I matched my thread to my ribbon - wasn't as noticeable as I'd thought at the end, but was nicely co-ordinated nonetheless, and easy to see when sewing!
Take hold of the two seams you've sewn, and fold them together on one side, with the two loose edges on the other, to put in the final seam.
This one is a Secret Santa present for a lady at the craft club I go to, and it's actually stuffed with beanbag beans. Works really quite well, but doesn't look as good because it sags when you're not leaning on it.
Also, because the points are higher than the middle, it woud've been far easier and less frustrating to fill if I'd thought to leave the gap in one of the short sides instead of the middle of the long one...
The organza flower is from another Sew4Home tutorial, although I've seen the same technique elsewhere. Bit nerve-wrcking at first, but very fun - and a very pretty result, that's softer than you might think.

Lay out the two pieces you've just seamed down one long edge. Fold them apart longways from the non-sewn edge, so the bottom one is flat, the top on is folded wrong-sides-together, and all the fabric that's showing is right sides.
