Coriander, fennel, peppercorns (all roughly ground), salt and pepper. Cover with foil and roast at 325F for 5.5 to 6 hours. Add a bunch of sliced onions to the pan at the 4 hour mark and recover with foil. Easy!

I had grand ideas about this assignment, but decided to start simple. This is my wonderful, beautiful, antique engagement ring. Any comments and critiques on the "slices" is welcome. I don't love this, but it was my first attempt at anything of this nature.

The smoke ring is super-obvious in some of the slices in the foreground, though all of the meat has a great smoky flavor. The meat definitely could have been cooked several more hours to make it more tender, but it's still quite good.
