Olive Oil Poached Cod En Salade:
-Artichoke Purée, Tarragon Dressing, Lemon Zest
Perhaps my favorite dish of the entire night. The cod was apparently quick cured in salt and briefly poached in olive oil. One of the table captains told me the do not use sous-vide, but rather favor conventional stove-top preparation. Also, I found it quite interesting that the entire prep starts in the afternoon - so salt-curing is quite quick, indeed.
The fish was cooked just a hair above sashimi texture, and combined the best of of raw, bacalao and ultra-fresh cod worlds. Tarragon dressing was a brilliant pairing.
On a separate note: herewith, I shall commit an act of blasphemy:
- what is the advantage of using bacalao (aka baccalà ) over fresh fish? I realize it's was the only way to preserve much needed protein in the past, but in the era of refrigeration and availability of fresh cod from the Atlantic doesn't it seems as archaic and obsolete as Kosher/Kashrut dietary laws, which made a lot of sense 3000 years ago, but are completely senseless now? I think I have offended enough people already...
At any rate, this was a plate for the ages - quite possibly one of the best things I ever ate.

Step-by-step poaching an egg in a hot pot.
I like poached eggs but find the traditional methods too messy and slow. Hot pots boil water fast, cheap and safe. An easy source of protein in a dorm!
The hardware...
* An electric hot pot, something wide mouthed, shallow and with a control
* A ramekin or other shallow, wide, smooth dish that's safe to boil. A cheap, ceramic tea cup works, too.
* A flexible spatula or butter knife (not shown)
* Tongs
The software...
* One egg
* Salt
* Water

Ivory, which cost around £35 per kilo in 1976 can fetch as more than £4000/kg, because of soaring demand from China's booming middle class. The black market price has led to a dramatic increase in the number of elephants being poached in Africa. Traffic, an NGO which monitors the illegal trade in wildlife parts, said the number of elephants being poached across Africa is likely to "run into the tens of thousands" every year.
I don't do eggs or dairy often, but if you do, poached egg toast is a healthy option. Just be sure to choose brown bread and don't add butter. Toasted bread is good enough.

This high ladder enables the reaching of the so called Wildschuetzenloch (~ "poachers hole"), a passage cave at a height of circa 20 meters, which can be left again through the hole on the left of the entrance hole towards a rocky path through the wall. Into this cave poachers could in former times indeed be sure to stay undiscovered by hunters.
William Kiprono, the director of the Kenya Wildlife Service displays a rhinoceros horn recovered from poachers, Jan 16, 2013. Mr Kiprono said Kenya needed intelligence help from the international community to break the smuggling cartels behind record levels of illegal poaching.

My trusty 5 year old super Flash getting a make over while the batteries are getting their annual recharge. Prismatic lens poached from an ald reflector pried in half. Heat with heat gun and formed around a 1" dowel. Bonded to super flash body with Sugru. Still crazy bright and now about 160 deg of bright from the main LED.
