Guillermo on 2010.a. Salsa Euroopa Meistrivõistluste hõbemedali omanik. Läbinud maineka tantsukooli Escuela Nacional de Artesta, on ta on tantsinud ning koreograafina töötanud mitmete tuntud tantsukompaniide nagu, Prodanza & Ballet Rakatan Dance Company, Conjunto Nacional de Cuba, Viadanza, Yol Dance Company koosseisus. Guillermo on oma huvitava ja omanäolise stiiliga inspiratsiooniallikaks väga paljudele salsa ja ladina-ameerika tantsude fännidele.

took 1/4 of a large seeded habenero and ground it with some onions and garlic, then added that to some diced sweet red pepper, diced tomatoes, salt, pepper, lime juice and fresh chopped cilantro, mixed and let chill.
using a mortar and pestle, ground together one dried arbol chili pepper, a pinch of dried mace, a pinch of dried garlic, pepper and salt. added this spice mixture to a mixing bowl with some all-purpose flour, ground flax seed, fine ground corn meal, and coarse corn meal, did a dry-wet-dry of this mixture and a beaten egg onto two 1/4-lb fillets of tilapia, then slipped them into a hot pan with 2T. of canola oil. let the first side brown, and to ensure crispiness without deep frying, flipped the fillets over and transferred the frying pan to a 375-degree oven for 5-minutes or so, until the bottom side of the fish was brown and the feel was right.
plated the fish with some of the delicious and fresh salsa, some sour cream spiced with chili powder and cumin, and a mixed spring green salad with fresh sweet corn, red onion, cucumbers, and avocado slices, tossed in some lime juice and olive oil, muddled with some cilantro and salt and pepper.

NEW YORK, October 5th, 2010 - BAILA Society's fall dance showcase “Bailando Por Una Causa”: A Night of Dancing to Benefit the Latino Commission on AIDS raised more than just money for the Latino Commission; it raised awareness about the HIV/AIDS epidemic in Latino communities across the nation.
The event, featuring dance performances by BAILA Society, Eddie Torrez Jr, Djoniba Dance Centre, the Peridance Ensemble, Cecilia Marta Dance Company, Nelida Tirado, and Walter Perez took place on Tuesday, October 5th at El Museo Del Barrio with all proceeds from the tickets sales going to the Commission.
“We are honored to partner with Baila Society and Peridance for this special event,” said Guillermo Chacon, President of the Latino Commission on AIDS. “Bailando Por Una Causa represents a sign of hope, energy, support and passion to continue our prevention and education of HIV/AIDS in our communities, and we are grateful to Baila Society for leading this beautiful night of dance for a good cause.”
The over 400 guests, together with Miss Universe 2008 Dayana Mendoza and MTV Tr3s’s Carlos Santos, were entertained by various styles of dancing, including Salsa, Tango, African, Flamenco, and Contemporary Ballet, and an after party at La Fonda Boricua Lounge, which featured live music by Spanglish Fly. Most significantly, though, guests took part in raising funds and drawing attention to the important work the Commission does in combating HIV/AIDS in communities of color through their programming and outreach efforts.

Japanese Black Trifle, Yellow Perfection, Peacevine cherries, corn just pared off the cob, cilantro, coriander, parsley, scallion, a bit of roasted jalapeno, salt, pepper, and a little drizzle of olive oil. Good spicy salsa.
