I tried a local absinthe at a nearby wine bar recently. It was interesting to have the server bring the huge absinthe fountain (filled with ice water) and explain the preparation ritual: A sugar cube sits over the absinthe on a special spoon. You turn on the spigot very slowly to allow the water to drip down and dissolve the sugar into the absinthe. Then, once the sugar is gone, you can stir the drink and cut it with as much additional water as you'd like. The taste is similar to black licorice (from the anise) and I kind of liked it. I definitely preferred it to other sipping liquors, like whiskey! Oh, and no green fairies came to visit when I was finished.
My one concession to the ritual is to use my inexpensive Absinthe spoon. It does a good job of combining the elements.
Time to chase the Green Fairy.
Regarding the setting for this production of the Absinthe Ritual, it is at my desk at work.
We just had a bunch of stuff framed, and here are the kitchen prints. I got these along the Seine in Paris when I was there earlier this year. The absinthe print is lower, I know... it's driving me insane, but I was having issues with the hammer. It shall be fixed soon.
Preparing Absinthe using a 1:3 ratio with ice cold water and without sugar.
We chilled water with ice and then slowly dripped the water into the Absinthe. Allowing time for the chemical change to occur slowly.
I'm actually surprised that people are picking absinthe over sambucca shots. I guess they both taste horrible, but absinthe gets you drunker. Stine had absinthe btw :p
