Did you know water buffalo milk is higher in fat, calcium, iron, protein and phosphorus than cow's milk, and is used to make a highly-valued mozzarella cheese? Water buffalos don’t give much milk, and the cheese should be eaten within a day or two of being made, so it’s hard to get.
