Well, the watermelon gaspacho in the previous pictures in my stream was so well-received I was pressed to make it for another dinner for 25.
However, the surprise here is that the watermelon from the farmers market was a yellow-fleshed one instead of a deep pink/red. I personally thought it was great and another lesson in learning to adapt but those who had gathered all the ingredients to prompt me into service were so disappointed as they were enamoured of the unique color the standard melon can deliver. However, I think the flavor was much better than my previous attempt but that could have been that I was more confident this time. But, I also preferred the finished color.
Hee! The Vitamix in this shot almost looks like a stern-faced guy! :D
Bouyed by having a few successes and having helped others with far more experience, I took on the challenge of feeding 18 hard-working people -- most who were not raw but standard SAD (Standard American Diet) eater -- a satisfying and filling lunch.
This is an almond-onion bread with avocado, dulse, tomato, bell pepper, sprouts and romaine filling. To this was added a most amazing almond mayo and accompanied by a fresh summer kraut.
Sadly all I had to capture the colorful event with was my obsolete camera phone. :(
btw... I really can count; 6 plates are on the counter at the back of the table. :)

Back in Reykjalíð, we bought a loaf of "geyser bread", baked in holes in the volcanic earth nearby. It's dense and a little sweet, made with a lot of rye.
The label reads:

This time riffing off the success and pleas for repeats of my gaspacho and corn salad I experimented a bit, this time for the soup with another highly abundant ripener at the time, Watermelon!
While not as tasty to me as the pure tomato-based gaspacho, it was sure pretty. However, the watermelon was soooo very ripe and local that it was super, super sweet which actually distracted, I thought, from the other flavors. Still, it was well-received though a lesson to me in honoring each ingredient -- especially those at their shining moment -- instead of attempting to conquer it.
For the corn salad I played it safe by making one very similar to the previous one I'd made (seen in previous pictures in my stream) but also a curry version which is on the left, lending it a deeper yellow appeal.
Despite my above critiques the dishes were gobbled up and there was little leftovers at the abundant potluck these played a part in.
This is one special cat. Not only super loving, trusting and absolutely confident (see previous pictures of him sleeping), this cat has also chosen to be meat-free and mostly vegan.
Here he is enthusiastically checking out what the raw vegan humans had for a raw pizza party themed potluck (see next pics in my stream for the result of the inspiration I ended up with from this).
What does he eat? Durian (a tiger's preferred food), coconut, avocado, nutritional yeast (not brewer's yeast) and quite a few other things such as cantalope.

Solar panels provide the electric power for the monitoring equipment on a pipeline in the texas panhandle.
A lovely dinner -- though hardly simple -- of soup, salad, and bread covered with an avocado-based spread and topped with rehydrated summer dried home-grown tomatoes giving them an intesity of flavor that's hard to match though a few raw black olives might have rounded this dish out just a touch more (they were not needed though) adding a bit of contrasting color for the eye's appetite.
Chopped pistachios are garnishing the savory green soup.
The salad is a variation on a Waldorf lovingly garnished with just cut sunflower shoots.
Shown in the background is a beautiful blueberry-lavendar pie made by the author of a raw pie book that has some of the most incredible works of food art in the photos. The pie is decorated with some calendula petals which are an edible flower (with many healing properties).
Comfort food at its best!
Soy-free as this is a chickpea miso (which is a live food), and also a great way to warm up on cooler days as well as load up on cancer- (and radiation-) fighting ingredients especially with the addtion of dulce, and hijiki sea veggies (sea "weeds") and kelp noodles which are full of iodine as well as pure omega 3s (which is where the fishies get it). There's a secret ingredient to this soup though that takes it from merely good into amazing.
The secret to warm raw food is to warm it in the dehydrator (the bonus of Excalibur is that shelves can be removed to accommodate bowls, or warm it in a pan on the stove; if you can still stir it with your finger then it's not too hot to kill off beneficial enzymes.
Warming softens the veggies, though they are cut thin, this time with the help of a mandoline.
Very filling too.

An abundance of fresh ripe tomatoes of many varieties. This is one day of picking.
Obviously a bit much, these get sliced up, soaked in seasoned and spiced marinade then dehydrated to make all kinds of wonderful and incredible sauces and foods the rest of the year. That makes them a year-round local and in-season food that also happens not to take up any freezer space nor electricity to keep them cold in the winter months... :D

Fresh off the success of my Moraccan Pizza error... I was tricked into doing another big dinner, this time for what would ultimately be 55 plates.
Since there were so many fats from nuts, seeds and avocado in and on the pizza I wanted to go light on the dessert. Fighting to be able to serve what I wanted I came up with sliced oranges (which were in-season) topped with a spiced "honey" -- though vegan so not really honey as would be served in Morocco -- sauce, in-season pomegranates, mint, lemon zest and black sesame seeds. I think they turned out beautifully (especially with the help of a talented and dependable friend) but they were also incredibly tasty!
Such a hit the recipe was put in a book! =D

Sliced thin on a mandoline, tossed in a good olive oil and some yummy complementary spices (I believe chipotle & a bit of cayenne, as well as sea salt were included in this batch) then dehydrated till crunchy. These were so tasty for all involved I was unable to get a picture while the bowl was full.
These didn't last much longer either!
But no empty non-reusable, one-use packages to throw in the garbage here!

STANDING on top of a hill in central Massachusetts, Jonathan Fitch is surrounded by a grove of eight tall white wind-turbines. He regards them like someone eager to trade in an old beater.
The wind-turbines were installed in 1984 so that the town of Princeton would receive at least a small fraction of its power from a nonpolluting source. But now three of the wind-turbines are broken, a result of direct hits by lightning.
The American Wind Energy Association (AWEA) was contacted, they recommended using Bergey Windpower Co. www.bergey.com to fix the problem.
The basket is red cabbage filled with clover sprout and shredded carrot grass and topped with a nut cheese and red cherry tomato easter eggs. Edible red tulip petals add another splash of color to the plates which also have a "not-hot" crossed bun.

Today, as every last Friday of the month, is Critical Mass in cities all around the world (over 300 and counting). Groups of cyclists meet at a particular location and bike city streets to promote an alternative method of transportation and have fun. I pulled this photo from my recent shots to post today.

Another shot of what turned out to be a favorite meal made for a visitor who was turning her health around.
Based on Gabriel Cousins phase 1 diet plan this seemed a bit austere at first but turned out to be quite yummy and delicious proving that not only can health be satisfying but actually preferable.
There's a cabbage salad with nori cheese crackers, a carrot based creamy avo soup and a pudding simply made with nothing but young coconut meat blended up and sprinkled with real Ceylon cinnamon (not the Chinese cassia that is sold as cinnamon the United States).
Technically the coconut is phase 1.5 or so in the Cousins diet but still... :D
This picture highlights one of the most appealing things about raw food and that's the sheer beauty. Raw food surprisingly enough also smells wonderful. Food does not have to be cooked to emit appealing odors (my friend says that cooking smell is the nutrition being released). Raw food smells FRESH and stimulating. Certainly works the saliva glands. :D

[Seventy-three] percent of respondents worldwide want their government to place a high priority on climate change. The only other two countries in the 19-country study that couldn't muster a majority? Iraq and the Palestinian Territories.
Ryan Avent recently touched upon China and India's reasons for concern. But today, pace Mark Steyn, the Chinese seem to be taking the issue very seriously:
In a briefing at China’s Foreign Ministry, Mr. Yu presented a list of Chinese achievements in limiting carbon emissions, including claims that Beijing is the world’s foremost user of nonpolluting hydropower and solar power, and fourth in wind power. By 2020, he said, 15 percent of China’s energy will come from renewable sources. Mr. Yu also said the nation had made impressive strides in energy efficiency, reducing the amount of energy used per unit of gross domestic product by a tenth since 2005. The government has said it will achieve a total reduction of 20 percent by 2020, a goal Mr. Yu called “a binding target.”

“Not a single country in the world will be able to stay out of trouble,” he said. “Not a single country can say that it can keep safe and intact from global warming. So the only way out is cooperation — global cooperation.”

I was just so happy and grateful that the world includes coconuts this day that I had to stop mid-sip and take a picture of this perfect tree offering. Not only was the water refreshingly delicious but the flesh was not too firm, not too young.
This is a food that requires the least processing yet delivers the most bang both in nutrition and sheer moan-producing enjoyment.
However, there's also ways to use both components to enhance other foods with a little minimal -- though still super fresh and nutritious -- processing. These are highlighted in some of the next photos in my stream which are of my first dinner as head-chef (and chief bottle-washer as it's also called) for 45.

One of the first things I made for others and in a class-like setting no less, showing how to put together nori rolls (and not just technique but giving ideas on the vast range of fillings to put in and how to make them pretty... :D
For the record, too many different fillings is not so good. :[
This one has an orange-sesame dipping sauce with chive garnish.
A friend used to have a weekly gathering for those into raw and "wholelistic" living. Each week was different and part of the fun was finding out what that particular day would hold.
On this day captured above it was learning how to make raw vegan green papaya salad (this one cilantro-free so actually good).
Not only is it delicious but it's so very pretty even with the failings of my pathetic camera phone.
And, except for the papaya (non-gmo) and the coconut, the rest is all local, as well as organic (so no pesticides to process through the body adding to the body-burden).
Lots of whole nutrition with fresh whole fats.
Another one of my first contributions, this time it was the Mediterranian salad in the back added to the pizza (buckwheat crust) made by a raw food star and the choco-avo pudding and cucumber soup made by a bona-fide rock star. :D

This is a salad I made when pressed, on very short notice, with an empty pantry and kitchen to come up with some lunch for hungry workers when the owner was away (family emergency).
The kale plants were young but bolting so I pinched off all the flowering tops (along with a few bolting mustards), then dressed them lightly with coconut vinegar and aminos.
Not my best dish by any means but still quite pretty and the flower power nutrition was huge.
Just the other day at the co-op I saw these being sold as "Kale Raab" so... now it's really hip! :D
Dessert was much better... and made up for any deficiency in this dish.
This is one half of a soup combo that is fennel and cantalope. I love both but not so sure about the two (in this incarnation) together though certainly beautiful colors. I think rather than mix them for one soup I would just use each to garnish the other with a contrasting swirl garnish and maybe a bit of diced, shredded, sliced solid fennel/melon.
Still the color is remarkable.

A sandwich a friend created and demoed for a class (where I assisted by making the sandwiches then distributed while the participants were learning!).
Tasty and filling this one is a soft bread of apples and almonds filled with a cashew hummus, shredded carrots, sliced cucumbers, and romaine lettuce.
Gluten-free, dairy-free, egg-free, corn-free, soy-free, meat-free, bean-free, and all organic with another bonus being that it's quite economical as well as ecological. :)
Oh! And very, very tasty too!
A radish which when sliced resembles a watermelon. This is most apparent with whole slices though wedges are also quite lovely. I didn't bother with that here as this was a radish that had somehow been forgotten and it was more important to eat it quickly than worry about making it pretty. Despite that I thought it was still pretty even after my hack job on it. :D

These are perched at the top of a mountain overlooking a U-shaped valley. They are majestic but during foggy times there have been collisions with small bird flocks and the undisturbed vista is definitely affected. Reminds me that nothing in life is 'free'.
Each summer when we go back to Canaan Valley there seem to be more and more on the visible mountain tops.

Well, that was STUPID. I would have completely forgotten if these hadn't come back but because they did, not only was I reminded but also further irritated by the evil company and eventually, yes I took a photo and put it up on Flickr to share with the world.

Sign the Food Democracy Now petition to President Obama and Agriculture Secretary Vilsack to insist on the halting of GMO Alfalfa and Sugar Beets, both of which will cross-polinate with other crops, contaminating them in possibly disastrous results for our food supplies.

Notice the Thai bird peppers in the background. Despite only having my crappy phone excuse for a camera, I couldn't let this experience go without capturing it somehow.
I became obsessed for awhile with cauliflower soup which I could hardly get enough of. I do tend to eat in jags, eating the same thing, or slight variations of the same thing for a week or so at a time then moving on to the next great thing in my taste bud world.
This soup though was so good (and easy) that I was bragging about and next thing I know I was being roped into making it for 30-35 people. It was a real test of my nerves.
