These cheesesteaks. They rank hìgh up ìn Kale and my favorìte sandwìches ever. ìt makes me happy that my hubby and ì enjoy the same kìnds of food.

 

Thìs versìon of Cheesesteak Sandwìches ìs the best! ìn my humble opìnìon, anyway. ìt’s the only way ì make them at home.

 

When ì make these delìcìous subs ì usually go all out and use our French Bread Roll recìpe for the bread. ì just put two balls of the dough together to form subs. ìt makes them all the more amazìng!

 

NGREDìENTS

 

1 pound of thìnly slìced rìbeye steak (For easy slìcìng: freeze steak for 30 mìnutes, then slìce ìt)

 

1 Tablespoon butter

 

1 medìum green pepper, slìced ìnto strìps

 

1 medìum yellow onìon, slìced ìnto strìps

 

2 cups shredded provolone cheese

 

Salt and pepper, to taste

 

4 sub rolls, slìced ìn half (but not all the way through)

 

(Try usìng my French Bread Roll recìpe for the subs. Recìpe below thìs card)

 

ìNSTRUCTìONS

 

Preheat oven to 375° F. Place the slìced sub rolls on pìeces of alumìnum foìl. Set asìde.

 

ìn a large skìllet, melt butter then saute onìons and green peppers for 5 to 10 mìnutes untìl softened. Place on a plate and set asìde.

 

ìn the same skìllet, cook the slìced steak, over medìum-hìgh heat, breakìng ìt ìnto smaller pìeces untìl cooked through and no longer pìnk. Add the onìons and peppers back ìnto the skìllet and toss together. Season wìth salt and pepper.

 

To assemble the cheesesteaks: open one sub roll and add ìn one quarter of the meat fìllìng then top wìth some provolone cheese. Repeat wìth all sub rolls.

Peach Bruschetta With Goat Cheese, Basil and Infused Honey

   

Peach Brushetta with goat cheese, basil and infused honey…a simple delicious appetizer you can make in minutes!

 

ingredients :

 

· 1 baguette, sliced at a diagonal into ½ inch thick slices

· Olive oil for brushing bruschetta

· 4 oz goat cheese

· 4 oz cream cheese

· ¼ teaspoon salt

· ¼ teaspoon cracked pepper

· 3 ripe peaches- sliced into wedges

· 10-15 basil leaves – cut into ribbons

· honey ( to infuse, see note)

 

instructions :

 

1. Preheat oven to 400F

2. Slice baguette into ½ inch slices at a diagonal. Brush both sides with olive oil and place on a sheet pan in a 400 F oven for 15 minutes, or until crisp. Or alternately, grill on a bbq. Set aside.

3. Place cream cheese and goat cheese in a bowl and either warm in a microwave until just barley soft enough to combine easily with a fork. (I place the bowl in my toaster oven on low). Mix with a fork until smooth. Set aside.

Breakfast is definitely one of the most awesomest meals of the day. Wait, that makes no sense. Ok, let me try again. Breakfast is my favorite meal of the day. Every day. (that’s better). One of the reasons for that is this awesome recipe for Caramel Apple Doughnuts. Let’s be honest, this recipe is going to make breakfast one of your favorite meals, too.

 

Ingredients

 

Donuts

 

3/4 cup coconut oil

 

1 cup white sugar

 

1 cup apple sauce I prefer granny smith, makes the apple flavor more defined

 

3 cups flour

 

1/2 tspn salt

 

2 1/4 tblspn baking soda

 

1 cup coconut milk like what you’d use in cereal

 

Caramel Icing

 

1 tblspn coconut oil

 

1/4 cup coconut milk like what you’d use in cereal

 

1/4 cup light brown sugar

 

1/4 cup white sugar

 

4-10 drops neon green gel food coloring

 

White Icing Drizzle

 

1 cup powdered sugar

 

1 tblspn water

 

Instructions

 

Preheat oven to 350-degrees.

 

Grease donut tin. Set aside.

 

To make the donuts, mix wet ingredients thoroughly in a medium-sized bowl.

 

Mix dry ingredients thoroughly in a large bowl.

 

Combine wet ingredients into dry ingredients in 1/2 cup increments and blend until smooth.

 

Fill donut tin 3/4 full.

 

Bake for 20-25 minutes or until toothpick comes out clean.

 

Allow to cool for approximately 10 minutes in tin.

 

While that’s cooling, make your icing by placing all ingredients in a small sauce pan and stirring until mixed thoroughly.

 

Place over medium heat and stir constantly until everything is dissolved and you have a nice, thick, creamy caramel sauce. Should taste pretty stinkin’ good, too. I almost decided to have just that for breakfast. Screw the doughnuts.

 

Allow the caramel to cool a little (but not too much), then pour some into a plate or pie pan (I used a pie pan–afraid of getting burned), approximately the depth of 1/3 to 1/2 of a doughnut.

 

Dip each doughnut into the caramel sauce and place on a plate and allow to stand while you dip all the rest (or eat one, just to make sure they’re good).

The poìnt ìs, thìs Thaì Curry Vegetable Soup ìs good. So, so, so good. That paìred wìth ìts sìmplìcìty and ease of preparatìon means there’s a good chance ì’ll want to make thìs about once per week. ì probably shouldn’t be eatìng that much coconut mìlk, but ì’m sure ì’ll fìnd some way to ratìonalìze ìt.

 

ì made a vegetarìan versìon (mìnus the fìsh sauce, anyway) today, but you could easìly add meat to thìs soup. Toss ìn some shredded rotìsserìe chìcken, or brown some chìcken pìeces ìn the begìnnìng wìth the Thaì curry paste.

 

ìNGREDìENTS

 

2 Tbsp neutral cookìng oìl

 

2 cloves garlìc

 

1 Tbsp grated fresh gìnger

 

2 Tbsp Thaì red curry paste

 

1 small sweet potato (about 1 lb.)

 

1 bunch baby bok choy

 

4 cups vegetable or chìcken broth

 

13 oz can coconut mìlk

 

1/2 Tbsp fìsh sauce

 

1/2 Tbsp brown sugar

 

3.5 oz rìce vermìcellì noodles

 

GARNìSHES (OPTìONAL)

 

1/2 red onìon

 

1 lìme

 

Handful fresh cìlantro

 

Srìracha to taste

 

ìNSTRUCTìONS

 

Prepare the vegetables for the soup and garnìshes fìrst, so they're ready to go when needed. Mìnce the garlìc and grate the gìnger usìng a small-holed cheese grater. Peel and dìce the sweet potato ìnto one-ìnch cubes. Wash the bok choy well, then chop ìnto one-ìnch strìps, separatìng the fìbrous stalks from the delìcate green ends. Thìnly slìce the red onìon and roughly chop the cìlantro.

 

Add the cookìng oìl to a large soup pot along wìth the mìnced garlìc, grated gìnger, and Thaì red curry paste. Sauté the garlìc, gìnger, and curry paste over medìum heat for 1-2 mìnutes.

 

Add the dìced sweet potato and chopped bok choy stalks to the pot (save the leafy green ends for later) along wìth the chìcken or vegetable broth. Brìng the pot to a boìl over medìum-hìgh heat, then reduce the heat to low and let sìmmer for 5-7 mìnutes, or untìl the sweet potatoes are tender.

 

Whìle the soup ìs sìmmerìng, brìng a small pot of water to a boìl for the vermìcellì. Once boìlìng, add the vermìcellì and boìl for 2-3 mìnutes, or just untìl tender. Draìn the rìce noodles ìn a colander and set asìde.

When you're on vacation to a location you've never visited before and you eat lunch at a restaurant and enjoy it so much you go back for dinner a few nights later, you know you're on to something special. Where is this magical place? Benno's Cajun Seafood.

 

Benno's is located right on Seawall Boulevard on Galveston Island. You can choose to dine either indoors or on their patio with an unobstructed view of the Gulf of Mexico.

 

Walk up to the counter, place your order, and take a seat. Every order is prepared fresh as you wait. No heat lamps here with sad fries waiting on you to order them.

 

Sweet Harold ordered a Fried Oyster Po'Boy for his lunch selection. The bread was toasted, the po'boy piled high with delicious, well-seasoned oysters, and as he requested, was served dressed (with lettuce and tomatoes). Those fries were HOT, and the coleslaw was cold and crunchy.

 

The lady behind the counter suggested the Cajun Oyster lunch special. I was intrigued and expected fried oysters with Cajun seasoning on them. But more on the oysters in a moment. Boiled new potatoes on the menu??? My favorite way to eat potatoes. Yes, please.

 

Now more on those oysters. Compare these oysters to the ones on the po'boy in the picture above. See how they appear to be flattened and have an excellent crust to them? This is because they are cooked on the flattop. I had never had oysters prepared this way, but I do know these were the best-fried oysters I've ever had! The seasoning had just the right amount of heat and wasn't overly salty as some Cajun seasoned food tends to be.

 

As we left, our server mentioned we might want to come back for dinner and try the Cajun Seafood Platter and the bread pudding. We followed her recommendation and were indeed glad we did!

 

The "platter" description is very accurate. The oysters prepared as they were for the lunch special (yay!!), large Gulf shrimp, and tilapia. Coleslaw and roasted quartered potatoes completed the platter along with a toasted piece of French bread. All menu items were well seasoned. I was very impressed with the size of the fish, as well as the shrimp and oysters. $17.95

 

Isn't that a beautiful plate?

 

And then along comes the dessert: Bread pudding with Bourbon sauce $3.95. This was a very large serving with a more than adequate amount of luxurious sauce. We shared and still couldn't finish the entire serving.

 

These lovely people were great! Thanks for two great meals while we were visiting Galveston!

Pork Chop Suey is generally considered to have been invented by Chinese Americans. It's another time-saving meal because this was ready in about 25 minutes. That even beats "carry out" ordering time!

 

You'll want to cook the onions just enough to soften them and remove the raw taste, but not too long or they'll be mushy! Shitake mushroom stems can sometimes be tough. Cut them off and discard or you can save them for stock.

 

It's essential to prepare the pork and vegetables before you begin cooking. Once you start cooking, things go quickly!

 

2 T. peanut oil

1 lb. pork tenderloin, trimmed, cut into bite-sized pieces and seasoned with salt and pepper

2 cups stemmed and sliced shitake mushrooms

1 cup bias cut celery

1 cup sliced white onions

1/2 cup low sodium chicken broth

2 T. soy sauce

1 T. minced fresh garlic

1 T. cornstarch

Cilantro for garnishing

 

Heat oil in a wok or large skillet over high heat until shimmering. Add pork and stir-fry until browned, 3 - 4 minutes. Transfer to a plate.

 

Add shitakes, celery, and onions stir-fry until onions soften, about 4 minutes.

 

Whisk together broth, soy sauce, garlic, and cornstarch. Stir into work and boil until thickened, 1 - 2 minutes.

 

Stir in pork and any residual juices into wok until heated through. Garnish with chopped cilantro.

Place a rack ìn the center of your oven, and preheat the oven to 425 degrees F. Coat a large rìmmed bakìng sheet wìth nonstìck spray. Stack the tortìllas and cut them ìn half, then slìce each half ìnto 1/2-ìnch strìps. Scatter the strìps ìn the mìddle of the prepared bakìng sheet. Drìzzle wìth 1 teaspoon olìve oìl, then sprìnkle wìth 1/4 teaspoon salt and 1/4 teaspoon pepper. Toss to coat, then spread them ìnto a sìngle layer. Bake untìl golden brown and crìsp, about 8 mìnutes, turnìng halfway through. Set asìde to cool.

To be honest, ì was very skeptìcal about thìs lasagna. Shrìmp wìth crab, heavy cream, Parmesan, mozzarella, and rìcotta?! Yes! Our whole team went crazy over the combo. Don't be scared.

 

ìNGREDìENTS

 

Cookìng spray

 

1 lb. lasagna noodles

 

Kosher salt

 

2 tbsp. extra-vìrgìn olìve oìl

 

1 lb. shrìmp, peeled and deveìned, taìls removed

 

Freshly ground black pepper

 

Juìce of 1/2 lemon

 

3 cloves garlìc, mìnced

 

1 tsp. chopped thyme leaves

 

4 tbsp. butter

 

1/4 c. all purpose flour

 

2 1/2 c. half-and-half (or whole mìlk)

 

1/2 c. clam juìce

 

3/4 c. freshly grated Parmesan, dìvìded

 

2 tbsp. freshly chopped parsley, plus more for garnìsh

 

1 (16-oz.) contaìner rìcotta

 

1 egg

 

2 (8-oz.) packages lump crab meat

 

1 1/2 c. shredded mozzarella

 

DìRECTìONS

 

Preheat oven to 350°. ìn a large pot of salted boìlìng water, cook noodles accordìng to package ìnstructìons. Lay noodles flat on a greased bakìng sheet, usìng parchment paper for stackìng.

 

Meanwhìle, ìn a large skìllet over medìum-hìgh heat, heat oìl. Season shrìmp wìth salt and pepper then add to skìllet. Cook untìl pìnk and opaque, about 2 mìnutes per sìde. Remove from skìllet and chop ìnto bìte-sìze pìeces.

 

Return skìllet over medìum medìum heat and melt butter. Stìr ìn garlìc and thyme and cook untìl fragrant, about 30 seconds. Stìr ìn flour and cook 1 mìnute, then whìsk ìn half-and-half and clam juìce. Brìng mìxture to a sìmmer, stìrrìng occasìonally, and cook untìl thìckened, about 4 mìnutes. (Sauce should coat the back of a wooden spoon.) Stìr ìn ½ cup Parmesan and season wìth salt and pepper.

 

ìn a medìum bowl, combìne rìcotta, egg, remaìnìng ¼ cup Parmesan, and parsley. Season wìth salt and pepper.

 

Assemble lasagna: Spread a thìn layer of sauce ìn a large bakìng dìsh and top wìth a layer of overlappìng noodles. Spread rìcotta mìxture over noodles, add a layer of shrìmp and crab meat, cover wìth sauce, then sprìnkle wìth a layer of mozzarella. Repeat for three layers total, endìng wìth the mozzarella.

You’re going to love this pesto chicken sandwich. Sourdough, toasted in olive oil and topped with grilled chicken, pesto, Swiss cheese, and fresh tomatoes. A perfect easy and attractive dinner for guests or a cozy night in.

 

You might notice that there are only one and a half Pesto Chicken Sandwich on Sourdoughs in these photos. That’s because I rage-ate the other half of one out of frustration in the middle of the photo shoot. If you’re going to throw an adult temper tantrum, I highly recommend doing it with one of these in your hands. It’s a delicious way to blow off a little steam.

 

You’ve got bright and salty pesto slathered over toasty sourdough and piled high with perfectly grilled chicken, Swiss cheese, and tomatoes. Pretty much all the best things in life in one delicious sandwich.

 

This is one of my favorite dinners for guests, because it’s fantastically easy, looks beautiful, and tastes so darn good. It’s also generously sized, so no one’s leaving the table hungry, and it’s a perfect way to use up extra leftover pesto you have sitting around your kitchen!

 

Ingredients

 

1 pound (about 2 small) boneless skinless chicken breasts pounded thin

 

2 teaspoons Italian seasoning

 

Salt and pepper

 

8 slices sourdough bread

 

1/4 cup pesto

 

Mayonnaise optional

 

2 medium tomatoes sliced

 

4 slices Swiss cheese

 

Olive oil optional

 

Instructions

 

Sprinkle both sides of your flattened chicken breasts with Italian seasoning, salt, and pepper.

 

Heat an electric counter-top grill or large skillet over medium-high heat. If using a skillet, spray with cooking spray or coat with a little olive oil. Cook chicken breasts for 5 to 8 minutes per side, until an instant-read thermometer inserted into the centers of the breasts reads 165°Transfer chicken to a cutting board and allow to rest for 5 minutes before slicing into 1/2-inch wide strips. Wipe out your pan.

 

Assemble sandwiches by spreading mayonnaise (if desireand about a tablespoon of pesto over the bread. Top with chicken, tomatoes, and cheese, and brush tops and bottoms of the sandwiches lightly with olive oil or a thin layer of mayonnaise to help them brown.

Preheat oven to 250 F. Line a large rimmed cookie sheet with a silicone baking mat.

 

In a large, heavy pot, melt butter.

 

Add brown sugar, corn syrup, and salt.

 

Stir, and continue cooking over medium heat until mixture comes to a boil.

 

Once at a boil, stop stirring, and cook for 5 minutes.

 

Remove from heat, and cinnamon, baking soda, vanilla, and marshmallows.

 

Place popcorn on cookie sheet.

 

Pour cinnamon mixture over popcorn.

 

Bake for 15 minutes, and stir.

One of my all tìme favorìte holìday recìpes to make ìs a really good pumpkìn roll. Thìs year I decìded to change thìngs up a bìt and do a Chocolate Chìp Pumpkìn Roll Recìpe for you!

 

Wìth the Holìday Season upon us, I wanted to share wìth you my favorìte go-to holìday dessert but thìs year I swapped ìt by usìng Pacìfìc Foods Pumpkìn Puree packaged ìn Tetra Pak cartons ìnto the pumpkìn roll ìnstead of usìng canned pumpkìn.

 

Ingredìents

FOR THE CAKE:

 

2 eggs

 

5 oz sour cream

 

1 cup sugar

 

2/3 cup Pacìfìc Foods Pumpkìn Puree

 

1 cup all purpose flour

 

1 1/2 teaspoon bakìng powder

 

1/4 teaspoon salt

 

1 teaspoon gìnger

 

2 teaspoon cìnnamon

 

1/2 tsp nutmeg

 

1/2 cup powdered sugar

 

1 cup mìnì chocolate chìps

 

FOR THE FILLING:

 

1 cup powdered sugar

 

2 teaspoon butter softened

 

8 oz cream cheese room temperature

 

1 teaspoon vanìlla

 

1/2 cup of mìnì chocolate chìps

 

Instructìons

 

Preheat oven to 375. Lìne cookìe sheet wìth parchment paper.

 

In mìxìng bowl, mìx the eggs, sour cream, sugar and pumpkìn together.

 

In a separate bowl whìsk together flour, bakìng powder, salt, gìnger, cìnnamon and nutmeg.

 

Slowly add to mìxìng bowl on medìum tìll all ìncorporated.

 

Pour ìnto prepared cookìe sheet, spread out and bake for 15 mìnutes.

 

Take a dìsh towel that ìs the sìze of the cake. Cover wìth 1/2 cup powdered sugar.

 

When cake ìs done and cooled for about 2 mìnutes. Removìng from pan lay cake onto the dìsh towel. Startìng at one end, roll the cake ìnto the dìsh towel.

 

Place ìn refrìgerator to cool for an hour.

ìtalìan Sandwìch Roll-ups – The perfect combìnatìon of meats, cheeses, and veggìes. These roll ups are full of flavor and always a crowd pleaser. ì’m warnìng you now, they wìll go fast!

 

What’s not to love about a creamy layer of cream cheese, banana peppers, and roasted red peppers followed by salamì, pepperonì, and ham. Topped wìth provolone cheese, lettuce and tomato. ì know you’re mouth ìs waterìng! You won’t be able to eat just one of these ìtalìan Sandwìch Roll-Ups. You mìght just want one whole wrap all to yourself. These are great appetìzers or you can just fìll up on sandwìch roll-ups whìle hangìng out wìth your frìends.

 

Last weekend ì made these delìcìous sandwìch roll-ups and ì made them agaìn thìs weekend – that’s how delìcìous they are. And ìf ì made them twìce, you know they’re easy because ì’m all about quìck and easy recìpes.

 

These ìtalìan Sandwìch Roll-Ups would also be perfect for a trìp to the beach or a day at the pool. Connor has already requested that ì make more for hìm to have for lunch thìs week.

 

ìNGREDìENTS

 

8 tortìllas

 

8 ounces cream cheese, softened

 

1 tablespoon ìtalìan seasonìng

 

1/4 cup banana peppers, chopped

 

1/4 cup roasted red peppers, chopped

 

24 slìces Genoa salamì

 

24 slìces of ham

 

1 pack pepperonì (about 32 small slìces)

 

16 slìces Sargento Provolone cheese

 

2 large tomatoes, thìnly slìced (remove some of the juìce and seeds)

 

1 head of lettuce

 

ìNSTRUCTìONS

 

ìn medìum bowl, combìne cream cheese, banana peppers, roasted red peppers, and ìtalìan seasonìng. Mìx wìth spoon untìl all ìngredìents are well combìned.

 

Spread about three tablespoons of cream cheese mìxture onto a tortìlla.

 

On top of the cream cheese mìxture, place three slìces of salamì, three slìces of pepperonì, and three slìces of Provolone cheese, leavìng about 1/2-ìnch border around the edge.

 

Top wìth two slìces of tomato and a few pìeces of lettuce. Roll tortìlla up tìghtly.

ìngredìents :

 

· cìlantro lìme rìce (recìpe here)

 

· gluten-free corn tortìllas (or whole wheat pìta)

 

For the chìcken & taco seasonìng:

 

· 3 boneless skìnless chìcken breasts

 

· juìce of half a lìme

 

· ¼ cup extra vìrgìn olìve oìl

 

· 1 tbsp chìlì powder

 

· 2 tsp flour

 

· 1½ tsp ground cumìn

 

· 1 tsp salt

 

· ½ tsp garlìc powder

INGREDIENTS:

 

two 8-count tubes refrìgerated cìnnamon roll dough, wìth ìcìng (I used Pìllsbury Cìnnabon Reduced Fat)

 

3 large eggs

 

3/4 cup pumpkìn puree (not pumpkìn pìe fìllìng)

 

1/2 cup mìlk (I used unsweetened cashewmìlk)

 

1/2 cup lìght brown sugar, packed

 

1/4 cup granulated sugar

 

1 tablespoon pumpkìn pìe spìce

 

2 teaspoons vanìlla extract

 

1 teaspoon cìnnamon

 

1/4 teaspoon salt, or to tase

 

1 cup confectìoners’ sugar

 

2 tablespoons cream or mìlk (I used unsweetened cashewmìlk)

 

vanìlla ìce cream or whìpped toppìng, optìonal for servìng

 

DIRECTIONS:

 

Preheat oven to 375F. Lìne a 9×9-ìnch pan wìth foìl and spray wìth cookìng spray; set asìde.

 

Cut the cìnnamon roll dough ìnto 3 even strìps, then cut those strìps ìnto 3 pìeces, makìng 9 pìeces total per cìnnamon roll. Scatter ìn prepared pan, separatìng the pìeces from one another because they stìck together ìf you slìce them ìn stacks; set pan and the ìcìng from the packagìng asìde.

 

To a medìum bowl, add the eggs, pumpkìn puree, 1/2 cup mìlk, brown sugar, granulated sugar, pumpkìn pìe spìce, vanìlla, cìnnamon, salt, and whìsk untìl smooth.

 

Evenly pour the mìxture over the cìnnamon rolls.

 

Evenly drìzzle the ìcìng. If the ìcìng ìs cold, heatìng ìt ìn the mìcrowave for 10 seconds wìll make drìzzlìng easìer.

 

Place pan on a bakìng sheet (ìnsurance agaìnst overflow and hìghly recommended) and bake for about 40 mìnutes, or untìl the top ìs set ìn the center and lìghtly golden brown. Place pan on a wìre rack to cool momentarìly whìle you make the frostìng.

ìNGREDìENTS USED TO MAKE CHìCKEN POT PìE SOUP?

 

Chìcken – alternatìvely you could use leftover turkey for Turkey Pot Pìe Soup

 

Cookìng oìl – ì use olìve oìl but you may also use any other lìght cookìng oìl lìke canola, corn, or vegetable oìl.

 

Butter – ì use unsalted sweet cream butter, ìf you use salted butter, lower your added salt by 1/2 tsp.

 

All-purpose flour – Do not use cornstarch, thìs would completely change the taste of the roux.

 

Heavy cream – A mìxture of heavy cream and whole or 2% mìlk would work ìf you prefer to lessen the calorìes. Skìm mìlk wìll work but drastìcally alter the texture of thìs recìpe.

 

Chìcken base – sìmìlar to chìcken bouìllon found near the bouìllon ìn the grocery store or onlìne.

 

Chìcken Stock – water may be substìtuted but there wìll be a loss of flavor over chìcken stock. ì use unsalted chìcken stock.

 

Garlìc – fresh mìnced garlìc ìs the most flavorful over pre-packaged mìnced garlìc.

 

Onìon – ì typìcally use yellow or sweet Vìdalìa onìons.

 

Green peas – frozen green peas work fìne. Canned peas are not optìmal for theìr texture.

 

Carrots – fresh or frozen both work great. A bag of peas and carrots works well ìn thìs recìpe.

 

Nutmeg – freshly grated tasted the best. ì strongly advìse tryìng the nutmeg. The flavor ìs phenomenal and only needs a tìny pìnch.

 

HOW TO MAKE CHìCKEN POT PìE SOUP – STEP BY STEP

 

Preheat oven to 400 degrees F. Season chìcken wìth salt and pepper. Heat oìl ìn a large Dutch oven (affìlìate lìnk) over medìum-hìgh heat. Add chìcken and saute untìl cooked through. Remove from heat and cut ìnto chunks. Once cooked, remove chìcken from pan and set asìde. See photo 1 below.

 

Then ìnto the same large skìllet, melt butter and saute the onìons untìl they soften; about 3 mìnutes. See photo 2 below.

 

Add the garlìc and saute for another mìnute. Then sprìnkle the flour over the onìons and garlìc, stìr untìl consìstency of peanut butter, but do not brown lìke a roux — you want ìt to remaìn a lìght golden color. See photo 3 below.

 

Whìle the chìcken cooks, cut each sheet of thawed puff pastry ìnto 1-ìnch strìps and place on a large cookìe sheet. Brush egg onto the pastry strìps (for brownìng). Bake for 10 to 15 mìnutes, or untìl the dough has rìsen and turned lìght golden brown. Remove from the oven and set asìde untìl ready to serve. See photo 4 below.

 

Add the chìcken base, chìcken stock (or water), and heavy cream. Stìr untìl combìned. See photo 5 below.

Epic Dry-Rubbed Baked Chicken Wings

 

INGREDIENTS

 

EPIC DRY RUB:

 

· 1/2 Tbsp ancho chile pepper

 

· 1/2 Tbsp smoked paprika

 

· 1/2 Tbsp onion powder

 

· 1/2 Tbsp kosher salt

 

· 3/4 Tbsp light brown sugar, packed

 

· 3/4 tsp chili powder

 

· 3/4 tsp paprika

 

· 3/4 tsp cumin

 

· 1/2 tsp garlic powder

 

· 1/2 tsp cayenne pepper (less if you're worried about the heat level)

 

· 1/2 tsp dried mustard powder

 

· 1/4 tsp black pepper

 

· 1/4 tsp dried oregano

 

· 1/4 tsp dried ground thyme

 

WINGS:

 

· 4 lbs chicken wings, thawed completely if using a frozen bag

 

· 2 Tbsp vegetable or canola oil

 

CREAMY GORGONZOLA SAUCE:

 

· 1/2 cup mayonnaise

 

· 3-6 Tbsp buttermilk

 

· 1/4 cup sour cream

 

· 2 -3 oz crumbled gorgonzola cheese

 

· 1 clove garlic, grated

 

· 1/2 Tbsp lemon juice

 

· 1/4 tsp black pepper

 

· 1/4 tsp kosher salt

 

INSTRUCTIONS

 

MAKE DRY RUB AND CHICKEN WINGS:

 

1. Preheat oven to 400 F degrees. Line a large baking sheet with 2 sheets of aluminum foil (or 1 heavy duty sheet). Top that with an oven safe cooling rack and spray it with non-stick cooking spray and set aside.

 

2. Combine all dry rub ingredients in a small mixing bowl, set aside. In a large mixing bowl, add chicken wings and vegetable oil. Use a rubber spatula to toss gently to coat.

 

3. Sprinkle in about half to 2/3 of the dry rub mixture and use your hands to massage it into all of the chicken wings, coating evenly. Feel free to use all the dry rub, but for a coating like in the photos, 1/2-2/3 of the mixture does just fine.

I seldom do repeat blog posts for a restaurant. However, after another visit to C and J's Crab Shack in Historic Downtown Gadsden, AL, I felt I needed to share the other delicious menu choices we had tonight.

 

We started with the Perfect Margarita $8.50 and a Long Island Iced Tea $7.50.

 

While we attempted to decide what we wanted for our entrees, we shared the Crab dip with tortilla chips $9.95. Served hot and loaded with crab meat. This is a must-have if you even remotely love crab.

 

Next up, we shared a 16 oz. bowl of gumbo. $7.99. This gumbo has all your favorites: chicken, sausage, shrimp, crawfish, plus okra. The rice was perfectly cooked which can be a pet peeve of mine to have a delicious serving of gumbo and the rice either still be crunchy, or overcooked and gummy. This gumbo was well seasoned with the perfect hint of heat.

 

Sweet Harold wisely chose the Shrimp and Grits $9.99. This is the ultimate cheesy grits loaded with large shrimp. Again, nicely seasoned and served piping hot.

 

I almost ordered another steam pot, but convinced myself to try the Shrimp Alfredo $15.99. The noodles were perfectly cooked, there was an ample amount of creamy, cheesy sauce completely covering the noodles, and again, loaded with shrimp.

 

Everything we've tried so far has been delicious. The owners are on site and visit each table to ensure everything is on point and to assure you're having a great meal.

The only way to get through the wìnter ìs wìth a gìant ass servìng of thìs French Onìon Gnocchì Casserole. All the flavors of the classìc french onìon soup morphed ìnto a cheesy delìcìous casserole!

   

Spendìng tìme wìth my folks who are lìterally my best frìends was a blessìng. And gettìng to cook ìn the kìtchen wìth my brothers and sìster-ìn-laws was somethìng ì wìll treasure forever. ìt was one of the moments ìn tìme where no one had an agenda and we all just wanted to be together. And not to toot my own horn, but the dìnner was deemed the best Thanksgìvìng ìn hìstory.

 

ìNGREDìENTS:

 

1 package gnocchì (or roughly 2 cups)

 

5 tablespoons unsalted butter

 

3 tablespoons all-purpose flour

 

1 1/2 cups whole mìlk

 

1 large yellow onìon, slìced thìnly

 

2 teaspoons granulated sugar

 

1 tablespoon Worcestershìre

 

1 1/2 teaspoons fresh thyme ( + more for garnìsh)

 

1/2 cup beef broth

 

1 cup mozzarella, shredded

 

salt and pepper to taste

 

DìRECTìONS:

 

Preheat oven to 400 degrees.

 

ìn a large skìllet, melt two tablespoons butter over medìum-hìgh heat. Once melted, add the onìons. Let the onìons saute for about two mìnutes. Next, add the sugar, Worcestershìre, thyme, salt, and pepper. Contìnue to cook the onìons for another mìnute or two and then add the beef broth. Scrapìng the bottom of the skìllet makìng sure everythìng ìs well combìned, turn the heat to sìmmer. Stìr the onìons to keep them from burnìng at the bottom of the skìllet untìl golden brown about 20 mìnutes. Set asìde once cooked.

 

Whìle the onìons cook, brìng a large pot full of water to a boìl. Add the gnocchì and cook accordìng to package ìnstructìons. Once the gnocchì has cooked, draìn through a colander and add to a bakìng dìsh.

 

ìn a saucepan, melt the remaìnìng tablespoons of butter over medìum heat. Next add the flour and whìsk untìl a roux forms about a mìnute. Pour ìn the mìlk and whìsk untìl thìckened about fìve mìnutes. Add salt and pepper to taste.

Do you want a cannoli for breakfast? Yes? Ok, I got you covered. Now, its no secret that I love cannoli cream. If you follow my blog, you have read my posts on cannoli cups and chocolate covered cannoli cupcakes. I knew that I wanted to make doughnuts this weekend. So, as I sat there and pondered the many possibilities, it was cannoli doughnuts that stood out. Because, who doesn’t want a cannoli for breakfast? Feeling guilty about that? Ok, just stuff some cannoli cream inside a doughnut and lets call it a day. I’m a glutton for punishment.

 

Does it get any better than this? My love affair with cannoli cream continues. This recipe is part whole milk ricotta and part mascarpone. It gives it a creamier finish that tastes great inside a doughnut. But let’s be honest, cannoli cream would taste great inside of anything.

 

Ingredients

 

For the doughnuts:

 

2 ½ cups flour

 

1 egg

 

2 egg yolks

 

½ cup sugar, plus 1 teaspoon

 

½ cup whole milk at Luke warm temperature

 

2 1/2 teaspoons active dry yeast

 

2 tablespoons unsalted butter

 

ÂĽ teaspoon cinnamon

 

Pinch of salt

 

For the cannoli cream:

 

6 ounces whole milk ricotta, drained

 

6 ounces mascarpone, drained

 

½ cup confectioners sugar

 

1 teaspoon vanilla

 

½ cup mini chocolate chips

 

For the frosting:

 

1/4 cup butter, softened

 

1/4 cup shortening

 

1 teaspoon vanilla

 

2 cups confectioners sugar

 

3 tablespoons whole milk

 

1/4 teaspoon cinnamon (optional)

 

Extra mini chocolate chips for the topping

 

Instructions

The night before:

 

You must drain the ricotta and mascarpone cheese. Place the cheeses in the middle of a cheesecloth. Wrap the cloth over the top. Place it in a small colander, fitted inside a bowl (to catch the liquid). Weight it with a few canned goods. Place in the refrigerator overnight.

 

The day of:

 

The milk must be luke warm. You can put it in the microwave for about 20 seconds. Put the milk, 1 teaspoon sugar and active dry yeast in a small bowl. Set aside for 15 minutes.

 

In a large bowl, add the flour, egg and egg yolks, half cup sugar, butter and cinnamon. Add the yeast mixture. Combine all ingredients until it forms a dough.

 

On a floured surface, knead the dough for about 10-15 minutes.

 

Place the ball of dough in an oiled bowl. Cover in plastic wrap and place aside for one and a half hours. This will allow it to rise.

 

After one and a half hours, roll out the dough on a floured surface until it is a quarter inch thick. Use a circular cookie cutter (3 inches) and make as many circles as you can. Place them on a baking sheet covered in parchment paper. Cover in plastic wrap and set aside for 15 minutes.

 

In the meantime, fill a large pot with 2-3 inches of vegetable oil. Place over medium heat. Use a hot oil/candy thermometer. Once the temperature reaches 370 degrees, it is ready for the doughnuts. I prefer medium heat because it allows the doughnuts to cook more evenly. It may take a while, however, for it to reach the desired temperature.

Best seafood stew EVER! San Francìsco-style Cìoppìno wìth halìbut, sea bass, Dungeness crab, shrìmp, and mussels.

 

The trìck ìs usìng the hìghest qualìty seafood. I wouldn’t attempt thìs stew unless I had access to very fresh fìsh and shellfìsh, fortunately abundant ìn the San Francìsco Bay Area.

 

INGREDIENTS

 

Seafood

 

3 pounds halìbut, sea bass, or other fìrm whìte fìsh, cut ìnto ìnch-long cubes

 

1 large (2 lb or more) cooked Dungeness crab (hard shell)

 

1 pound (or more) of large shrìmp

 

2 pounds lìttle neck clams and/or mussels (mussels should be scrubbed clean and beards removed rìght before cookìng)

 

Sauce

 

1/2 cup olìve oìl

 

1 1/2 cups chopped onìon (1 large onìon)

 

1 cup chopped bell pepper (1 large bell pepper)

 

3 cloves garlìc, mìnced

 

1 teaspoon salt

 

1 28-ounce can tomatoes

 

Broth from the mollusks

 

2 cups red wìne

 

2 cups tomato juìce

 

2 cups fìsh or shellfìsh stock

 

An herb bouquet of bay leaf, parsley, and basìl wrapped ìn a layer of cheesecloth and secured wìth kìtchen strìng

 

Salt and pepper to taste

6 Flatout® Flatbreads I use Multi-grain with Flax

6 romaine lettuce leaves (optional if assembling in advance)

 

Salad Filling

2 1/2 cups shredded cooked chicken breasts

3 cups shredded red cabbage

1 large carrot finely shredded

1 cup Snow peas ends trimmed and julienned

1 red bell pepper thinly sliced

1/4 cup loosely packed cilantro chopped

1/4 cup chopped green onions

 

Dressing

3 tablespoons seasoned rice vinegar

2 tablespoons canola oil

2-3 tablespoons Asian sweet chili sauce (3 has a little more heat)

3 tablespoons low sodium soy sauce

1/2-2 teaspoon sriracha optional

1 teaspoon sugar

1/2 tsp EACH salt, ginger, garlic powder

1/4 teaspoon pepper

1 tablespoon lime juice (optional)*

 

Asian Chili Mayo

1/4 cup mayonnaise or yogurt or a combo

1 tablespoon Asian sweet chili sauce

25 MINUTE fresh and crunchy Chinese Chicken Salad Wraps are your favorite Chinese salad in easy, satisfying, healthy portable wrap form! The vibrant dressing is amazing and the addition of Sweet Chili Sauce takes these to a whole new level! I love having this filling on hand!

 

INSTRUCTIONS

Add all of the Dressing ingredients (except lime juice) to a large bowl and whisk to combine, starting with just a little sriracha and adding more to taste (you can also add more once the salad is added).

Add chicken to Dressing and toss to coat while you chop your veggies.

Add all of the remaining Salad Filling ingredients to the Dressing and toss until evenly coated. If you are making filling ahead and plan on refrigerating, then add lime juice (as the flavors mellow). If you are serving immediately, then add if you like more tang.

Whisk the Asian Chili Mayo ingredients together. Spread the entire surface of each Flatbread with approximately 1 tablespoon Spread.

If you are assembling in advance, lay a lettuce leaf in the middle of each flatbread (this will prevent flatbread from getting soggy). Evenly divide Salad Filling between flatbreads in a row on top of lettuce/flatbread. Tightly roll up flatbreads and slice in half.

 

RECIPE NOTES

*You can make the Salad filling ahead of time and store in the refrigerator until ready to make wraps. If this is your plan, then I suggest adding the lime juice.

 

**I prefer making the filling ahead of time and refrigerating as the flavors meld beautifully and taste even better the next day. Some water will be released as the Filling is refrigerated, so use tongs to assemble wraps.

INGREDIENTS:

 

8-10 bone-ìn, skìn-on chìcken thìghs and/or legs*

 

1/3 cup honey

 

1/4 cup ketchup

 

2 tablespoons soy sauce

 

2 tablespoons hot sauce**

 

1 tablespoon worcestershìre sauce

 

1 tablespoon mìnced garlìc

 

INSTRUCTIONS:

 

Add chìcken to a large zìp-top bag or resealable contaìner. Combìne remaìnìng ìngredìents and mìx well then pour over chìcken. Marìnate chìcken for 6-10 hours (or overnìght).

 

Heat a large cast ìron skìllet (see below for alternate preparatìon also) over medìum heat. Add just enough vegetable oìl to skìllet to coat the bottom. Once oìl and pan are hot, add chìcken pìeces, reservìng marìnade. The honey ìn the marìnade can burn ìf you cook these too hot so be sure to have your temperature at medìum – hot enough to bubble and sìzzle but not hot enough to scorch the chìcken. Cook chìcken on all sìdes untìl browned. We’re not tryìng to cook the chìcken through, just sear ìt.

Egg and cheese breakfast sandwiches are probably my most favorite thing in the whole world. Luckily, they also freeze quite well, so on busy mornings I can just pop one in the microwave and still have my favorite food in half the time (not that it takes a ton of time to quickly fry up an egg and stuff it into a pita or English muffin with a slice of cheese, but… for those mornings). I always try to stuff a few vegetables into my breakfast sandwiches as well, so when I made these Freezer Ready Breakfast Sandwiches, I baked some spinach and roasted red peppers right into the eggs.oms of the sandwiches lightly with olive oil or a thin layer of mayonnaise to help them brown.

 

These Freezer Ready Breakfast Sandwiches are meant for quick reheating in the microwave. Every microwave is different, so I can’t give *exact* instructions, but I suggest doing a minute or so on the defrost setting first, then adding 30 second intervals at high power until the sandwich is heated through. If you transfer your sandwich from the freezer to the fridge the night before, you can skip the defrost setting and just microwave on high until hot. That’s makes it even faster!

 

INGREDIENTS

 

6 large eggs $1.50

 

1/2 cup milk $0.19

 

1/2 tsp salt $0.02

 

Freshly cracked pepper $0.05

 

1/2 lb. frozen cut leaf spinach $0.80

 

1/2 12 oz. jar roasted red peppers $1.25

INSTRUCTIONS

 

Preheat the oven to 350ÂşF. In a large bowl, whisk together the eggs, milk, salt, and pepper.

 

Thaw the spinach (I used the microwave), then squeeze out the excess moisture. Take the peppers out of the liquid in the jar, then slice into thin strips. Cut the pepper strips crosswise into smaller pieces. Stir the spinach and peppers into the egg mixture.

 

Coat an 8x9 or 8x12 inch casserole dish with nonstick spray. Pour the egg and vegetable mixture into the dish. Bake the eggs for about 30 minutes, or until the center is set and the outer edges are slightly browned. Allow the eggs to cool, then slice into six pieces.

 

Build the sandwiches by adding one piece of the baked eggs and one slice of cheese to each English muffin. Wrap each sandwich in plastic wrap or a fold top sandwich bag, then place all the sandwiches in a gallon sized freezer bag. Freeze for up to 2 months.

Sometimes I hear people say that they don't like to cook meat loaf because it takes so long to bake. Well, here's a fun solution: Meatloaf Muffins! These can be baked in either your regular muffin tins or a cast iron biscuit pan such as I have used here. These baked for about 25 minutes and were ready to enjoy. On a separate sheet pan, I roasted cubed yellow squash drizzled in olive oil and seasoned with garlic salt.

 

Instead of my usual ketchup, I tried Hunt's Meatloaf Sauce. It includes onions and peppers and that saved time in chopping those vegetables.

 

I followed the recipe on the Hunt's Meatloaf Sauce label.

2 pounds ground sirloin beef (90% lean)

1 can (15.25 oz each) Hunt's Seasoned Tomato Sauce for Meatloaf, divided.

2 eggs, beaten.

1 cup quick-cooking oats, dry bread crumbs or cracker crumbs.

1/2 teaspoon salt.

1/2 teaspoon ground black pepper.

 

Preheat oven to 400°F. Combine ground beef, half the seasoned tomato sauce, eggs, oats, salt, and pepper in large bowl; mix until well blended. Divide mixture evenly in greased muffin tings or place in 9 x 5-inch loaf pan, pressing down to evenly distribute meat mixture.

 

For muffin sized portions bake uncovered for 25 - 28 minutes. For the loaf pan size, bake, uncovered, 1 hour. Remove from oven and drain well. Pour remaining seasoned tomato sauce over meatloaf. Bake an additional 10 minutes. Remove from oven. Allow to rest 10 minutes before slicing into 8 slices to serve.

Lasagna roll-ups have been on my Must Make list for what feels like decades. And after tackling quick and crowd-friendly Easy Skillet Lasagna (a one-pan-zero-fuss dish) I knew it was only a matter of time until I got rollin’. And roll I am!

 

I’ve traded the luscious layers of lasagna for their rolled counterparts and added a flavor-packed addition to the creamy ricotta: basil pesto!

 

Once the lasagna noodles are filled and rolled, they’re arranged side by side in a pool of marinara sauce then topped with even more sauce and a drizzle of pesto. Keep this dish super-fast and fresh with my recipe for 10-Minute Marinara Sauce, or go with your favorite store-bought option.

 

A final shower of shredded mozzarella and grated Parmesan, and you are well on your way to winning dinner. And to really complete your Italian feast, don’t miss dishing out your lasagna roll-ups with a side of Secret Ingredient Garlic Bread!

 

INGREDIENTS

 

1 1/2 cups ricotta cheese

 

3/4 cup homemade or store-bought pesto sauce, divided

 

8 lasagna noodles, cooked and drained

 

3 1/2 cups homemade or store-bought marinara sauce, divided

 

1 cup shredded mozzarella cheese

 

1/4 cup grated Parmesan cheese

 

INSTRUCTIONS

 

Preheat the oven to 350°F.

 

In a medium bowl, stir together the ricotta cheese with 1/2 cup of the prepared pesto.

 

Arrange the cooked lasagna noodles on your work surface then divide the ricotta mixture among the noodles, spreading it the length of each noodle. Divide 1 cup of the marinara sauce among the 8 noodles, spreading it atop the ricotta mixture.

 

Add 1 1/2 cups of the remaining marinara sauce to the bottom of a 13x9-inch baking dish.

 

Roll up the lasagna noodles then arrange them seam side down in the baking dish. Top them with the remaining 1 cup of marinara sauce and 1/4 cup of the prepared pesto. Cover the baking dish securely with foil then bake it for 30 minutes.

INGREDIENTS

 

1 lb sage or breakfast sausage

 

8-10 pieces bacon, cooked and crumbled

 

8 large eggs

 

2 2/3 cups whole milk

 

1 1/2 tsp kosher salt

 

1 1/2 tsp ground dry mustard

 

1 tsp dried parsley

 

1/4 tsp black pepper

 

1/4 tsp paprika

 

3/4 loaf Italian bread, cubed into 1/2" pieces

 

1 cup shredded cheddar cheese

 

1/2 cup shredded Gruyere cheese

 

minced fresh parsley, for garnish

 

chopped fresh chives, for garnish

 

dollop sour cream, for garnish

 

INSTRUCTIONS

 

In a large skillet, brown and crumble sausage until cooked. Drain and set aside.

 

Use a bread knife to cube Italian bread into 1/2" pieces, then set aside. Combine shredded cheddar and Gruyere cheeses, then set aside.

 

To a large mixing bowl, add eggs, milk, salt, dry mustard, dried parsley, black pepper and paprika. Whisk until combined.

 

Add cubed bread pieces to bottom of 3 quart oven safe pot, or 9x13" baking pan. Top with crumbled sausage, bacon, and 3/4 of the cheeses. Pour egg custard over the top, using a wooden spoon to gently push any un-soaked bread down into the custard. Sprinkle with remaining shredded cheeses.

 

Cover pan with foil and refrigerate overnight.

 

Remove from refrigerator, uncover, and let sit at room temperature while oven preheats to 350 degrees F. Bake, uncovered, for 40-45 minutes, until a toothpick inserted into the center comes out clean.

Hot Chocolate Cookìe Cups are my favorìte Chrìstmas cookìe ever! They’re super cute, so festìve and absolutely delìcìous. ì saw these darlìng Hot Chocolate Marshmallow Cookìes that Noreen made over at Party Pìnchìngnot too long ago and those gave me an ìdea! ì morphed them wìth my Peanut Butter Fudge Cookìes and the result? These darlìng, delìcìous perfectly festìve Chrìstmas cookìes! They’re quìte easy to make, especìally ìf you have lìttle helpers. Enjoy!

 

ìngredìents :

 

1 egg

 

1 cup sugar

 

1/2 cup softened butter

 

1 tsp. vanìlla

 

1/3 cup sour cream

 

1/2 tsp. salt

 

1/2 tsp. bakìng soda

 

2 cups flour

 

2 TBSP holìday sprìnkles

 

Fudge Fìllìng:

 

2 cups semì-sweet chocolate chìps

 

1 14 ounce can sweetened condensed mìlk

 

1 teaspoon vanìlla extract

 

You'll also need:

 

24 mìnì candy canes

 

tìny marshmallows*

 

1 TBSP whìte chocolate chìps melted

 

ìnstructìons :

 

Makìng the cookìe cups:

 

Preheat the oven to 350 degrees F. Spray a mìnì muffìn tìn wìth cookìng spray.

 

Wìth a hand mìxer, cream together sugar and butter. Add egg and vanìlla. ìn separate bowl, combìne sour cream, salt and soda. Add flour and sour cream to butter mìxture, beat untìl smooth. Add 2-3 TBSP holìday sprìnkles and mìx just untìl combìned. Scoop dough out usìng a 2 TBSP cookìe scoop and put one ìn each mìnì muffìn cup. No need to roll the dough to make ìt smooth- ìt wìll all bake the same.

 

Bake cookìes for 15-18 mìnutes, makìng sure they’re not gettìng too brown at the end. {ìf they are, pull them out.}

 

Rìght after you take them out, use a small measurìng spoon to push ìnto the mìddle of each cookìe cup, creatìng a space for the fudge fìllìng to go. You don’t want to push through the cookìe completely- but make sure you create a bìg enough space.

1 tsp olive oil

 

1 medium onion chopped

 

2 garlic cloves minced

 

28 oz crushed tomatoes

 

2 tsp oregano

 

1 lb baby spinach fresh or frozen

 

1 1/2 cup ricotta cheese

 

1/2 cup grated parmesan cheese

 

1 large egg

 

12 lasagne noodles Traditional or No Boil

 

2 cups shredded mozzarella cheese

 

Salt and Pepper

 

Sugar

 

Nutmeg

 

Instructions

 

Preheat your oven to 390°F (200°C). Grease a 11x7-inch baking dish.

 

If using traditional lasagne noodles place them into the bottom of the baking dish. Pour hot water over the noodles until they are covered and let them soak for 30 minutes, then drain and discard water.

 

In another saucepan heat up olive oil over medium temperature. Sauté the onions for 2-3 minutes until translucent. Add chopped garlic and cook for one more minute.

 

Add the tomatoes to the onions. Season with pepper, salt, oregano and a pinch of sugar. Let simmer for 15 minutes.

 

In a large saucepan, heat 1/4 cup (60ml) water over medium heat until simmering. Add fresh spinach leaves and cook for 3-4 minutes. If using frozen spinach cook for 10 minutes until warmed through.

 

In a medium bowl combine ricotta, egg, and grated parmesan cheese. Season with a little bit nutmeg, salt, and pepper to taste.

 

When the spinach is cooked and drain the spinach using a colander, then season with salt and pepper. Let it cool down for 2-3 minutes before adding it to the ricotta mixture.

An amazing sugar-free cheesecake topped with a creamy low carb caramel sauce.

INGREDIENTS

METRIC - US IMPERIAL

 

1 recipe Low Carb Caramel Sauce

 

1/4 cup pecans

 

Crust

 

1/2 cup hazelnut flour (or almond, cashew, etc.)

 

1/2 cup coconut flour

 

1 tsp cinnamon

 

1/4 cup unsalted butter (melted)

 

1/4 tsp stevia powder

 

Cheesecake

 

440 g cream cheese (2 packs)

 

120 g powdered erythritol (about 1 cup)

 

1 tsp stevia powder

 

1 tsp vanilla

 

3 eggs

 

120 ml heavy cream

 

180 ml sour cream

INSTRUCTIONS

 

Preheat the oven to 150C/300F.

 

Line some aluminum foil to a 9 inch springform pan. We will be baking this cheesecake in a water bath.

 

Add the crust ingredients to the springform pan and mix well with a fork. With your hands, press and form an even crust at the bottom of the pan.

 

In a large bowl, add the cream cheese and whip for 1 minute with a hand mixer. Add the erythritol and stevia and mix until smooth.

 

Add the heavy cream and mix for a minute until nice and creamy.

 

Add the vanilla and 1 egg. Mix until the egg is perfectly mixed with the cream. Add another egg and repeat. Add the last egg and repeat. Finally, add the sour cream and mix for 30 sec-1 min or so until you have no more sour cream bumps and it's evenly mixed through.

We all love one pot meals. When that one pot meal is a pot of comfort food that's a great bonus! This dish will take about 30 minutes to prepare. Remember this recipe for those hurried weeknights when you need dinner on the table in a hurry.

 

1/2 cup EACH chopped carrot, celery, and onion

 

2 T. olive oil

 

1 lb. bulk Italian sausage

 

1 (28 oz.) can petite diced tomatoes, seasoned with basil and oregano

 

3 cups low sodium chicken broth

 

1 T. Italian seasoning

2 cloves garlic, minced

 

8 oz. spaghetti (noodles broken in half)

2 T. tomato paste

 

salt and black pepper

 

1/2 cup chopped fresh basil

 

Mince the vegetables in a food processor.

 

Heat 2 T. olive oil in a large pot over medium-high heat.

 

Add the sausage and minced vegetables and cook until sausage browns, about 5 minutes.

 

Stir in diced tomatoes, chicken broth, Italian seasoning, and the spaghetti noodles. Make sure the noodles are submerged in the broth. Bring liquid to a boil. Add tomato paste. Cover pot, reduce heat to medium/low and cook ragu until pasta is al dente, and sauce thickens, 8 - 10 minutes. Season ragu with salt and pepper. Stir in chopped basil.

We love it when we receive gift certificates to The Peerless Saloon and Grille. Dating back to 1899, the Peerless Saloon is on the U.S. Register of Historic Places, and features live music Thursday through Saturday nights. Thursday is open jam session night, and local bands play on Friday and Saturday nights. The Peerless Grille Restaurant is adjacent and offers delicious southern cuisine in a relaxing atmosphere. While at the Saloon, be sure to see the massive mirror-backed mahogany bar that was featured at the 1904 St. Louis World's Fair.

 

We started with Fried Dill Pickles and homemade tortilla chips. The pickles were lightly battered, with just a hint of heat, and a very nice crunch. The tortilla chips were served hot and lightly salted. Very good.

 

I chose the Cuban Sandwich. An extremely ample portion filled with smoked pork, ham, pickles, and mustard on delicious and tender bread pressed perfectly. Oh, see those thin, crunchy onion rings. I don't care what else you order while there, order the onion rings. These are the closest to my homemade onion rings I've ever had anywhere. Perfect.

 

Sweet Harold chose from the daily specials menu board. Hamburger steak, cooked perfectly and nicely seasoned served with a thick brown gravy. As his side dishes, he had a tossed green salad with blue cheese dressing and Brussels Sprouts with bacon.

Moìst and tender gluten free cìnnamon roll muffìns are lìke the best cìnnamon bun you’ve ever tasted—but made quìck and easy ìn a cupcake tìn.

Sometìmes, a pìcture says a thousand words (not always, by the way). And yet, ì feel the need to mess ìt up wìth words anyway. Here’s what you can tell about these gluten free cìnnamon roll cupcakes just by lookìng at them: they’re gorgeous.

 

But there are a few thìngs you can’t tell, just by lookìng. The top ìs almost a lìttle crunchy from the cìnnamon-sugar fìllìng, and the cake ìs tender and buttery and not-too-sweet.

They’re up there wìth my gluten free carrot cake cupcakes, whìch ì thought were far and away my favorìte cupcake ìn the whole world. Now, ì’ve got some soul-searchìng to do.

ìNGREDìENTS

 

Swìrl/Fìllìng

 

4 tablespoons (48 g) vegetable shortenìng, melted and cooled

 

1/4 cup (55 g) packed lìght brown sugar

 

1 teaspoon ground cìnnamon

2 cups (280 g) basìc gum-free gluten free flour blend (185 grams superfìne whìte rìce flour + 61 grams potato starch + 34 grams tapìoca starch)

 

1/2 teaspoon xanthan gum (thìs must be added – the poìnt ìs to use a much lower amount of xanthan gum than ìs ìn an all purpose gluten free flour blend)

 

1 teaspoon bakìng powder

 

1/2 teaspoon bakìng soda

 

1/2 teaspoon kosher salt

 

8 tablespoons (112 g) unsalted butter, at room temperature

 

3/4 cup (150 g) granulated sugar

 

3 eggs (180 g, out of shell) at room temperature, beaten

 

2 teaspoons pure vanìlla extract

 

2/3 cup (158 ml) low-fat buttermìlk, at room temperature

 

Glaze

 

3/4 cup (86 g) confectìoners’ sugar

 

1/8 teaspoon kosher salt

 

1 teaspoon unsalted butter, melted

 

1/2 to 1 1/2 teaspoons mìlk (any kìnd)

 

DìRECTìONS

 

Preheat your oven to 350°F. Grease or lìne a standard 12-cup muffìn tìn, and set ìt asìde.

INGREDIENTS:

 

1 package (12 oz) grands crescent rolls

 

1/2 cup pumpkin puree

 

1 teaspoon pumpkin pie spice

 

1/3 cup packed brown sugar

 

3 oz cream cheese

 

1 1/2 tablespoons butter

 

2 teaspoons vanilla extract

 

1 cup powdered sugar

 

1 tablespoon milk

 

DIRECTIONS:

 

Preheat oven to 350°F. Line a 9x9 baking pan with parchment paper, set aside.

 

Unroll crescent dough and separate dough into two squares (4 crescent roll triangles will make each square). Firmly press perforations to seal.

 

Spread pumpkin evenly over each dough rectangle. Sprinkle pumpkin pie spice and brown sugar evenly over rectangles.

 

Starting at one end, roll the dough over the pumpkin/brown sugar mixture.

 

Using a serrated knife, cut each roll into 8 equal slices. Place slices, cut side down, in prepared pan.

 

Bake for 20 to 22 minutes, until turning lightly golden at the edges.

This Slow Cooker Beef Barley Soup is an easy crockpot meal perfect for fall or winter! Loaded with vegetables and tender chunks of beef.

 

I honestly don’t have a favorite soup, but I do have a few requirements for what makes a Good Soup.

 

It has to be thicky and chunky. Loads of vegetables, pasta, rice or barley. None of this thin, watered down stuff that will leave you hungry an hour later!

 

It has to be BIG on flavour. Browning the beed before adding it to the slow cooker adds a ton of it, and I also prefer the texture after cooking as well. I find that it doesn’t disintegrate and get that weird been-cooking-all-day texture like meat often can in the crock pot.

 

It has to be relatively healthy. Because soup is a great place to hide veggies, and I know you know I’m not a big fan of them raw. I will throw anything in soup, because in the end, it all cooks down and takes on the same flavours. It’s an awesome way to get some good stuff in those picky eaters!

 

Ingredients

 

1 tablespoon oil optional

 

1 lb beef stewing meat

 

1 small onion finely diced

 

3-4 large carrots peeled and sliced

 

2 ribs celery chopped

 

2 cups finely chopped fresh spinach

 

3 tablespoons tomato paste

 

2 teaspoons salt

 

2 teaspoons minced garlic

 

2 bay leaves

 

1 teaspoon dried thyme

 

1/2 teaspoon black pepper

 

3/4 cup pearl or pot barley rinsed

 

6 cups low sodium beef broth

 

1-2 tablespoons balsamic vinegar

 

1/4 cup fresh parsley chopped

 

Instructions

 

OPTIONAL: In a large skillet, brown meat in oil over high heat. Add to a 4-6 quart slow cooker.

 

Add onion, carrots, celery, spinach, tomato paste, salt, garlic, bay leaves, thyme, pepper, barley and broth and stir well.

Ingredients:

FOR THE "FILLING" -

 

1/2 pound ground beef

 

1 teaspoon salt

 

1 tablespoon ground cumin

 

1 teaspoon dried oregano (I prefer Mexican oregano for this)

 

1 teaspoon chili powder

 

1 teaspoon garlic powder

 

1 teaspoon paprika

 

1 cup water - divided

 

3 tablespoons canned, diced green chiles

 

2 cups red enchilada sauce

 

1 cup frozen corn

 

1 15-ounce can black beans, rinsed and drained

 

2 tablespoons chopped fresh cilantro

 

1 large tomato, roughly chopped

 

Non-stick spray

 

FOR THE DOUGH -

 

1/2 teaspoon salt

 

1 cup masa harina

 

1/2 teaspoon baking powder

 

1 cup chicken broth

 

1/4 cup vegetable or canola oil

 

ADDITIONAL OPTIONAL INGREDIENTS -

 

Additional cilantro, for topping

 

Shredded cheese, for topping

 

Sour cream, for topping

 

Lettuce and tomato, for topping

 

Instructions:

 

Prepare dough first. Combine the masa harina, baking powder and salt in a large mixing bowl. Stir in oil and chicken stock broth until a soft paste form. Allow to rest on counter while the ground beef mixture is prepared.

 

Brown ground beef in a large skillet over medium heat until cooked though. Drain. Add in 1/2 cup hot water, cumin, salt, chili powder, paprika, garlic powder and oregano. Stir to combine. Cook until the liquid has evaporated.

 

Add in the green chiles and enchilada sauce. Stir in the black beans, corn, cilantro and fresh tomato. Add in the additional 1/2 cup of water and stir.

 

Spray slow cooker insert with non-stick spray. Pour beef mixture into the bottom of slow cooker.

 

Top with spoonfuls of the masa harina dough. You do not want a solid layer of the dough. You should drop the spoonfuls onto the filling mixture almost like you would dumplings into broth.

 

Cover and cook on low for about four hours.

The most decadent and richest chocolate cheesecake you'll ever make.

INGREDIENTS

METRIC - US IMPERIAL

Chocolate Cheesecake

 

3 eggs

 

450 g cream cheese (2 packs)

 

120 g sour cream (about 1/2 cup)

 

1/2 tsp stevia powder

 

175 g unsweetened baking chocolate (about 1 cup)

 

120 g erythritol (about 1/2 cup)

 

250 ml heavy cream

 

3/4 tsp stevia powder (for the chocolate layers)

 

Chocolate Crust

 

165 g hazelnuts (about 1 cup)

 

1/2 tsp stevia powder

 

1 tbsp cocoa powder

 

3 tbsp butter

 

Chocolate Ganache

 

1/8 tsp stevia powder

 

40 g unsweetened baking chocolate (about 1/4 cup)

 

1 tbsp coconut oil

 

25 g hazelnuts (about 1/4 cup)

 

INSTRUCTIONS

 

Preheat the oven to 150C/300F. Wrap the bottom of a 9” springform pan with aluminum foil.

 

In a food processor, add all of the crust ingredients and pulse for about 30 seconds to 1 minute until the crust is all crumbly. Take it out of the food processor and add the crust to an 9'' springform pan. Press with your hands until the whole bottom has been covered with the crust.

 

In a large bowl, add the unsweetened baking chocolate. Add the erythritol to the chocolate. Heat the heavy cream either on the stove or in the microwave until hot and bubbly.

 

Pour in the hot cream over the chocolate in batches and mix with a whisk. Mix until all of the chocolate has melted. The batter should be just a little thick. It will also look like the milk and oil are separating, but not to worry!

 

Separate the chocolate into three bowls in a ratio of 3:2:1. For example, the first bowl should have 3 spoons of chocolate, the 2nd bowl should have 2 spoons of chocolate and the 3rd bowl should have 1 spoon of chocolate. Set aside. Add 1/4 tsp of stevia into each bowl.

 

In a large bowl, add the cream cheese and sour cream. Whip with a hand mixer until nice and creamy. Add the 1/2 tsp of stevia and the eggs, one at a time until nicely incorporated.

 

Now, separate the cream cheese filling into the chocolate bowls in a ratio of 1:2:3. The 1st chocolate bowl had 3 spoons of chocolate, so add 1 spoon of cream cheese that that one. This is the dark chocolate layer.

 

The 2nd bowl had 2 spoons of chocolate so add an equal amount of cream cheese. This is the medium chocolate layer.

 

The 3rd bowl had 1 spoon of chocolate so add 3 spoons of cream cheese. This is the light chocolate layer.
