On 5/15/10 Alice and I went on a mission to make Ricotta cheese, using this recipe:

It was a bit to thick - very tasty, but I think it drained for too long. Also, whole milk & heavy cream... OMG THICK & CREAMY. Not quite what I was going for, though. I wanted a bit more runny, for filling ravioli, shells, etc.
Ingredients:
• 2 quarts whole milk
• 1 cup heavy cream
• 1/2 teaspoon salt
• 3 tablespoons fresh lemon juice
Special equipment:
• large sieve
• fine-mesh cheesecloth
Preparation
• Line a large sieve with a layer of heavy-duty (fine-mesh) cheesecloth and place it over a large bowl.
• Slowly bring milk, cream, and salt to a rolling boil in a 6-quart heavy pot over moderate heat, stirring occasionally to prevent scorching. Add lemon juice, then reduce heat to low and simmer, stirring constantly, until the mixture curdles, about 2 minutes.
• Pour the mixture into the lined sieve and let it drain 1 hour. After discarding the liquid, chill the ricotta, covered; it will keep in the refrigerator 2 days.
Scary fun fact - apparently this is also the process one can use to create biodegradable plastics.

Fresh [298/365] - My mission today was to make it to Granville Island. Having only been to Vancouver a few times in recent years, and being too stubborn to read a map, I anticipated that Ryan would be the navigator for the day. Equally stubborn, he refused to lead the way, insisting that I figure it out on my own... using a map. Ugh. I reluctantly followed the map, taking us on a slight detour... but eventually we made it to Granville Island. I love wandering the markets... fresh fruits and vegetables... much better than your typical grocery store variety. Ryan bought me a beautiful calla lily (one of my favorite flowers!), and we feasted on perogies, salad rolls, and gelato before heading back to the city in the pouring rain. He headed to a hockey game while I caught up with my friend Jess over a cup of coffee. Such a fun day!
this is the emptiest train case ever, but I am starting over fresh, tossed all the old junk.
