Salad, turkey, sundried tomatoes, spring onion, dressing of olive oil, lemonjuice, rice vinegar, wholegrain mustard, honey, pepper, salt.

you need:
mixed salad
vinegar
walnut oil
pepper
roasted pine nuts
tomatoes
sprouted vegetables
shrimps (roasted in a pan with garlic, salt and herbs)
balsamico cream (for decoration purposes)

service with bread and a cooled light white wine. :)
I've been eating out far too often lately and have resolved to cut back, so the other day I dipped into Nigel Slater's excellent Kitchen Diaries and found this gem: grilled sirloin steak on a bed of watercress, lime leaves, coriander and mint with tomatoes, cucumber and carrot and a dressing of chilli, lime juice, fish sauce and sweet chilli sauce.

Cucumbers, sweet baby carrots, green peppers, onion, dry toasted almond slivers, quarter cup of vinegar, quarter cup of olive oil, juice of a quarter lemon, italian seasonings, corse sea salt, fresh ground pepper, about a tablespoon of parmesean cheese.
Recipe, for small octopussies, 200 gramms or so:
Freeze before cooking.
Defrost.
Remove the beak.
Wash with cold water, with a lot of salt, like laundry.
Repeat 2-3 times -- that makes them clean and a bit softer.
Bring water to boil.
Place them into the water, lid on, boil for some seconds, then let simmer for 50 - 60 minutes. Test with knife tip.
Finito! :-)
Dressing: Splash of oil, white wine vinegar, splash of lime, splash of fish sauce, tiny bit of lime peel. Salt, parsley, garlic, cilantro ... to taste.

My lunch looked so colourful I thought I should photograph it. I'm not usually one to do that.

Was hesitant to make this...but, it turns out the contrasting sweet and salty elements and bitter from the mint is fabulous. Can't wait to make this again...and again...

Salsa Salad! Baby romaine, sliced grape tomatoes, corn, sliced olives... squirt with some lime and salt/pepper.
Although I didn't do this, I think an avocado based dressing would be great with this salad. Avocado blended with lime and salt, and maybe cayenne powder or a minced jalapeño.
Salads composed from even a few ingredients make a nutrient-rich meal. The greens alone have calcium, iron, potassium and B vitamins. Many salad basics, including tomatoes, sweet peppers and the greens, are chock-full of antioxidants. I just made this salad to take to a potluck event tonight and am pleased that I didn't manage to screw it up for vegans by adding one forbidden item. It contains arugula, watermelon, avocado, olive oil, lime juice, cayenne pepper, salt, black pepper. I'm also pleased that I was able to find a Florida avocado since I prefer them and since they are less fatty that the small, darker skinned avocados.
