To reproduce, take your favourite mayonnaise recipe but use exclusively olive oil and then, to reduce the olive-oil taste, double the amount of vinegar. The mixture will emulsify but not thicken.

 

Heat gently in a pot while stirring until the consistency of mayonnaise is achieved. Remove from heat and serve in a small bowl with fried potatoes.

 

The top layer will probably be much like mayonnaise. The residual heat in the mixture will cause the lower layer to continue cooking. The mixture will now de-emulsified - this is intended. Return the mixture to the pot and continue to cook until the yolks have fully coagulated into small particles.

 

Remove the yolk from a previously hard-boiled egg and discard.

 

Place a small amount of the oil-egg mixture in cheesecloth and press firmly to remove the oil. Remove the ball of pressed yolk from the cheesecloth and place inside one half of the hard-boiled egg.

 

Serve immediately.

The texture of the "micro-scrambled" eggs is unique, grainy yet smooth and dry yet oily. I can't really recommend them. (It turns out that micro-scrambled eggs are generally scrambled in a microwave, not oil-poached.)

According to NOAA on May 17, since the beginning of the Deepwater Horizon oil spill, 29 miles of Louisiana’s coastline already have seen oil reach the shore. This impact has occurred specifically at Trinity Island, Whiskey Island, South Pass, Chandeleur Islands, Fourchon Beach, Raccoon Island and Grand Isle. Oil sheen has been reported in Pass a Loutre and the state has received unconfirmed reports of oil on Marsh Island in Iberia Parish.

Shampoo Bar All Natural Essential Oils and Extracts

 

I've been mulling around with this idea for quite some time. I've used my own soaps for shampoo bars and that was alright with me. But after researching forever I've created a recipe specifically for hair.

  

My hair is waist length, dry and curly with flyaway baby hairs that drive me nuts. This shampoo bar leaves my hair very soft, controls the flyaways, smells nice. I even woke up in the middle of the night because the smell and feel of my scalp was so intensely soft I couldn't believe it! It cleans beautifully, leaving my hair shinny, soft and even full bodied!

 

So let me break down the ingredients…

 

My base oils are: Olive, Coconut, Palm, Castor, Wheatgerm, Jojoba, Walnut, Rice, Avocado, Sunflower and Shea Butter.

 

Essential oils used are: Rosemary, Carrot Seed, Calendula

 

Extracts are: Nettle and Chamomile

 

Also added: Liquid Silk, Vitamin E, Fresh Aloe Vera and BTMS (vegetable based conditioning emulsifier)

 

I've added no extra coloring or scent to this save the wonderful natural scent of these oils combined! I love this shampoo bar and it's been a long time coming. I hope you enjoy it the same and I encourage you to research these ingredients to find out just how wonderful and beneficial they are for your hair.

Two colour slides acquired together and having much in common although taken 14 months apart and probably taken by different photographers.

 

Neither is of brilliant quality but both are of Bulleid light pacifics after servicing on Bournemouth mpd.both were Eastleigh engines at the time and both lasted until the very end of steam on the Southern. The main difference is that one is filthy, the other nice and clean although let down by the emulsified oil on the motion.

 

This one is the clean one, 34087 '145 Squadron', on 26th May 1967. Not sure of a particular reason why it is clean as Eastleigh engines generally weren't clean so near the end but 9 days later it banked a special headed by 'Sir Nigel Gresley' up the bank out of Weymouth.

We let our 7 hens free range in about 1000 SF our back yard and never feed them any store bought feed, never feed them soy... only organically or naturally grown / raised: vegetables, fruit, seeds ( flax, pumpkin, sunflower, millet, quinoa, lentil...), seaweed, worms, slugs, snails, meat and fish scraps, green grass, dandelions, and some sprouted organic whole grains (kamut, spelt, rye, oat, barley, buckwheat, red spring wheat, rice...).

This is the Espresso Martini or as it was originally called Vodka Espresso, a modern classic cocktail created by Dick Bradsell in 1980s at either Fred's Club or Soho Brasserie (conflicting accounts about which one it was). Many recipes exist and some use a cold brew coffee, but I opted to use Bradsell's version with fresh espresso. When you pull a shot of espresso, there is this layer of foam called crema. Crema is a foamy emulsification of water and the oils of the coffee beans from the heat and pressure of brewing. Carbon dioxide is released during brewing and it forms many tiny bubbles in the crema. When you shake espresso over ice, a lot more air is forced into that crema to create an even fluffier layer of foam on top. The beauty of the drink is its simplicity. It exemplifies what is delicious about espresso, but in cold boozy format with that heavenly foam.

 

2 oz Vodka

1 oz fresh espresso (yes, it must be fresh)

0.5 oz coffee liqueur

0.25 oz simple syrup

 

Combine the vodka, coffee liqueur, and simple syrup into a shaker tin and set aside. Pull your shot of espresso and immediately add it to your shaker tin. Add ice and shake vigorously until arctic cold. Double-strain into a chilled martini glass or coupe. It's optional to garnish with 3 coffee beans resting on the foam.

What Affects the Appearance of Acne?

 

The main cause of such a disease as acne is excessive production of sebum (sebum). WASHINGTON – To inform oil spill responders about new technologies available to address oil spills, the Bureau of Safety and Environmental Enforcement and the U.S. Naval Research Laboratory (NRL) hosted an outdoor demonstration of the Low-Emission Spray Crude Oil Combustor technology–also known as the “BSEE Burner”–at NRL’s testing facility in Chesapeake Beach, Maryland, on March 30.

 

“This technology has the potential to be a game changer in the performance of oil spill recovery,” said BSEE Director Kevin Sligh. “I’ve seen how much damage an oil spill can cause, and the BSEE Burner, once deployed, will be an important tool to use in its mitigation.”

 

Developed in partnership with NRL over seven years, the BSEE Burner technology cleanly burns large volumes of emulsified oil from spills that occur in remote areas where storage facilities may not be available, or where transporting the recovered oil is cost prohibitive.

 

EPA emission tests revealed that the burner performs well with a combustion efficiency of 99.9%. Carbon monoxide concentrations were at almost undetectable levels, and low soot emissions yielded no visible smoke plume.

 

“This technology can completely burn oil without the plume of harmful black smoke or residue,” said Steven Tuttle, Ph.D., NRL combustion and reacting transport section head and developer and operator of the burner. “This burner will benefit the environment by providing oil spill remediation of emulsified crude oil in remote locations, where the carbon footprint of transporting the oil to be re-processed is greater than burning the oil in place.”

 

Attended by the U.S. Coast Guard, NOAA, industry, and oil spill response organizations, BSEE and NRL arranged the demonstration to facilitate open discussions regarding potential use scenarios and system specifications, and for those who may have an interest in pursuing licensing options and licensing information with the U.S. Navy.

 

The invention is another important example of Federal technology transfer efforts and is now ready for commercialization by private interests through collaboration with TechLink – a nationally focused technology transfer partnership intermediary for the U.S. Department of Defense and Department of Veterans Affairs.

 

BSEE conducts research and development as part of its robust Oil Spill Preparedness Program. The program ensure owners and operators of offshore facilities are ready to respond to threats of and actual oil spills that may result from their activities. These research efforts benefit oil spill responders and contingency planners by providing expanded decision-making options, better tactics, and updated equipment.

Resep Bolu Gulung Meranti

 

Resep Asli Hadi Tuwendi modified By Vita NCC

  

Bahan A :

6 butir kuning telur

5 telur

125 gr gula pasir

10 gr emulsifier

20 gr susu bubuk

100 gr terigu

1 gr Baking powder

1 sdm air

 

Cairkan :

100 gr mentega

25 gr butter

1 sdm rhum bakar / vanilla flavour

 

cara :

Kocok semua bahan A sampai mengembang (bila menggunakan mixer guedi -signora/kenwood, etc).

Lalu masukkan mentega cair

Bila menggunakan hand mixer, kocok telur dan gula, emulsifier sampai mengembang, masukkan air.

Tambahkan campuran terigu BP dan susu bubuk. Masukkan mentega cair

 

Panggang di loyang 28x28 atau 30x30 dengan suhu 180C

 

Penyelesaian :

Oles bolu dengan butter cream tipis, taburi keju parut. Pada satu sisi jejerkan keju yang sudah dipotong memanjang 1x1 cm sebanyak 3 buah. Gulung sambil dipadatkan

 

Catatan :

Bolu gulung digulung panas2 ..keluar dari oven ...balik kue diatas kertas roti yang sudah ditaburi gula tepung atau serbet bersih ..kemudian gulung dari arah yang paling dekat dengan badan menjauhi badan sambil dipadatkan ..boleh sambil ditekan dengan penggaris besi atau alat pengulung ..

 

Tips:

Setelah ngumpulin berbagai tips yang sarannya macem-macem, ternyata yang paling sukses adalah tips berikut:

- Kalo pake loyang ukuran 28x28 cm, adonan mendingan dibagi dua, karena hasilnya akan ketebelan dan susah dilipet. Kalo mau mending pake loyang ukuran 30x45 cm dijamin keren hasilnya. Intinya, ketebalan adonan di loyang sebaiknya sekira 1 cm aja.

- Critical point bikin bolgul adalah saat menggulung, karena kalo bikin bolu nya sih gampang banget, tinggal ikutin resep. Naa cara menggulung yang dijamin sukses dan sudah kami buktikan adalah sbb:

- Mau pake isi butter cream ataupun selai, setelah bolu matang dan dibalik di atas kertas roti, lebih baik dalam keadaan panas-panas, langsung gulung si bolu dengan kertas rotinya.

- Setelah itu buka lagi gulungan bolu, langsung isi dengan butter cream dan taburan keju, . Lalu gulung lagi dong tentu...

- Sebelum kertas roti dibuka dan bolgul dipotong, masukkan dulu dalam kulkas supaya betul-betul montok bolunya, ceile..gadis kali montok.

- Jangan lupa saat menggulung harus hati-hati dan usahakan betul-betul rapat supaya hasilnya keren. Oya saat menggulung tahan bagian ujung dengan penggaris atau benda keras lainnya.

"And now for something completely different. These are crunchy yet tender puffed tomato chips with a basil pesto dip. The chips taste intensely of sun dried tomatoes and are perfectly complimented with a creamy, blended pesto. It’s gourmet Italian junk food made with an unusual technique…

 

I made the chips using my oven dried tomatoes The chips themselves begin with a dough made from dried tomatoes and tapioca starch. The dough is rolled thin between plastic wrap and steamed. The cooked dough is then cut into shapes and dehydrated. When fried at 400°, the tiny amount of moisture remaining in the starch turns to steam and puffs the chip dramatically.

 

The process sounds strange but we’re actually quite familiar with it. Popcorn and puffed rice cereal are both common examples of puffed starches that Americans eat on a nearly daily basis. Here’s my recipe for puffed tomato chips with basil pesto:

 

Tomato Chips:

 

* 75g oven dried tomatoes

* 400 g water

* 15 g kosher salt

* 30 g balsamic vinegar

* 680 g tapioca starch

 

Blend the tomatoes, water, salt, and balsamic vinegar until smooth. Pass through a fine mesh strainer to remove any solid particles. Carefully measure the tapioca starch into a large mixing bowl and add the tomato liquid. Slowly incorporate the liquid to form a dough.

 

Take a small handful of dough (about 1/4 cup) and roll it into a log. Place between two sheets of plastic wrap and roll to 1/16′’ thick. Steam the dough in the plastic wrap for 10 minutes. The dough will now be translucent. Repeat this process with the rest of the dough.

 

Allow the cooked dough sheets to cool and carefully remove from the plastic wrap onto a clean work surface. Cut into shapes and dehydrate overnight, or until dry and hardened. Store dried chips in an airtight container.

 

Tomato Seasoning:

 

* 2 Tb. tomato powder

* 2 tsp. kosher salt

* 1 tsp. powdered sugar

* 1/4 tsp. dried oregano

* 1/4 tsp. garlic powder

 

Combine ingredients and grind to a fine powder using a spice grinder.

 

Basil Pesto:

 

* 2 oz. basil leaves

* 1 Tb. balsamic vinegar

* 1 Tb. water

* 4 walnuts, toasted

* 1 clove garlic

* 1 Tb. grated parmesan cheese

* 1/4 tsp. lemon zest

* 1/4 c. extra virgin olive oil

* 1/4 c. vegetable oil

 

Place all ingredients except oils in a blender and blend until smooth. While spinning, drizzle in oils to emulsify. The pesto should be thick and creamy. Hold in the refrigerator.

 

To Finish and Serve:

 

Bring a pot of oil to 400° F. Drop 3-4 chips in the oil and fry for about 20 seconds, or until puffed and crispy. Drain on paper towels and dust with powdered tomato seasoning. Serve with a side of basil pesto dip."

Last Friday was my birthday. Friday is date night for Holly and me -- we generally go out to a favorite restaurant and have a nice meal. We'd heard about Andy from Pok Pok's new Chinatown restaurant, Ping, and wanted to try it. Cheyenne asked me to let her know how it was and I suggested she and Nat join us. Incredibly, the stars aligned (actually, Venus and the moon aligned, but whatever) and we were able to do a Double Date Night!!!

 

Ping was good. Not as rock solid as Pok Pok, but definitely a ton of fun, and a great slick urban feel. Lots of very-small plates: skewers, salads, cha gio, that kind of thing. We enjoyed everything we ate. I could go again and eat nothing but 12 skewers of the quail eggs wrapped in bacon and be a happy, happy boy. Other highlights were the yam mama salad with ramen noodles and house-made emulsified sausage, and the yummy cha gio with fresh herbs and spicy nuoc mam. We didn't try the chicken butt skewers (which turned out not to be marinated cloacae but, disappointingly, the little nubby chicken tails) but we did have the fish balls. Heh heh. Fish balls.

 

Desserts didn't strike our fancy, so we walked over to Jamison Square and got ice cream at Cool Moon, which is the best ice cream ever. Also that was the SECOND TIME we went to Cool Moon that day. Thus, my birthday was celebrated.

 

This is not technically a Dining Table Aerial, because I am not standing on my chair. Unbelievably, I didn't even think to do that. Instead, I was using my head as a tripod to steady the camera (that's my hair in the foreground). I think the angle gives it a hip, urban feel. The tablecloths help.

Another new Japanese cafe on Russell St, where The Fresh Stop HK Cafe used to be. A bit brash to open right next door to Teppan San, another Japanese cafe.

 

Initial observations indicate a Taiwanese-run place. At least they use the kind of ramen I like! :)

 

I got the Tonkatsu Ramen with White Bone soup. The "white bone soup" was a poor imitation of the Kyushu-style tonkotsu soup, made with pork bones, and milky white from the emulsification of the fats. The best specimen in Melbourne is probably Tonkotsu Ramen at Momotaro Rahmen. Still, the soup was passable. The other soup options were miso, or "udon", which presumably means a clear broth.

 

Serving the crisp tender pork chop on the side was a good idea, that is also typical of other Taiwanese shops.

 

Shanny's Katsu Curry Don looks like it needed more curry sauce though. And Boon Chew's Katsu Don seemed like it was trying to preserve the crunch of the pork chops, rather than serve it the traditional way half-buried in silky scrambled eggs. Isabel, got the same as mine.

 

Just as well we all got the tonkatsu pork chop. It was more or less a hit!

  

The decor was rather interesting too. I spotted row of a splatter-shields being used as a sort of divider / ornament. Not a bad effect. See if you can spot it!

Castle Beach Fire Department is proud to present the brand new Hazmat 1. Built on a 2017 Spartan Gladiator cab with SVI bodywork, this rig was delivered on May 6, 2017 and replaces the 2016 Seagrave Marauder II Hazmat rig that was totaled in an accident. As the role of the Hazardous Materials Team evolves, so did the apparatus. Differences in the new rig as compared to the previous Seagrave include the addition of a slide-out compartment, which added space for command personnel. While it appears that the rig has less compartmentation than the previous rig, the rig contains the same amount of equipment and still has extra space for new technologies, thanks to the awesome work of the manufacturer! Photographs from a release of several thousand gallons of diesel fuel into a tributary of Cady Brook in Charlton, Massachusetts, June 11, 2010.

 

The release was reported by a citizen to the Charlton Fire Department who immediately notified MassDEP’s Emergency Response unit and began containing the

release. MassDEP responded with its cleanup contractor, New England Disposal

Technology, Inc. The diesel fuel was traced back to Charlton Welding & Repair, Inc. at 11 Griffin Road, on the northern side of Route 20. MassDEP has issued a Notice of

Responsibility to Charlton Welding & Repair.

 

The release came from a tanker truck used to fuel vehicles. The specific cause and timing of the release is under investigation. The tanker truck has been emptied and removed, and the contaminated soils removed. Charlton Fire Department contained the release and prevented it from spreading beyond the Route 169 bridge.

 

The actual volume of the release is still unknown, however the capacity of the tanker truck was 7,000 gallons and MassDEP’s contractor has recovered an estimated

1,500 gallons of diesel fuel from the tributary to Cady Brook so far. The oil is being recovered from the brook by vacuum truck. A significant amount of diesel remains in the wetland area on the east side of Cady Brook Condominiums. Preparations are being made for clearing oil out of the wetlands.

Healthy Foods are definitely essential to a good life. Without it our body will not function up to par and sickness is no doubt to follow. Fresh fruits and veggies are just two of the wonderful foods we need to nourish our bodies every day. I thought putting the photo of my salad on a billboard was most appropriate for today's challenge. I made a dressing using maple syrup, mayo, mandarin orange juice and to emulsify it safflower oil. It was delicious on the salad and so simple to make. I just threw everything together in a blender, no recipe sorry!

Easy hollandaise sauce

 

2 large egg yolks

1 tablespoon warm water

1 tablespoon fresh lemon juice

3/4 teaspoon coarse salt

1/2 cup (1 stick) unsalted butter

 

In a measuring cup or small bowl using an immersion blender combine egg yolks, water, lemon juice, and salt; blend with until frothy.

 

Heat butter in the microwave or in a small saucepan over medium until bubbly (do not let brown). With blender running, pour in hot butter in a very thin stream, leaving milk solids behind, blending until sauce is thick and emulsified.

preparation: 10 minutes • processing: 20 seconds • yield: 2 cups (480 ml)

 

Ingredients

2/3 cup (63 g) fresh or frozen cranberries

1/4 cup (50 g) sugar

1/2 cup (120 ml) white wine vinegar or distilled white vinegar

1 teaspoon Dijon mustard

1/4 cup (60 ml) orange juice

1/4 teaspoon salt

1/4 teaspoon black pepper

3/4 cup (180 ml) vegetable oil or very light olive oil

 

Directions

1. Combine the cranberries, sugar and vinegar in a small nonreactive saucepan and cook over medium heat until the cranberries pop, about 4 – 5 minutes. Remove from the heat and let cool for 20 minutes.

2. Place all ingredients into the Vitamix container and secure lid.

3. Select Variable 1.

4. Turn machine on and slowly increase speed to Variable 10, then to High.

5. Blend for 20 seconds.

We let our 7 hens free range in about 1000 SF our back yard and never feed them any store bought feed, never feed them soy... only organically or naturally grown / raised: vegetables, fruit, seeds ( flax, pumpkin, sunflower, millet, quinoa, lentil...), seaweed, worms, slugs, snails, meat and fish scraps, green grass, dandelions, and some sprouted organic whole grains (kamut, spelt, rye, oat, barley, buckwheat, red spring wheat, rice...).

 

Eggs from naturally raised chickens are nature’s most perfect food. They are rich in vitamins A and D, as well as choline for mental acuity in adults. Like the B vitamins, choline is a coenzyme needed for metabolism. Choline exists in all living cells, but is probably best known as a major part of lecithin--the emulsifier that keeps fats and cholesterol from clumping together in the blood.

 

Research shows that humans do not increase blood cholesterol levels by eating cholesterol. Rather, we increase cholesterol by eating refined processed flour, sugars and refined vegetable oils, hydrogenated or partially hydrogenated fats and oils. Beurre Blanc Sauce

 

Beurre blanc is a simple butter-based emulsified sauce that's great with fish or seafood.

 

Beurre blanc is a nice sauce to have in your repertoire because you can whip up a batch on the spot (all you really need is wine and butter), making it ideal for emergencies.

 

Good wines for the reduction (or au sec, meaning "nearly dry") include Chablis, Sauvignon Blanc or Chardonnay, but any drinkable dry white will do. For a deliciously luxurious beurre blanc, try making it with leftover Champagne.

 

Tip: Cold butter keeps the beurre blanc emulsion from breaking.

 

1 cup dry white wine

½ cup white wine vinegar

1 Tbsp finely chopped shallot

1 lb unsalted butter, cold

Kosher salt, to taste

 

Heat wine, vinegar and shallots in a saucepan until the liquid boils, then lower the heat a bit and continue simmering until the liquid has reduced down to about 2 tablespoons. This should take about 10 minutes.

 

While the liquid reduces you can cut the butter into medium (½-inch) cubes, but either leave this until the reduction is nearly finished or return the butter cubes to the refrigerator to keep them cold while the liquid finishes reducing.

 

Once the wine-vinegar mixture has reduced to 2 tablespoons, reduce the heat to low and start adding the cubes of butter, one or two at a time, and whisk rapidly with a wire whisk.

 

As the butter melts and incorporates, add more butter and keep whisking. Continue until you only have 2-3 cubes remaining. Remove from heat while whisking in the last few cubes, and whisk for a moment or two more. The finished sauce should be thick and smooth.

 

Season to taste with Kosher salt. Traditionally the shallots would be strained out before serving, but doing so is optional. Serve right away.

"Only the crumbliest, flakiest chocolate, tastes like chocolate never tasted before" (contains vegetable fats, emulsifier E442 and flavourings)

While the squash and lentil mixture was simmering, I took the arugula (rocket, for people across the pond) and tiny orange heirloom tomatoes from the Greenmarket and tossed them together. I always make my own dressing (hence, Saucy Salad). I like to make it in a tiny food processor so that it's fully emulsified. This one had extra virgin olive oil, balsamic vinegar, a few cloves of raw garlic, a few peppercorns, kosher salt and fire escape basil. Refreshing and not too flavorful, so as not to compete with the sweetness and spiciness of the stuffed squash. The whole dinner was made in about 45 minutes and smelled just like Thanksgiving, but without involving a slaughtered bird.

Tonkotsu Ramen

- roasted pork, poached egg, fish cake, scallions, pickled bamboo, abalone mushroom

 

This was the centerpiece of my New Year meal. Real ramen, let alone tonkotsu broth are rarely made at home ( in Japan or otherwise), but I wanted to give it a try.

 

Tonkotsu broth was made with roasted pork bones, pig's feet, ginger, garlic and Tokyo scallions. Although it took 15 hours to make it ( obscene amount of time, by home cooking standards), the result was very satisfying. The broth was rich, flavorful, shiny and a touch sticky, because of the emulsified collagen. I added approximately 2 tablespoons of concentrated and clarified bacon dashi, just to add saltiness and smoke ( will add more next time though). My next attempt at the tonkotsu broth will include more smoke, a touch of miso and maybe a spoonful of dried scallop/dried shrimp essence. I would rate this broth as 8/10, with space for improvement.

 

I did not have time to make alkaline noodles, which would have made this ramen bowl considerable better than the plain, albeit freshly made noodles I had to use.

 

Most of the toppings were the usual suspects ( pork, egg, scallion, fish cake, pickled bamboo), with the abalone mushroom being a last minute substitution. The latter was unsuccessful, as it added only texture, but not much flavor and none of the umami - will absolutely use wood ear mushrooms next time.

 

Roasted pork absolutely worked, although I should have sliced it a lot thinner, or even served as "pulled-pork" style, just like they do at the Momofuku Noodle Bar. Also, I am toying with an idea of roasting a pork butt with the mixture of honey, five-spice powder, red fermented tofu, dark soy sauce, hoisin sauce and Shaoxing wine - i.e. traditional char siu sauce, on my next attempt. But then again, salt-sugar-pepper-coco nibs mix worked quite well this time.

 

My ramen remains the work-in-progress and I humbly hope to reach ramen excellence sometime in the future.

Boeuf Bourguignon. Tastes like sin in a bowl. Picture yourself in a dark corner pouring this down your throat in total gluttony. Its that kind of good.

 

First, make brown beef stock. This recipe is from Thomas Keller. Yields a little over 3 quarts, which you can freeze and use to enhance many sauces or as a base for soup. Get your mise ready before you start.

 

Mise en place:

 

2-3 Tablespoons of oil with a high smoke point (canola or vegetable works well)

About 5 pounds meaty beef necks, knuckles, ribs

2 small Spanish onions peeled

1 large carrot, peeled and cut into 4 pieces

1 large leek, roots trimmed, split lengthwise, rinsed well, and cut into 2 inch pieces

1 large sprig of thyme

1 large sprig of Italian parsley

3 bay leaves

1 head garlic

A teaspoon salt

A teaspoon black peppercorns

 

Procedure:

 

1. Preheat oven to 475 F. Roast the bones in a roasting pan with the oil for 45 minutes or until all sides of the beef bones are a deep brown. Don't let them turn black or your stock will have a bitter taste.

 

2. Meanwhile, cut one onion in half and sear with the cut side down. This will take about 20 minutes. Remove. Add veggies over high heat and brown them on all sides. This develops color and rich caramel flavor for the stock. Be patient and attentive.

 

3. Take the bones out and remove from the roasting pan. Carefully drain off the fat, trying to retain as much of the browned solids as you can.

 

4. Deglaze the roasting pan over medium-high heat. Use about a cup of cold water. Scrape up as much of the stuck on brown bits as you can. This is called the fond. Let it simmer and reduce by half.

 

5. Meanwhile, transfer the bones and veggies to a large stock pot. Add enough water to cover.

 

6. Add the fond to the stock pot and bring to a boil, then immediately reduce to just below a simmer. If you have a thermometer, you want the water to be 190-200 F. If you don't have a thermometer, you want it to bubble a little, but not a full boil. If your stock boils for too long, the veggies and impurities will emulsify in the water and you'll have cloudy stock that will go bad much more quickly.

 

7. Skim, skim, skim. You'll see foam and fat rise to the surface 15-20 minutes after. This won't happen if your temp is too low. Skim every 15-20 minutes for the first hour. Check every half hour after that and skim if necessary.

 

8. Continue like this for at least 4 hours. 5 or 6 hours is better.

 

9. Strain the stock through a fine strainer. Do not jostle, shake, or press the solids. Let the liquid flow. Any of the above makes your stock cloudy as fine particles will get into your liquid. Be patient.

 

10. Strain again through double layered cheesecloth.

 

11. Cool down the stock quickly in an ice bath so no nasty bugs get a chance to develop.

 

12. Store in the fridge.

 

13. Take off any fat that solidified on the surface.

Mise en place:

 

2 lbs beef, cubed

1 tablespoon olive oil

Sale & Pepper

2 Large carrots, cut into 1-2 inch pieces

1 Onion, large dice/rough chopped

4-5 cloves of garlic, roughly cut

1/4 cup Cognac

1-2 cups Red Wine (what you don't use, drink!)

2 cups beef stock

1 tablespoon tomato paste

1 teaspoon fresh thyme leaves

2 Bay leaves

3 sprigs of parsley

3 tablespoons unsalted butter at room temperature, divided

3 tablespoons all-purpose flour

 

Procedure:

 

1. Season your beef with salt & pepper. Add oil to a hot skillet and brown the meat on all sides. Don't crowd the pan, work in batches if necessary. Otherwise your meat will steam.

 

2. Remove the beef. Add veggies and get a golden brown color all over.

 

3. Add cognac. Get your head out of the way and be prepared to reset your smoke alarm. Light the cognac.

 

4. Remove veggies and deglaze the pan with about a cup of wine, scrape up all that tasty fond.

 

5. Add meat and veggies, stock, and more wine until the meat is barely covered. Cover the pan with or tight metal lid

 

6. Stick it all in the oven at 250 F for at least an hour.

 

7. At the end of its time in the oven, move the pan to the stove top and bring to a boil.

 

8. Meanwhile, make a brown roux. Start by melting the butter in a sauce pan and then add flour and mix well with a fork or whisk. Let this cook for 5-10 minutes, stirring occasionally so it doesn't burn. The roux should begin to take on a brown color. It is ready when it takes on a color of caramel, or rust.

 

9. Add the roux to the hot Boeuf Bourguignon and stir. Add more wine if necessary. Season to taste.

 

10. Enjoy.

Raj Patel told stories about the mystery ingredients in our food. Lecithin, which he mentions in his book "Stuffed and Starved", is an emulsifier in many of our processed foods. It is made from soy and responsible for 40,000 slaves and deforestation in Brazil. And we thought it was cattle that was bringing down the forest, but no it is the humble soy bean which has become Brazil's largest export due to world demand.

 

He explained how the global market began in 1880 when the British replaced feudalism in India with a market system and paid labor. In the feudal system labor was exploited for free, but they were fed by those exploiting them. In the free market labor is exploited with "slave wages" and no one has to be responsible for feeding anyone. Since then, instead of a famine every 120 years, there is one every four years, but there is always enough food to export to countries and people who can afford to buy it. Markets basically created poor people, or rather people who cannot afford to buy food, but Mr. Patel did not point this out because he is not about getting rid of the money system altogether, he is about eradicating poverty.

 

Mr. Patel was very good at explaining concepts and has an educated British accent to go with his presentation. He's also quite funny in that droll way. World Bank policies, he described as being much like the scene in the movie Time Bandits with John Cleese as Robin Hood, with us upper class accent, giving people the fabulous gifts stolen from Napoleon, but then the same recipients are punched in the nose by a thug standing next to him. Thus the free market brings fabulous wealth that the poor cannot use and then they are bloodied by it.

 

He is fond of concepts and liked to tell stories so if you don't already know the big picture you have to string it all together yourself.

 

I like his perspective that our lifestlye has made our food absurd, but we don't know it because our speeded up life has made convenience food and soda pop, eaten while driving, seem reasonable.

 

"I take my inspiration, as I'm sure you do too," he said, "from the Italian Communist Party," I was the only one who laughed. He was referring to the Slow Food movement, which had borrowed from the communist party edicts, and added the galvanizing principle that everybody has the right to pleasure and enjoyment of food. Even if they are poor. (We seem to have missed this part in our Californian translation where the best revenge is living well. I never found out, though, what it was we were revenging. "Elitist," cried Carlo Petrini, the founder of Slow Food Nation when he came to our shores and saw how we had turned his movement into more fine cheeses for the wealthy.)

 

Mr. Patel chastised us for wanting to try to fix the food system by changing our consumer habits and urged us to get involved with local food policies. Consumer choice is a poor cousin for democracy, he said. We should not be consumers of democracy. Corporations exist because of a mix of coercion and consent because of all the false choices we are given ie: between Pepsi and Coke.

 

We need to curb corporate power, rectify income inequality and make the government accountable for the nations healthcare. Only then will government care enough to keep us healthy, he pointed out, because they know they will have to pay for healthcare down the line.

 

In order to feed 9 billion people in 2020, we must heed what scientists are saying, he advised, and get rid of industrial agriculture, replacing it with agro-ecological culture of grains/food that is adapted to the locale. In short we must move from monoculture to diversity. Here, here.

I made this cocktail for Thanksgiving, and it is easily the best drink I made in 2014. It is very well balanced - not too sweet, and not too cider-y or boozy. Really refreshing and exudes holiday warmth at the same time.

 

Recipe:

1 3/4 oz fresh apple cider (non-alcoholic)

1/4 oz fresh lemon juice

1/2 oz agave nectar

1 1/2 oz tequila (I used Patron Silver)

1/4 tsp cinnamon powder

1 cinnamon stick as garnish

 

Place all ingredients except the last one into a cocktail shaker with ice and shake vigorously to emulsify the cinnamon. Double strain into a pretty glass over ice, and garnish with the cinnamon stick.

I leave it on a stir plate for a week. This emulsifies the sauce nicely so separation takes months instead of weeks. Aji peppers, tomatillos, mango, jalapeno peppers, bell peppers, onion, garlic, 3% Icelandic birch smoked sea salt, aged 2 months in fermentation fridge.
