Earlier this afternoon, Fightin’ Jersey Shore Texas Aggie Ring said to me, “Hey, wouldn’t it be great to have some Korean food like we did when we were stationed overseas?”
“I’ve told you before…” I replied to Aggie Ring. “They frown on killing dog for meat in this country. We’re not in Asia anymore.”
“No, no, no..” said Aggie Ring. “I meant kimchi!”
“Oh. Why didn’t you just say so.” I said.
We stopped by the local farmers’ market at picked up three medium Napa cabbages, a large daikon radish, a couple of bunches of scallions, a big carrot, some fresh ginger, garlic, and a red pear.
As soon as we got home, Aggie Ring had me wash and cut the Napa cabbage into bite-sized squares because he likes to eat his kimchi with chopsticks. He had me put the cabbage into a heavily salted brine to suck the moisture out of the cabbage.
Three or four hours later, Aggie Ring was amazed at how much more water the brine had drawn out of the cabbage.
“Let’s get to work.” said Aggie Ring. He had me “matchstick” cut the daikon radish and the carrots and then dry brine them with large crystal Kosher salt. While the “chemistry” was taking place, Aggie Ring had me fill the food processor with the peeled sliced ginger, the garlic, an entire pear, some scallions, some fish oil, and some dried Korean crushed red pepper powder. Aggie Ring added some cayenne pepper because he likes it hot. After grinding it all, it became a thick red paste. (NOTE: Aggie Ring has learned over the decades that if a marinade doesn’t taste good when you test it with a spoon, the final product will never be good. Doesn’t matter if it’s BBQ, jerky or even kimchi.)
Setting that aside, Aggie Ring had me drain and wash the cabbage with cold water several times to remove the salt brine. He had me do the same with the dry brined carrots and daikon radish which had produced more liquid from the salt than we thought possible.
When the “veggies” were all washed and cleaned of as much of the salt as possible, Aggie Ring had me put them into a “big ass” plastic container where we proceeded to pour the red paste over it all.
Then, Aggie Ring had me “massage the hell out of the red pepper paste into the veggies.” Once that was done, he had me pack it into a gallon jar, put some parchment paper on top and press it down to get more of the liquid out of it, and then had me attach the fermentation lock to the container.
“We need to place this somewhere cold and dark to ferment for a week.” I told Aggie Ring.
“Make it so.” said Aggie Ring.
We tasted a couple of tablespoons before we put it away. It should be awesome.

Dead Fresh & Easy store in Murrieta, California; this location is in Jackson Avenue in Palmilla Plaza, this store was originally going to be a Fresh & Easy store BUT that store NEVER opened! It seems that Fresh & Easy, now sold by it's parent company; TESCO to Yucaipa Group was originally going to open another Murrieta location, this location NEVER opened.
This is on the outside looking in, you can see the shelves, some pallet movers, refrigerator units, all still ready to go, who knows if this location will ever open, now that TESCO sold Fresh & Easy, the chain is planning on closing 50 stores out of 200 or so locations so chances for this store ever opening look slim!

when you're out picking' and don't have a bucket, this is the result. fresh picked jalepenos from the garden. my dad makes amazing pepper poppers using bacon (or veggie bacon for me) and cream cheese with these. shout out and helpful tip: most starbucks now have buckets at each location where they put their used coffee grounds, which are free to take to put in your garden! - taken in middle georgia

Originally operated November 1980-January 25th, 1998, re-opened August 30th, 1998, renovated in summer 2016
This location is closing on May 14th just like every other location, with no other grocer set to take over the space. However, it isn't liquidating its' inventory and is fully stocked and operating as usual; I believe everything in the store will be shipped back to parent company Supervalu so that they can distribute it to other grocers under their banner.
This is another store I documented back in 2009; at the time it looked as it did after reopening in August 1998. Also, this is actually the second remodel done here since 1998- the first occurred back in 2010. Unfortunately I don't have any photos of that remodel. The store's album houses the 2009 photos so take a look at them and compare!

This location was built and opened in 2004 and was originally located here. It closed in May 2018 and reopened on November 9th, 2018, under new ownership.
This is sort of a random and isolated photo, but I had no idea about this sign on the back of their building when I first photographed this shopping center in January. It faces I-264, similar to how their sister store in Newport News has one facing I-64. It’s cool too that they kept the older logo up, which hasn’t been used since about 2005!

The condos to my south reflect in the outwash from one of the storm sewer drains the big construction project is looking to replace.
And here's where I get all nostalgic and lament a thing that's probably good overall but sad on a personal level. In the past, these outflows have been one of the parts of Myrtle Beach I've most enjoyed. The sea birds like to gather around them, because they're good places to get a drink of fresh water and wash all the salt off their feathers. I wonder how their absence will affect sea bird populations, or if flocks will shift to places closer to fresh water sources. Kids like to play in them and collect sand from them for sand castles. I like to watch them form miniaturized topography while I get all up in my head about the flow of rivers and creation of canyons and the nature of a chaotic universe. They seem like a little thing, but Myrtle Beach will change once they've been plugged up and redirected under ground. I don't know how, but it will be different.
There was an outdoor portrait activity , we invited the lovely girl李優 to go to NTU campus to take picture , lively 李優 got fresh quality , pretty face , eyes , nice figure with great breast , small waist , round hip, white skin and slim body , when she wore a casual blue long jean to show her personal style of pose , she is so charming and gorgeous ,thank李優 ,she did her best model job

I took just a little, five pints and most I've gave away. Taste like clover honey really nice. One hive skipped a bar and built one comb out three inches then attached it to the end of the box. (This is the total of two bars) not counting what we ate over hot buttered biscuits. :) and maybe 1/2 pint drained from the rest of the crushed comb.

'Nuff said...CSX SD40-2 8221 (née L&N 3593) sits under the morning sunlight at Richmond, VA on March 30, 1991. The bright colors of YN2 were a stark contrast compared to the "Stealth" locomotives behind 8221.

CSXT 8221 is currently on my modeling "To-Do List", so someday there will be an HO Scale version of this engine on my roster...stay tuned.

I recently got more "funny money" $2 bills from the bank. I love the comments and questions from people when spending the bills.... like - "I have to save this bill because they are not made anymore" - "Do you really want to spend this?" - "where do you get them" - "Sorry sir, we do not take Canadian money" Anyway.... The U.S. Federal Reserve has not stopped making $2 bills since the mid 1800s. Oh, they may stopped printing for a short time..... But an endless supply is yours, just call up your bank and order them. They come in "straps" of 100 bills = $200. Be careful spending them, since you may "bust a gut" holding your laughs in. I have dozens of stories, like above, on spending them. I even had one guy in a check out line behind me, want to buy the $2 bill in my hand - Guess he must have thought I was a BANK :-)
But, many reactions you will get are ... "wait, I have to call my boss to see if I can take these" But others times the bill make people smile and say... "Oh, I have to buy these, my son collects them". Once in awhile a person will refuse to take them, but not that often.
Anyway, every so often, when spending the bills, I will have someone look up at me, smile and say...... "I know what you are doing" :-) I just smile back and think...Those darn $2 bills are smile makers :-)
