The CSA Welsh gathering 2014 took place at Flintshare CSA, Flintshire North Wales. Nestled in a gorgeous valley, CSA members camped at the projects Cilcain site for two days of talks, walks and delicious food.

Awesome share this week, though I wish we had some green peppers instead of the red ones. I know, most people like the red ones best, but I prefer green bell peppers. Alas... I won't complain. I plan to roast these babies. The breakdown:
2 heads lettuce
.5 lb. arugala (YAY!!! Chicken Milanese, here I come).
5 red peppers
3 leeks
1.5 lb. carrots
.5 lb. green beans
1 garlic head
2 yellow squash
1 zucchini
3 cukes
2 lbs. onions
4 lbs. tomatoes
3 lbs. (I think) potatoes (which look to be covered up in the photo)
2 eggplant
1 bunch scallions
flowers, herbs... the usual.

The goodies are, from left to right, clockwise: spring onions, purple beets (last weeks beets were a nice yellow-orange sort, one of which arrived today as well), kohlrabi, broccoli, kale, snow peas, basil, cucumbers, and tiny tiny potatoes.
Small amount to start. 4 beets, a bunch of green onions, a bunch of curly kale, gingered pear jam, and a dozen eggs.

CSA Box Summer Pasta
1. Roast roughly chopped summer squash, zucchini, eggplant and onion (or any other veggies you have hanging around) with a dressing of 1/4 cup balsamic vinegar, 1/2 cup olive oil, salt and pepper; just until tender. (You can quickly cook under broiler.) Remove from oven. When the roasted veggies are cool enough to handle, dice
2. Cook fettuccine or another pasta until al dente in salted water. Set aside with a little olive oil mixed in to prevent sticking.
3. Saute 2 minced cloves garlic (and additional diced onion or green pepper, if you like) in olive oil just until fragrant.
4. Add the roasted veggies to the skillet along a generous portion of cherry tomatoes (add a can of diced tomatoes if you want more). Add some white wine or additional balsamic vinegar, to taste. Season with salt and pepper, fresh basil and Italian parsley.
5. Serve sauce over noodles and garnish with Parmesan if you please.
