Easy Chocolate Chip Muffin Recipe
1 1/4 cup of quick oats
1 1/4 cup milk
1 egg
1/2 cup of veg oil
3/4 cup brown sugar
3/4 cup semi sweet or dark chocolate broken into chips
1 1/4 cup flour
1 tsp baking powder
1 tsp salt
1) mix oat + milk in bowl and microwave for 30 second
2) preheat oven 400 F
3) grease inside muffin pan w/ butter
4) stir egg, oil, oat, milk
5) combine flour, baking, salt, chocolate chips, add oat mix and stir to incorporate
6) with a spoon, fill each muffin tray 3/4 to the top, then before putting the tray in the oven, sprinkle some brown sugar on top of the muffins
7) bake 400 F 20-25 min.
