Your seeds shall live in my body,
And the buds of your tomorrow shall blossom in my heart,
And your fragrance shall be my breath,
And together we shall rejoice through all the seasons.”
― Kahlil Gibran

This is the first formation of growth on the apple tree in our garden. The village in which we live dates back to the 12th century. The oldest surviving house is that of our neighbor and was built in 1514. The variety of apple exists prior to the oldest records and we are told has not been classified. When fully formed the apple is excellent for baking but not for eating raw.

The new crop of apples is being picked at Biersdorfer's Orchard in Guilford, Indiana. Famous for it's apples, apple cider, pear cider and ducks...there is a pond with ducks and you buy corn from the store and feed the ducks...our granddaughter loved it. At three it was pretty exciting.

Apple cake, apple pie, apple chutney, apple jelly? - Not likely, this is Devon so - cider.
Each year the country consumes 1.5 billion pints of the stuff and over half, 57 per cent, of all the apples grown in the UK are now used to make cider.
On average, most hard ciders are 4.5% - 7% alcohol by volume (ABV), while some ciders have an ABV as high as 10% or 12% (proper falling down juice).

Stu was my model for this one. He was enjoying the fragrance from my Homemade Apple Cake! This one is flour-free...the cake, not his nose :) I used my new Meike 85 mm Portrait Lens and I have to say I'm quite please with the results.
