Although I've blurred it out, there is a pre-printed label with my voter registration information on it. When this label is present I know I've already registered and won't have to do it again.

romaine hearts/parmesan fluff/spanish anchovies/brioche twinkie

 

Essentially version 2.0 of Bowles' signature deconstructed Caesar salad from Avenues.

 

Like the previous experience, I found a seasoned and pickled Spanish anchovy fillet laid across a ruffled quenelle quarter of romaine heart. The fish itself was fat and meaty, moist but mild in flavour. The star, an almost challah-like golden cube of brioche, contained a loose crab salad-like parmesan fluff (last experience it was more of a cream); the combination, an explosion of the buttery rich, airy dense, crisp and crunchy sensations. Unlike the previous cream version, the contents of the cube retained their structure after slicing, and although it might have been less messy and more twinkie-like, alone it seemed missing just that little bit of je ne sais quoi. No matter, because that "quoi" was answered by a warm and heady garlic-mustard-goat cheese cream decorating the plate - a binder - that brought together all the components into those familiar caesar salad flavours.
