A bayou is "a marshy area near the outlet of a river" -- in other words, a swamp. So they (the restaurant inside a Flying J truckstop) named these New Orleans-influenced menu items after a swamped downtown.
A draw back to the pervious point is that you only have a limited choice of what movie you watch. It reminds me of a menu because you can not order something from Jamba Juice at Tropical Smoothie.
