Gee, this makes me look like I gamble all the time, but I swear it's not true. I was in Windsor, ON for a family thing and thought I'd blow $25 on the slots, $3.90 later I was up over a hundred, so I cashed it out :P
Caesar
Romaine, Parmesan, brioche. (Decoded: Romaine painted with Caesar dressing, wrapped with a Spanish boquerones (pickled anchovy) on a square of brioche "Twinkie" (filled with Parmesan-mascarpone). Dusted with black pepper.)
Notes: The presentation of this dish has gotten more streamlined and elegant since the last time I had it. So too has its success, as this current rendition relies less on the sauce and more on simplicity and balance of flavors.
Even still, I wished I could taste the Parmesan in the mascarpone filling (inside the brioche crouton "Twinkie"). The filling was slightly sweet, which I didn't find off-putting. I just wished I had gotten more of the cheese flavor. Thankfully, there was plenty of cheese on the lettuce, and plenty of garlic in the dressing.
Before our meal, we watched the kitchen staff prep the anchovy-wrapped romaine from our seats at the bar. Before realizing what they were, they looked like a plate of sashimi.

I drove up to the top level of the parking deck one afternoon and snapped a few pictures of Caesars Palace. The sky was too perfect and fortunately there weren't any other cars parked up there. I've been back from Vegas for more than 2 months and I'm still finding new pictures to post.
