The beans are poking out of the ground in such a strange way... they come up rounded, then straighten out.
recipe from Eating Well
Bean Bolognese
~ 1 can cooked beans- mix of chickpea, white, pinto, kidney, etc.
onion, chopped
1 c chopped carrot
1/2 c chopped celery
8 cloves garlic, chopped
1 bay leaf
1 c pale juice
28 oz diced tomatoes
parsley
1 lb pasta
Boil water for pasta.
Mash half the beans.
Saute onion, carrot, celery; cover and cook, stirring occasionally, until softened, about 10 minutes.
Add garlic and bay leaf; cook, stirring, until fragrant, about 15 seconds.
Add juice; increase heat to high and boil until most of the liquid evaporates, 3 to 4 minutes.
Add tomatoes and their juices, parsley and the mashed beans.
Bring to a lively simmer and cook, stirring occasionally, until thickened, about 6 minutes.
Add the remaining whole beans; cook, stirring occasionally, until heated through, 1 to 2 minutes more.
Serve sauce over plates of pasta individually.
The original recipe calls for parmesan on top, but I left it off. It needs a good fresh herb in it I think.
