Mix together 2 ripe avocados, 1 bunch chopped spinach (steamed), 1/2 diced yellow onion, 2 diced tomatoes, 1 cup Toffuti sour cream, juice from 1 lime and 1 orange, 1 seeded roasted jalapeno pepper (wear gloves!), 4 tbsp minced parsley, 1 clove minced garlic, and salt and pepper to taste.
This stage was built in a hotel for a Salsa competition. The stage remained rock solid while all the dance routines were being performed.

4 days of neglecting garden duties makes for a large harvest! the tomatoes and jalapenos made it into a delicious batch of salsa, and I'm going to make some zucchini bread tomorrow to at least put a dent in those puppies.
I didn't can the salsa due to botulism paranoia, but it wasn't a huge batch (2-3 pints), so I think it'll go pretty fast. I may try freezing some of it as a test, does anyone have any ideas on this?
I also made a farmer's market trip, and canned some 5 pepper jam and peach jam. pictures once there's decent light in the house tomorrow!
