Cleanliness suddenly became an obsessive word! As if it was a byproduct of economic globalisation!! We all want the cities to be clean, the railway stations, airports, buses everything to be clean, without having a problem in the waste (sometimes even toxic wastes) being dumped in localities where only the poor stay.
Well, the dust bins in the cities are now more colourful, 'clean' and attractive. But the 'dust' manages to miss the bin!!

There is no such thing as “too sanitary”. I worked in food service decades ago in high school and a couple of years in college. I actually worked for a major grocery chain and I was a fill-in for staff in the store’s bakery and deli (hot food). I was required to take the training by the City of Houston.
As far as this relates to making jerky… I always follow a two-step process. After I finish a batch, I wash all the trays and the removable parts of my stainless steel dehydrator with hot soapy water and clean the interior with a food-safe disinfectant spray.
About 2 hours before I put a batch in, I soak/clean all the trays and removable parts in hot water with bleach and dish soap and again, clean the interior with a disinfectant food-safe spray. I also disinfect all of the countertop surface.
You cannot be too clean or safe when working with raw food.
Note: Wear lawn clothes when using bleach. One splash will leave nasty stains on your clothes.

I recently bought a film rangefinder (Konica Hexar RF) as a back up to the M8. The M8 is currently in New Jersey getting it's CCD replaced. Only 5-7 weeks before I get it back.
