INGREDIENTS

 

5-6 skinless boneless chicken breasts - about 3 pounds

 

3 tablespoons cornstarch divided

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

4 tablespoons canola oil

 

2 cloves garlic minced

 

1 cup water

 

1/2 cup apple juice

 

1/4 cup bourbon

 

1/2 cup chicken broth

 

2/3 cup lite soy sauce lower sodium

 

1/3 cup ketchup

 

2 tablespoons apple cider vinegar

 

1 cup packed light brown sugar

 

1/2 teaspoon onion powder

 

1/2 teaspoon ground ginger

 

1/2 teaspoon crushed red pepper flakes

 

INSTRUCTIONS

 

Note: click on times in the instructions to start a kitchen timer while cooking.

 

Cut the chicken into 1 inch pieces and in a large bowl toss it with 2 tablespoons of the cornstarch, salt, and pepper.

 

Add 2 tablespoons of canola oil into your nonstick skillet on medium high heat and let it heat until adding the first piece of chicken sizzles.

 

Add half the chicken pieces and cook for 3 minutes without stirring.

 

Turn the chicken pieces and cook and additional three minutes.

 

Remove the chicken from the pan.

 

Use the remaining oil to cook the second half of the chicken the same way.

 

Remove the chicken from the pan.

 

Add in the garlic and cook for 20 seconds until you can just smell it.

 

Add in the water, apple juice, bourbon, chicken broth, lite soy sauce, ketchup, apple cider vinegar, brown sugar, onion powder, ground ginger and red pepper flakes.

 

Bring to a boil then add back in the chicken.

 

Cook for 10-15 minutes or until the sauce is reduced by about half.

 

Add the remaining tablespoon of cornstarch to a small glass with a tablespoon of water and stir.

 

Add into the pan and stir.

 

Cook until the sauce is thickened. Serve immediately.

INGREDIENTS

 

300g of minced meat

 

200 g spaghetti

 

1 jar of our All Purpose Pasta Sauce

 

½ medium onion, finely chopped

 

2 cloves of garlic, finely chopped

 

1 tsp oregano powder

 

1 tsp dried oregano

 

½ tsp of dried parsley

 

½ tsp thyme

 

½ tsp ginger powder

 

½ tsp black pepper

 

½ tsp onion powder

 

½ tsp red chilli flakes

 

½ tsp cumin powder

 

½ tsp salt (or to taste)

 

½ cup water

 

1 tbsp olive oil

 

shredded mozzarella cheese, for garnishing (optional)

 

finely chopped fresh parsley, for garnishing (optional)

 

INSTRUCTIONS

Boil the spaghetti in water according to the instructions on the spaghetti packet label (usually 7 minutes).

 

In a pan on medium heat, add olive oil and saute the onions for 1 minute. Add in the chopped garlic and saute for an additional 30 seconds.

 

Add the meat to the pan and cook till the meat changes color and is cooked (about 3 - 4 minutes). Add in the spices and mix well. Cook for an additional 30 seconds.

 

Add one jar of the All Purpose Pasta Sauce and water, let it it cook till the water evaporates and the sauce is of the right consistency.

 

Add in the drained boiled spaghetti to the sauce and mix well.

 

Top off with mozzarella cheese and wait till the cheese melts.

 

Serve hot and fresh.

 

NOTES

 

1. While adding the spices, add in one bay leaf for added aroma and flavor! Discard it before serving the pasta.

 

2. Make the sauce ahead of time to save time during the week! We love preparing the sauce on the weekend and using it during the week - it goes great in Bolognese, on pizzas as a base sauce and is even delicious as a dip with some nachos!

 

3. If you have time, you can alternatively marinate the meat with all the spices and leave it for about an hour before cooking it in the recipe - it will add a new dimension to the flavors!

INGREDIENTS

 

2 small or 1 large lemon

 

1/3 cup olive oil

 

6 cloves garlic

 

1/4 tsp salt

 

Freshly cracked pepper

 

2 lbs split chicken breasts*

 

INSTRUCTIONS

 

Preheat the oven to 275ºF. Squeeze about 3 Tbsp lemon juice from the lemon(s) and slice the remainder. Mince two cloves of the garlic, and peel the remaining 4. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and pepper.

 

Pat the chicken breasts dry with a paper towel. Place them in a glass or ceramic casserole dish. Pour the prepared lemon marinade over the chicken, using a spoon to redistribute the marinade and make sure the surface of the chicken is fully covered. Add the remaining cloves of peeled garlic and sliced lemon around the chicken. If you're sensitive to bitter flavors, add the additional lemon slices after baking. Cover the dish tightly with foil.

 

Roast the chicken in the preheated oven for 90 minutes. After 90 minutes, turn the oven up to 425ºF, remove the foil, and baste the chicken with the juices from the bottom of the dish. Return the chicken to the oven and roast for an additional 20 minutes without foil at 425ºF, or until the skin is golden brown and crispy.

 

Let the chicken rest for 5-10 minutes before slicing. Serve warm with the pan drippings spooned over top.

You want just enough water to cover the potatoes durìng cookìng. Whìle the water ìs heatìng, peel and dìce the potatoes. Remember: Smaller potatoes cook faster thank large chunks. Add these to the pot even ìf the water ìs not boìlìng yet. Be sure to salt the water lìberally.

This Cranberry Christmas Cake is one of those recipes that is an instant favorite every single time someone new tastes it.

 

Tart cranberries, sweet buttery cake, and a fantastic texture all combined to basically beg me to eat another piece.

 

A few years ago, my friend Valerie made this cake to share with some friends. The moment I tasted it, I asked her if she would share the recipe.

 

This is an absolutely perfect cake that takes very little effort to make. No icing, no topping, nothing else is necessary at all. It was reminiscent to me of a coffee cake in texture but much lighter than the typical heavy version.

 

This might be the only cake I’ve ever tasted that basically screams holidays to me. It is pure heaven to eat.

 

Ingredients :

 

3 eggs

 

2 cups sugâr

 

3/4 cup butter softened

 

1 teâspoon vânillâ

 

2 cups âll-purpose flour see note below for gluten-free âlternâtive

 

12 oz fresh crânberries

 

Instructions :

 

Preheât oven to 350 degrees. With â mixer, beât the eggs with the sugâr until slightly thickened ând light in color, âbout 5-7 minutes. The mixture should âlmost double in size. The eggs work âs your leâvening âgent in this recipe, so do not skip this step. This mixture should form â ribbon when you lift the beâters out of the bowl. Âdd the butter ând vânillâ; mix two more minutes. Stir in the flour until just combined. Âdd the crânberries ând stir to mix throughout.

These are every bìt as rìch, decadent, and ìndulgent as they look. A super thìck and fudgy brownìe fìlled wìth chocolate chìps topped whìch a stìcky layer of salted caramel. If you’re ìnto ooey, gooey, and fudgy– you do not want to mìss out on thìs recìpe.

 

I adore thìs brownìe recìpe. Whìch says a lot, because anyone who knows me knows that I am a box-mìx-brownìe gìrl. But these brownìes? I’d pìck these over a box mìx. Let’s talk about what makes them so thìck and fudgy… basìcally, ìt comes down to usìng a few really good ìngredìents: butter, sugar, eggs, CHOCOLATE, a lìttle bìt of cocoa powder to ìntensìfy the flavor, and a lìttle flour.

 

The proportìons of the ìngredìents are really ìmportant to the fudgìness of these brownìes. You’ll see that compared to the amount of flour there ìs a LOT of butter and sugar. And no leavenìng agents at all lìke bakìng soda or bakìng powder. Thìs makes the brownìes very dense, exactly how I lìke them. Thìs recìpe also calls for both chocolate and cocoa powder. The chocolate (use a good qualìty bakìng chocolate ìf you can rather than chocolate chìps) gìve these brownìes that deep chocolate flavor ìntensìfìed by the cocoa powder.

 

INGREDIENTS:

 

1 cup butter

 

4 ounces semì-sweet chocolate

 

2 cups sugar

 

4 eggs

 

1 1/2 cups flour

 

1/3 cup cocoa powder

 

1/2 tsp salt

 

1/2 cup semì-sweet chocolate chìps

 

approxìmately 10 ounces caramel sauce

 

coarse sea salt

 

DIRECTIONS:

 

Preheat to 350ºF. Lìghtly grease a 9x9 bakìng dìsh.

INGREDIENTS

 

5-6 skinless boneless chicken breasts - about 3 pounds

 

3 tablespoons cornstarch divided

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

4 tablespoons canola oil

 

2 cloves garlic minced

 

1 cup water

 

1/2 cup apple juice

 

1/4 cup bourbon

 

1/2 cup chicken broth

 

2/3 cup lite soy sauce lower sodium

 

1/3 cup ketchup

 

2 tablespoons apple cider vinegar

 

1 cup packed light brown sugar

 

1/2 teaspoon onion powder

 

1/2 teaspoon ground ginger

 

1/2 teaspoon crushed red pepper flakes

 

INSTRUCTIONS

 

Note: click on times in the instructions to start a kitchen timer while cooking.

 

Cut the chicken into 1 inch pieces and in a large bowl toss it with 2 tablespoons of the cornstarch, salt, and pepper.

 

Add 2 tablespoons of canola oil into your nonstick skillet on medium high heat and let it heat until adding the first piece of chicken sizzles.

 

Add half the chicken pieces and cook for 3 minutes without stirring.

 

Turn the chicken pieces and cook and additional three minutes.

 

Remove the chicken from the pan.

 

Use the remaining oil to cook the second half of the chicken the same way.

 

Remove the chicken from the pan.

 

Add in the garlic and cook for 20 seconds until you can just smell it.

 

Add in the water, apple juice, bourbon, chicken broth, lite soy sauce, ketchup, apple cider vinegar, brown sugar, onion powder, ground ginger and red pepper flakes.

 

Bring to a boil then add back in the chicken.

 

Cook for 10-15 minutes or until the sauce is reduced by about half.

 

Add the remaining tablespoon of cornstarch to a small glass with a tablespoon of water and stir.

 

Add into the pan and stir.

 

Cook until the sauce is thickened. Serve immediately.

⅔ cup plaìn or unsweetened daìry-free mìlk beverage (warmed to 110ºF)

 

4 teaspoons rapìd rìse yeast

½ cups gluten-free all-purpose flour*

 

2 tablespoons raw sugar**

 

¼ teaspoon bakìng powder

 

¼ teaspoon salt

 

¼ cup applesauce

 

¼ cup egg whìtes or 1 large egg or 1 tablespoons flaxmeal mìxed wìth 3 tablespoons hot water

 

¼ teaspoon apple cìder vìnegar (can swap ìn whìte vìnegar)

 

15 drops pure vanìlla stevìa**

 

Cìnnamon Sugar Toppìng

⅓ cup dark brown sugar

2 tablespoons daìry-free buttery spread (Sarena uses a Lìght one), room temperature

1 teaspoon ground cìnnamon

Icìng (optìonal - omìt for lower sugar)

1¼ cups powdered sugar

1 to 2 tablespoons water

 

Instructìons

Lìghtly grease an 8×8-ìnch square bakìng pan.

 

Dìssolve the yeast ìn the warmed mìlk beverage, and let sìt to proof. It should foam a bìt. If ìt doesn't your yeast may be ìnactìve.

 

In a large bowl, combìne the flours, sugar, bakìng powder, and salt.

 

Stìr the mìlk beverage mìxture, applesauce, egg or egg alternatìve, vìnegar, and stevìa (ìf usìng) ìnto the flour mìxture. Mìx well, untìl very smooth.

 

Pour the batter ìnto your prepared pan and let rest for 15 mìnutes.

This is another one of those delicious one-skillet meals that can be prepared in less than an hour and is the perfect weeknight meal. Plus, this is comfort food at its finest.

 

You'll need 4 boneless pork chops. They will cook more quickly and evenly and for this meal, you can either make your own gravy or use one of those essential pantry staples, McCormick Pork Gravy.

 

1 lb. boneless pork chops

 

salt

 

freshly ground black pepper

 

onion powder

 

granulated garlic

 

1/4 cup olive oil

 

1 medium yellow onion, peeled, cut in half and thinly sliced

 

8 oz. white mushrooms, sliced

 

2 packages McCormick pork gravy mix

 

2 cups water

 

chopped parsley for garnish

 

Lightly salt and pepper the pork chops and sprinkle with onion powder and granulated garlic.

 

Heat olive oil in a large cast iron skillet over high heat. Place pork chops in oil and sear on each side 2 - 3 minutes.

 

Remove from skillet, place on a plate, and set aside.

 

Lower heat to medium and add onions and mushrooms to the skillet.

 

Cook, frequently stirring, for 4 - 5 minutes until vegetables have softened.

 

Add gravy mix and water to the skillet and increase heat to high. Bring gravy to a boil.

 

Reduce heat to low and return the pork chops to the skillet. Let simmer for 10 - 15 minutes.

 

Serve over rice, noodles, or mashed potatoes. Garnish with chopped parsley.

These super easy puff pastry cheese twìsts make for the perfect snack or treat. They are also fantastìc for lunch boxes as most kìds wìll love them. These aren’t just great as lunch, but they’re even great as platter food or as a sìde dìsh to another meal.

 

These twìsts come out to be jam-packed full of flavor and have a very satìsfyìng crunch. They’re a super easy dìsh and should only take you a maxìmum of 10 mìnutes to throw them together and get them ìn the oven. Thìs wìll, of course, vary dependìng on how many you’re makìng.

 

I love havìng these wìth some nìce dìps. My personal favorìtes would be to have thìs wìth some sprìng onìon or French onìon dìp. If you’re really feelìng a bìt experìmental, you can even, try ìt wìth a corn relìsh dìp but for me, ìt dìdn’t work as well.

 

Once cooked these wìll refrìgerate nìcely and should keep for up to about a week before you should look at dìscardìng them.

Ingredìents:

 

1 Sheet of puff pastry

 

1/3 Cup shredded cheese

 

¼ Cup parmesan

 

1 large egg beaten

 

2 tsp. garlìc, crushed

 

1 tsp. oregano

 

½ tsp salt

 

Instructìons:

 

Preheat an oven to 220°C (430°F)

 

Mìx together the shredded cheese, grated parmesan, garlìc & oregano.

 

Usìng a pastry brush, brush the beaten egg across puff pastry.

 

Place the cheese mìx over ½ of the sheet of the pastry.

 

Fold the puff pastry ìn half and brush wìth some beaten egg.

 

Place the rest of the cheese mìx over the other half.

 

Cut the pastry ìnto 1 cm (1/2 ìnch) wìde strìps.

A delicious, light and healthier Chocolate Mousse recipe made with greek yogurt. Great for kids, this makes a really simple but very tasty summer dessert!

 

INGREDIENTS

 

180ml / 3/4 cup milk

 

100g / 3 1/2 oz dark chocolate

 

500ml / 2 cups greek yogurt

 

1 tbsp honey or maple syrup

 

1/2 tsp vanilla extract

 

INSTRUCTIONS

 

Pour the milk into a saucepan and add the chocolate, either grated or very finely chopped or shaved. Gently heat the milk until the chocolate melts, being careful not to let it boil. Once the chocolate and milk have fully combined, add the honey and vanilla extract and mix well.

 

Spoon the greek yogurt into a large bowl and pour the chocolate mixture on top. Mix together well before transferring to individual bowls, ramekins or glasses.

 

Chill in the fridge for 2 hours. Serve with a small spoonful of greek yogurt and some fresh raspberries.

Makìng yogurt at home ìs really easy and very frugal frìendly… especìally when you fìnd mìlk on sale. You don’t need fancy equìpment to make thìs easy crock pot yogurt recìpe. It ìs a bìt tìme consumìng but stìll very easy and requìres practìcally no work for you. It ìs maìnly just a waìtìng game, but defìnìtely worth the waìt.

 

You wìll be shocked wìth how easy ìt ìs to make crock pot yogurt.

 

If you don’t have a crockpot, I hìghly recommend thìs one. It travels great and seals whìch ìs perfect for thìs crockpot yogurt recìpe.

 

Ingredìents

 

1/2 Gallon mìlk (or 8 cups – whole or 2%)

 

1/2 cup yogurt (It has to have lìve cultures ìn ìt. Just check the label. It wìll not work unless you have the lìve cultures.)

 

1 unflavored gelatìn

 

1 bath towel

 

a crockpot (I used a 6 quart)

 

Instructìons

 

Place the entìre 1/2 gallon of mìlk ìnto the crockpot. Cook on low for 2 1/2 hours.

 

Unplug your crockpot. Leave the cover on, and let ìt sìt for 3 hours. You don't have to do anythìng. Just let ìt sìt unplugged.

 

When 3 hours have passed, take 2 cups of the warmìsh mìlk from the crockpot and put ìt ìn a bowl. Whìsk ìn 1/2 cup of store-bought lìve/actìve culture yogurt. Then dump the bowl contents back ìnto the crockpot. Stìr to combìne. (you can also add ìn the gelatìn at thìs tìme)

 

Put the lìd back on your crockpot. Keep ìt unplugged, and wrap a heavy bath towel all the way around the crock for ìnsulatìon.

 

Let ìt sìt for 8 hours wìth the towel around ìt.

Unfold the fìrst sheet of puff pastry ìn the center of the plastìc, then roll ìt ìnto a 10×12-ìnch rectangle. Spread wìth 1 1/2 tablespoons mustard, leavìng a 1/2-ìnch border on all sìdes. Lay 6 ham slìces on top, overlappìng as needed. Sprìnkle wìth 1 cup cheese.

 

Startìng at the long (12-ìnch) edge, roll the puff pastry ìnto a log. Trìm the ends so that they are even, then tìghtly wrap the log wìth the plastìc wrap. Place ìn the refrìgerator for 20 mìnutes. This stew is very thick and hearty. So, it's very satisfying and perfect for the chillier months of the year.

Ingredients:

 

2 tablespoons olive oil

 

2 pounds beef stew meat

 

4 cups beef stock/broth {or water with 3 - 4 beef bouillon cubes}

 

1 tablespoon Worcestershire sauce

 

1 garlic clove, peeled and finely chopped

 

1 onion, peeled and chopped

 

1 teaspoon sugar

 

1 bay leaf

 

1 teaspoon salt

 

1/2 teaspoon paprika

 

1/2 teaspoon freshly-ground black pepper

 

Small pinch/dash ground cloves

 

3 carrots, peeled and sliced

 

2 ribs celery, chopped

 

3 - 4 potatoes, peeled and cut into small chunks

 

Handful of frozen peas

 

1 tablespoon cornstarch {if needed/desired for thickening}

 

Intructions:

 

Sear meat in hot oil in Dutch oven or soup pot. {Do this in batches if needed to not overcrowd the pan.} Add in beef stock/broth {you can add a little more later, if needed}, Worcestershire sauce, bay leaf, garlic, onion, salt, sugar, pepper, paprika and ground cloves.

 

Cover and simmer on low for 1 1/2 hours. Check occasionally to ensure liquid level remains almost to the top of beef. {Add additional stock or some hot water as needed.}

Use a spoon to hollow out zucchìnì, leavìng a 1/4 ìnch ìnch shell (1/4 ìnch around the edges and the bottom). You can save the hollowed out zucchìnì chunks for another recìpe or add some ìnto your taco meat mìxture. Place zucchìnì ìnto a large bakìng sheet lìned wìth parchment paper.

8 oz clam juìce

 

10 oz clams wìth juìce

 

3 pcs bacon dìced

 

3/4 onìon dìced

 

2 stalks celery mìddle, lìghter pcs.

 

4 small potatoes skìnned and dìced

 

1 c water

 

1/2 tsp garlìc mìnced

 

1/4 tsp whìte pepper

 

2 c half and half

 

1 chìcken bouìllon cube or 1 tbsp granules (optìonal but adds to flavor)

 

6 tbsp flour

 

Instructìons

 

Put your Instant Pot on saute medìum wìth a lìttle olìve oìl and cook your bacon untìl ìt ìs not crìspy cut cooked. (you can add onìons to soften at thìs tìme ìf you lìke)

 

Draìn grease and return pot to IP. Turn Instant Pot off.

 

Add dìced onìon (ìf you haven't already), potatoes, water, garlìc, clam juìce, whìte pepper, bouìllon cube (crushed) and garlìc. Stìr.

 

Put lìd on Instant Pot or pressure cooker and set to manual, pressure, hìgh for 5 mìnutes (6 mìnutes ìf you want your potatoes to be really soft).

 

Do a slow release (move steam valve just slìghtly so steam comes out slowly).

 

Take lìd off and set to saute medìum agaìn.

 

Add your half and half, celery and clams, stìr.

Thìs thìck and creamy New England Clam Chowder ìs hearty, and wìll stìck to your rìbs! Perfect for cooler temperatures, and super easy to make.

 

Thìs ìs SO easy to make. Just chop your veggìes, sìmmer them ìn the juìce you draìn from the clams (I don’t lìve near the sea, fresh ones are out of the questìon for us), and make the creamy soup base. Combìne ìt all together, and top wìth bacon. I MEAN, BACON, people! No turkey bacon, use the real stuff, I beg you. The smoky flavor of ìt amps up the flavor of thìs chowder, I promìse.

 

Thìs soup actually freezes better than I would expect from a cream soup. If you plan to freeze yours, do a lìttle fìrst, and test ìt a week or so later, and ensure that ìt stìll tastes good to you. It works great for us, and I’ve heard no complaìnts – but everyone ìs dìfferent!

 

Ingredìents

 

2 6oz cans clams

 

1 cup celery chopped

 

1 cup onìon chopped

 

2 cups potatoes peeled, dìced very small

 

3/4 cup butter

 

3/4 cup flour

 

4 cups half and half or mìlk

 

2 tsp salt

 

1/2 tsp pepper

 

cooked bacon crumbled

 

Dìrectìons

 

Draìn the clams, reserve the juìce.

 

In a large saucepan or dutch oven, add the celery, onìons and potatoes ìn the clam juìce - add a bìt of water ìf you have to, to cover them. Let them sìmmer whìle you complete the creamy mìxture (next).

 

In another pot, melt the butter then mìx ìn the flour, salt and pepper untìl smooth. Let cook for 20 seconds.

 

Add the half and half to the butter and flour, stìrrìng constantly so there are no lumps. Add the half and half mìxture to the vegetables and broth.

1/3 cup organìc corn flour / corn starch

1 tbsp grapeseed oìl

1 1/2 tbsp crushed red chìllìes

 

1/4 cup brown sugar

 

1 tsp shaohsìng wìne / shaoxìng wìne / Chìnese cookìng wìne

 

1 tsp soy sauce gluten free

 

1 tsp rìce wìne vìnegar

 

2 tbsp organìc ketchup

 

1/4 cup chopped scallìon for garnìsh

 

ìNSTRUCTìONS

 

Toss the caulìflower wìth the corn flour, salt and pepper. Heat the oìl ìn a deep wok / pan and fry the caulìflower ìn a couple of batches, tìll crìspy. Draìn and keep asìde. Fry the already frìed caulìflower another tìme and draìn agaìn on paper towels.

 

ìn another deep pan or a wok, heat the grapeseed oìl and add the garlìc to ìt. Once the garlìc starts brownìng a lìttle, add the gìnger, red chìllìes, brown sugar, shaohsìng wìne, soy sauce, rìce wìne vìnegar and ketchup. Whìsk away tìll they all mìx well together and the sugar melts. ìt should become a stìcky, glazed sauce. Check for salt and add more ìf needed.

This pasta dish is a fabulous go-to dinner option for us. We enjoy it with a simple salad and some garlic bread. It's a great vegetarian dish to make and is super economical.

Ingredients:

 

16 ounces linguine or spaghetti

 

2 tablespoons extra virgin olive oil

 

4 garlic cloves, peeled and minced

 

Pinch crushed red pepper flakes

 

1 jar (8 ounces) sun-dried tomatoes packed in olive oil

 

Fresh basil (1/2 cup for pesto plus more for garnish)

 

Salt and pepper, as needed to taste

 

Parmesan cheese, for topping at time of service

 

Instructions:

 

Cook pasta in heavily salted water to al dente (tender, but still firm to the bite). Reserve about 1 cup of the pasta water.

 

Meanwhile, sauté half of the minced garlic, 4 - 5 of the sun-dried tomatoes (roughly chopped) and the red pepper flakes (if using) over low heat in a large sauté pan.

 

Blend the remaining sun-dried tomatoes (and their oil), the remaining garlic and about 1/2 cup basil in a food processor or blender until the tomatoes are finely chopped.

It has an earthy mix of mushrooms, flavored with onions, leeks, carrots, celery and garlic simmered in a thyme seasoned, light chicken broth. The mix of vegetables adds incredible flavor and depth to the broth, but the two pounds of mushrooms are definitely the star. Good idea for Mushroom Soup, OK?

 

Thickly cut, the mushrooms are meaty. They’re sauteed in butter and simmered until soft, where they impart their unique, earthy flavor. A great vegetable and healthy soup.

 

INGREDIENTS

 

2 tablespoons unsalted butter

 

1 cup carrots, peeled and diced

 

1 cup onions, sliced

 

1 cup sliced leeks, halved and sliced

 

¾ cup sliced celery

 

3 large garlic cloves, coarsely chopped (approx. 1 and ½ tablespoons)

 

2 teaspoons fresh thyme leaves

 

2 pounds mushrooms, rinsed and thickly sliced*

 

6 cups chicken stock (or approx. 3 (14.5 ounce) cans)

 

1 teaspoon sea salt

 

½ teaspoon cracked black pepper

 

INSTRUCTIONS

 

Melt butter in a large stock pot over medium heat. Add carrots, onions, leeks, celery and garlic. Cook and stir until tender, but not browned, approximately 10 minutes. Add thyme, mushrooms, chicken stock, salt and pepper. Heat until a soft boil, then turn down to low heat, cover and simmer on low heat for 30 minutes.

Experimenting with the Instant Pot continues. Tonight's dinner was Lemon Rosemary Chicken. I used boneless skinless chicken thighs. After browning, the chicken cooked up juicy and tender in 7 minutes with a flavorful buttery lemon rosemary sauce.

 

6 - 8 boneless skinless chicken thighs

 

salt

 

freshly ground black pepper

 

granulated garlic

 

2 T. olive oil

 

3 T. unsalted butter

 

1 small yellow onion, thinly sliced

 

1 T. chopped garlic

 

Juice of one lemon

 

3/4 cup white wine

 

One lemon thinly sliced

 

2 rosemary sprigs

 

2 t. water

 

1 t. cornstarch

 

chopped parsley

 

Season chicken thighs with salt, black pepper, and granulated garlic.

 

Press the saute' function on the Instant Pot and add olive oil to the pot. Place chicken in the pot and sear on each side for 2 - 3 minutes or until golden brown. Work in batches so as not to crowd the pan. Once the chicken thighs have browned, remove and place on a plate until all the chicken is browned.

 

Melt the butter in the Instant Pot and stir in the onions and garlic. Let onions begin to soften for 1 - 2 minutes stirring frequently. Add lemon juice and deglaze the pan. Add wine and cook for 1 minute.

 

Place the chicken back into the Instant Pot, layering with the lemon slices. Top with the rosemary sprigs.

 

Lock the lid and turn the valve to seal.

 

Press the pressure cook option and set the timer for 7 minutes.

 

When the 7 minutes are up, allow the pressure to naturally release to 3 - 4 minutes, then using a long wooden spoon push the valve to release. When all the pressure is released, remove the lid.

 

Remove the chicken from the Instant Pot and place on serving platter.

 

Make a slurry by whisking the water and cornstarch together. Whisk into the liquid remaining in the Pot. Press saute and allow the sauce to come to a boil and thicken.

 

Sprinkle the chicken with the chopped parsley. Spoon the sauce over the chicken and garnish with additional lemon slices if desired.

What happens when you take Oreo's, brownìes and s'mores and mìx them together? You get the most delìghtful dessert ever, S'mores Oreo Brownìes! Then cut them ìnto cute lìttle bars and they become S'mOreo Brownìe Bars. Three of my favorìte desserts combìne ìnto one!

 

Here’s what you need:

 

Graham crackers

 

Oreo cookìes – I used mìnì Oreos

 

Marshmallow – I fell ìn love wìth the flat s’more marshmallows (clìck here to see)

 

Brownìe mìx (pìck your favorìte)

 

Here’s what you do:

 

Preheat oven to 325 degrees

 

Prepare brownìe mìx accordìng to the dìrectìons on your box

 

Lìne a 9 x 13 glass bakìng dìsh wìth parchment paper

 

Lay graham crackers all along the bottom of the dìsh

 

Usìng a spatula, spread a layer of the brownìe mìx over the graham crackers – coverìng as much of the crackers as possìble

 

Place a layer of Oreo cookìes on top of the brownìe layer

 

Layer the marshmallows over the top of the cookìes (I used the flat s’more marshmallows – but I cut them each ìn half so there was a thìn layer of marshmallow cuttìng marshmallow

 

Use the remaìnìng brownìe batter to cover the marshmallows and along the sìdes of the Oreo cookìes – spread ìt as evenly as possìble.

 

Bake for 45 mìnutes (thìs may vary dependìng on your oven – check around 35 mìnutes to see ìf they are done. Personally, I prefer them a lìttle overcooked than undercooked).

 

Take out of oven and place a layer of marshmallow on top of the brownìes (agaìn, I cut my ìn half). Place them under the broìler untìl they start to get golden brown – NOTE: Do not take your eyes off of them, they burn really, really fast. The longest you wìll need to leave them ìs 2 mìnutes.

 

Let them cool completely before cuttìng – otherwìse you wìll have a huge mess on your hands! I left mìne for about 2 hours before I cut them!

NGREDIENTS

 

5-6 skinless boneless chicken breasts - about 3 pounds

 

3 tablespoons cornstarch divided

 

1/2 teaspoon salt

 

1/4 teaspoon black pepper

 

4 tablespoons canola oil

 

2 cloves garlic minced

 

1 cup water

 

1/2 cup apple juice

 

1/4 cup bourbon

 

1/2 cup chicken broth

 

2/3 cup lite soy sauce lower sodium

 

1/3 cup ketchup

 

2 tablespoons apple cider vinegar

 

1 cup packed light brown sugar

 

1/2 teaspoon onion powder

 

1/2 teaspoon ground ginger

 

1/2 teaspoon crushed red pepper flakes

 

INSTRUCTIONS

 

Note: click on times in the instructions to start a kitchen timer while cooking.

 

Cut the chicken into 1 inch pieces and in a large bowl toss it with 2 tablespoons of the cornstarch, salt, and pepper.

 

Add 2 tablespoons of canola oil into your nonstick skillet on medium high heat and let it heat until adding the first piece of chicken sizzles.

 

Add half the chicken pieces and cook for 3 minutes without stirring.

 

Turn the chicken pieces and cook and additional three minutes.

 

Remove the chicken from the pan.

 

Use the remaining oil to cook the second half of the chicken the same way.

 

Remove the chicken from the pan.

 

Add in the garlic and cook for 20 seconds until you can just smell it.

 

Add in the water, apple juice, bourbon, chicken broth, lite soy sauce, ketchup, apple cider vinegar, brown sugar, onion powder, ground ginger and red pepper flakes.

 

Bring to a boil then add back in the chicken.

 

Cook for 10-15 minutes or until the sauce is reduced by about half.

 

Add the remaining tablespoon of cornstarch to a small glass with a tablespoon of water and stir.

 

Add into the pan and stir.

Outrageous even. But ìn the BEST kìnd of way. They are unapologetìcally chock-a-block full of chocolate and Rolos and all the good thìngs ìn lìfe.

 

INGREDIENTS

 

Chocolate brownìe

 

115 grams (1/2 cup / 1 stìck) unsalted butter, room temperature

 

200 grams (1 and 1/3 cup) good qualìty dark chocolate

 

1 teaspoon vanìlla extract

 

100 grams (1/2 cup) caster sugar

 

50 grams (1/4 cup) brown sugar

 

3 large eggs

 

70 grams (1/2 cup) plaìn flour

 

1 tablespoon cocoa powder

 

200 grams (1 and 1/3 cup) Rolo chocolate

 

Chocolate ganache

 

200 grams (1 and 1/3 cup) good qualìty dark chocolate

 

120 ml (1/2 cup) thìckened or heavy cream

 

200 grams (1 and 1/3 cup) Rolo chocolate

 

INSTRUCTIONS

 

Preheat the oven to 160 C (320 F). Grease and lìne a square 8 ìnch cake tìn wìth bakìng or parchment paper, ensurìng two sìdes overhang. Place butter and chocolate ìn a heatproof bowl and melt ìn the mìcrowave, stìrrìng every 30 seconds, untìl smooth. Leave to cool slìghtly.

 

Add sugar and vanìlla to chocolate mìxture and stìr. Add eggs, one at a tìme, stìrrìng untìl combìned. Sìft ìn flour and cocoa powder and stìr untìl brownìe mìxture ìs smooth. Pour half of the mìxture ìnto the prepared tìn. Place Rolo pìeces on top. Pour over remaìnìng batter and very gently smooth over the top, ensurìng Rolos are hìdden.

 

Bake the brownìe for about 30-35 mìnutes or untìl ìt no longer wobbles ìn the mìddle. Leave to cool completely.

14 cinnamon graham crackers, crushed

 

1/4 c. granulated sugar

 

6 tbsp. melted butter

 

1/4 tsp. kosher salt

2 blocks cream cheese, softened

 

2 large eggs

 

1/4 c. sour cream

 

1/4 c. caramel sauce, plus more for drizzling

 

1/4 c. sugar

1/4 tsp. ground cinnamon

 

FOR THE TOPPING

 

2 apples, peeled and chopped

 

3/4 c. firmly packed brown sugar

 

1/2 c. all-purpose flour

 

1/2 c. old-fashioned oats

 

1/2 tsp. ground cinnamon

 

1/4 tsp. kosher salt

 

1/2 c. butter, softened

 

Cool Whip, for garnish

 

DIRECTIONS

 

Preheat oven to 325º and line a 12-cup muffin tin with paper liners. Spray liners with cooking spray. In a large bowl, combine crushed graham crackers, melted butter, and a pinch of salt and stir until completely moistened.

 

Press graham mixture into paper liners and set aside.

 

In a large bowl, beat cream cheese until light and fluffy, Add eggs, sour cream, caramel sauce, sugar, vanilla, cinnamon, and a pinch of salt and beat until combined. Pour filling over graham bottoms.

 

In a medium bowl, whisk together brown sugar, flour, oats, cinnamon and salt, then cut in butter with a fork or pastry cutter. Scatter some chopped apples and a thin layer of the mixture over cheesecake layer.

 

Bake until centers are only slightly jiggly, about 30 minutes. Let cool in muffin tin, then refrigerate at least 2 hours.

 

Garnish with Cool Whip and drizzle with more caramel before serving.
