Joe’s Real BBQ started as an idea born in 1995. At that time, Joe Johnston and Tim Peelen were finishing up their employment contracts with The Coffee Plantation, a local chain of coffeehouses they had founded some seven years earlier and sold in 1993.
Already thinking about what to do next after the coffee business, the idea of building a barbecue business intrigued Joe. He also thought of doing a farm-based restaurant on the family farm, but considered it too far out of town. Joe started to analyze different service systems, cooking methods, and décor at the barbecue restaurants he visited on his business trips to Texas. At this point, he began to develop a business plan for a barbecue restaurant in Gilbert, which is his hometown.
One day, while Joe was driving north on Gilbert Road, HE SAW IT. Although he had passed the intersection of Page and Gilbert Roads many times since he was a kid, he saw for the first time that the building at 301 N. Gilbert Road was the ideal barbecue building. It was decided that the restaurant would be set in the 1940’s time frame and that the décor would honor Arizona, particularly the Gilbert area, during that period. The building was built in 1929 as a Safeway Pay’n’Takit. As much of the existing structure as possible was to be retained. An animated neon sign, the first built in the Phoenix area in several decades, was added to the corner of the building. A restored 1948 John Deere tractor was rolled into the building when the plywood storefront was removed. The most notable addition to the building was the commissioning of a mural on the south wall. The mural commemorates the agricultural heritage of the area and hard work that went into producing crops.
Texas-style brisket for lunch today. I put it on at 325 degrees while I was making breakfast, and it was fork tender by lunch time.

This Tex-Mex style meat chili is a favorite during cold weather paddle league play. This recipe makes enough chili for 16 hungry platform tennis players and should be paired with a cold beer. Needs to be made the night before the match.
Ingredients
5 lbs. of beef stew meat cut into 1 inch squares about 1/3 of an inch thick
1 lbs. package of bacon (you don't really need the whole package, so you can munch on some while you cook)
1 28 oz. can of diced tomatoes
1 28 oz. can of tomato sauce
1 15 oz. can of kidney beans
1 15 oz. can of garbanzo beans
2 15 oz. cans of Hormel Chili or similar
1 square of unsweetened bakers chocolate
2 1.25 oz. packets of McCormick Tex-Mex Chili seasoning mix
Chopped garlic
Ground pepper
Worcester sauce
Liquid Smoke
2 large sweet onions finely chopped
3 cups of grated sharp cheddar cheese
The night before
Brown and drain the beef and place in the slow cooker.
Add can of diced tomatoes to slow cooker and turn on to high.
At the same time, cook the bacon on the stove top using low heat and when done, place on paper towels and set aside.
Stir in the tomato sauce and Hormel Chili
Season with half of the bacon, garlic, Worcester sauce, Liquid Smoke, ground pepper, chocolate and McCormick seasoning mix.
Cook for about an hour and reduce heat to low. Let it cook all night.
Chop onions and grate cheese and put in the refrigerator.
The morning of
Turn off the heat and when the chili approaches room temperature, refrigerate.
About an hour before serving
As chili is reheating, drain and stir in the kidney and garbanzo beans.
Re-spice as needed.
Add the other half of the crumbled bacon.
If Chili is runny, add a small can of tomato paste and remove lid from slow cooker.
Serve with chopped onions and grated cheese.

Okay, this is Texas, and we're not known for our spectacular displays of fall foliage ... especially in this part of the state where we have strongly alkaline soil, but we're not letting that stop us. It's fall, and we've got color, baby!
I took this photo late Friday afternoon as the sun was descending in the western sky. These trees are just outside my front door. The trees with red and orange leaves are red oaks (hint: red oaks aren't always red), and the yellow-leaved tree in the back is a pecan tree. They dressed in their finest this year for Thanksgiving, and we all feel quite honored.
The Weather Channel probably won't be reporting on fall foliage tours in this region anytime soon, but the locals know where to look and what to plant for some really stunning effects ... Texas-style ... and as a result, there are a lot of beautiful views around here right now.
Let's hear it for alkaline soil ... sweet!

Chili Beans Con Carne Texas Style
Serves 6 - 8
1.5 lb ground beef
5 - 6 New Mexico (Mild) Chili) dried Chili Pods
5 cloves of garlic
1 tbsp parpika
2 tbsp cumin
1 tbsp oregano
1 tbsp cayenne
3 tbps chili powder
1 bay leaf
2 15oz cans of kidney beans
Aprox. 25oz pinto beans
1.5 tbsp flour
Salt to taste
1. Roast chili pods until their color is a dark red and have poofed up. Once this is done, submerge them in ice water to soften them,
let sit for 10 minutes.
2. Meanwhile, in a pot, cook the ground beef until brown, add salt.
3. In a blender, remove stems and seeds and drop chilis, some of the chili pod water, about 4 cups, and garlic to puree. Add to the browned ground beef and simmer for about 10 minutes. While simmering, add spices (cayenne, chili powder, cumin, paprika, oregano, bay leaf, salt).
4. After 10 minutes of simmering, add kidney beans and simmer for 10 more minutes. Then add pinto beans and simmer for 25 minutes. Stir periodically to let the flavors incorporate.
5. Combine 1 cup of cold water with the flour and dissolve. Add this mixture to the chili beans to thicken it up. stir immediately. Let simmer for another 5 minutes.
Serve hot.
Top it off with cheese and onions or however you like your chili.
Note: This recipe is a work and progress and spice amounts are approximate, you can add or take away as much spice as you want until you get the right flavor.
