While I was at Walt Disney World, I received a special package from a wonderful Flickr Friend, "Rose Red Cottage". I saved the package to open on Christmas day and was thrilled to find a delightful hand-made card and a copy of this fun "Night Before Christmas (Texas Style) story.
This 1992 edition was written in 1950 by Leon A. Harris and was illustrated by Meg Wohlberg. Meg Wohlberg, who was best known for her illustrations of babies and small children, died at age 85 in 1990.

FYI, Pelican Press, Gretna, LA, offers an eclectic selection of books about the South, especially Louisiana and Texas. In 2003, Pelican published a superb book about the Saint Joseph Altar tradition in New Orleans. Some of the altars in the book are ones I saw and photographed as well!

Ingredients
3 pounds Cubed Braised Chuck Steak
1 29 oz. can Tomato Paste
1 15 oz can French Style Green Beans
1 15 oz can Pinto Beans
1 15 oz can Cream Style Corn
6 medium Red Potatoes, diced
6 medium Carrots, peeled and sliced
3 diced Roma Tomatoes
1 medium Yellow Onion, sliced and quartered
season to taste with white pepper, black pepper, cayenne pepper, garlic salt and salt.
Place ingredients in 6 quart crock pot and cook on high until it begins to boil around edges, then turn to low for 4-5 hours, or until meat is tender.
Serve with crackers and a cold tasty beverage.

Chili Beans Con Carne Texas Style
Serves 6 - 8
1.5 lb ground beef
5 - 6 New Mexico (Mild) Chili) dried Chili Pods
5 cloves of garlic
1 tbsp parpika
2 tbsp cumin
1 tbsp oregano
1 tbsp cayenne
3 tbps chili powder
1 bay leaf
2 15oz cans of kidney beans
Aprox. 25oz pinto beans
1.5 tbsp flour
Salt to taste
1. Roast chili pods until their color is a dark red and have poofed up. Once this is done, submerge them in ice water to soften them, let sit for 10 minutes.
2. Meanwhile, in a pot, cook the ground beef until brown, add salt.
3. In a blender, drop in chili pods (without stems and seeds), add some of the chili pod water, about 4 cups, and garlic to puree everything. Add to the browned ground beef and simmer for about 10 minutes. While simmering, add spices (cayenne, chili powder, cumin, paprika, oregano, bay leaf, salt).
4. After 10 minutes of simmering, add kidney beans and simmer for 10 more minutes. Then add pinto beans and simmer for 25 minutes. Stir periodically to let the flavors incorporate.
5. Combine 1 cup of cold water with the flour and dissolve. Add this mixture to the chili beans to thicken it up and stir immediately. Let simmer for another 5 minutes.
Serve hot.
Top it off with cheese and onions or however you like your chili.
Note: This recipe is a work in progress and spice amounts are approximated, you can add or take away as much spice as you want until you get the right flavor.

I met Kevin, my Stranger #57, while he was working his second job as a parking attendant at the Santa's Wonderland Texas Christmas Village between Navasota, Texas and College Station, Texas.
