My favorite thing about winter is probably the availability of Meyer lemons. Thought to be a cross between a lemon and a mandarin orange, they are so fragrant and sweet.

This goldfinch dropped in the other day to see what all the excitement was about over at our place...the pine siskins have been swarming the feeder for weeks now. He only stayed long enough for a couple of pictures and I haven't seen him since.

Good lemon Bars we made.
1 cup butter, softened
Unsalted Butter
+1/2 cup white sugar
+2 cups all-purpose flour
+4 eggs
+1 1/2 cups white sugar
+1/4 cup all-purpose flour
+2 lemons, juiced
+Add all ingredients

Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, blend together softened butter, 2 cups flour and 1/2 cup sugar. Press into the bottom of an ungreased 9x13 inch pan.
Bake for 15 to 20 minutes in the preheated oven, or until firm and golden. In another bowl, whisk together the remaining 1 1/2 cups sugar and 1/4 cup flour. Whisk in the eggs and lemon juice. Pour over the baked crust.
Bake for an additional 20 minutes in the preheated oven. The bars will firm up as they cool. For a festive tray, make another pan using limes instead of lemons and adding a drop of green food coloring to give a very pale green. After both pans have cooled, cut into uniform 2 inch squares and arrange in a checker board fashion.
Larger than most, with a rough exterior, these two lemons were hanging very high in the tree. The one on the outside was taking in the warmth of the afternoon sun.

Sono tante le straordinarie proprietà medicamentose del limone, alcune delle quali erano conosciute fin dai tempi più antichi, proprietà che sono state riscoperte alla luce delle moderne vedute scientifiche. Il componente più noto di questo frutto è sicuramente la vitamina C. Utilissimo è il limone per disinfettare, insaporire e rendere più digeribili insalate, uova, carne e pesce.
l limone è un agrume con bassissimo apporto calorico, è molto ricco di olii essenziali, di acido citrico, acido malico, vitamina C, gruppo B e A, tra i sali minerali il più presente è il potassio. La scorza contiene ghiandole oleifere.Un’importante proprietà del limone è quella di essere in grado di riequilibrare il metabolismo, bere ogni tanto succo di limone a digiuno è un buon metodo per depurare l’organismo, questo agrume ha anche proprietà alcalinizzanti e depurative, il suo succo è un ottimo presidio terapeutico contro le malattie da raffreddamento
Infine, questo frutto è anche un buon tarmicida naturale: basta appendere negli armadi qualche sacchetto di tela contenente scorze secche di limone per tenere lontani questi insetti.
•E perché no…una semplice torta al limone fa sempre piacere…
•350 Gr. di farina
•200 GR. di zucchero
•90 Gr di burro
•1 pizzico di sale
•3 uova
•100 ml di panna fresca
•il succo e la buccia di 1 limone
•1 vasetto di yogurt bianco intero da 150 gr
•1 bustina di lievito
Amalgamare le uova intere con lo zucchero e il sale, aggiungere il burro fuso (quasi freddo), il succo e la buccia grattugiata del limone, la panna e lo yogurt. Incorporare la farina setacciata con il lievito. Imburrare e infarinare uno stampo e infornare a 180 gradi in forno preriscaldato per circa 50 minuti.
E…..buon limone!!! :-)
lemon cake with lemon zest cream cheese frosting. just the perfect hint of lemon flavor. the cakes were so good i ate 3 right out of the oven, before frosting. after a day the frosting on the cupcakes set up a little firmer, which is how i like it.
